Ingredients
1 cup Kosher Salt
1/2 cup Sugar
1 Tbsp. Chili Flakes
8 medium Garlic Cloves, minced (1/4 cup) plus 4 medium Whole Garlic Cloves, divided
4 Turkey Drumsticks (1 1/4 lbs.)
2 qt. Canola Oil
2 sprigs Fresh Thyme
1 sprig Fresh Rosemary
1 Tbsp. Whole Black Peppercorns
2 Bay Leaves
Recipe Preparation
Combine salt, sugar, and chili flakes and apply to turkey drumsticks.
Refrigerate for 4 hours, or overnight.
Rinse turkey and pat dry.
In a deep roasting pan, place turkey legs and remaining ingredients.
Note* ensure that the turkey is submerged in the canola oil.
Cover the pan with aluminum foil.
Place in 325°F (160°C) oven for 3 hours until fork tender.
Separate turkey and strained oil overnight before use.
