Ingredients
4 ea Russet Potato, peeled and cubed
1 Tbsp Sea Salt
3 oz Walnut Pieces
3 oz Garlic Cloves
2 ea Lemon, juice and zest
Ā¾ cup Yogurt, plain
Ā½ cup Walnut and Parsley Pesto
2 Tbsp Extra Virgin Olive Oil
1 ea Baguette, sliced and grilled
Recipe Preparation
Wash and boil potatoes with a pinch of salt until soft and tender
Drain and rice potatoes
In a food processor, combine walnuts, garlic, lemon juice and zest, yogurt and blend until smooth
In a bowl, combine blended mixture to riced potatoes until smooth. cool before serving
Spread dip onto a plate and garnish with the walnut parsley pesto, olive oil and potato chips on top and serve with a side of the grilled bread
