  1. In a dry medium sauce pot over medium heat add Farro. Stir constantly so the that Farro begins to toast and become fragrant. Toast for 1 minute. 
  2. Add water and salt. Increase heat to high and bring to a boil. Boil for roughly 20 minutes and begin tasting for doneness. 
  3. Drain through a sieve and let drain 5 minutes.
  4. Add cooked Farro to a large bowl and add the rest of the ingredients. 
  5. Stir to combine and adjust seasoning. Use salad immediately or cool down for later use.
