Recipe Preparation
Form ground beef into 4 (170-gram) patties, season with salt and pepper; refrigerate.
In a large cast iron skillet, melt butter and toast the buns over medium heat; set aside.
In a medium mixing bowl whisk together mayonnaise, vinegar, sugar, and celery salt. Stir in shredded coleslaw mix; set aside.
Heat cast iron to medium-high, add 2 burgers and 2 portions of pastrami piled high. While patties cook on the first side, cook pastrami for 2 minutes, flip, and cook another 2 minutes. Cook beef patties for 4 minutes on the first side.
Flip burger patties and top each seared side with a slice of cheese and a portion of pastrami. Cover and cook for 4 minutes or until the beef reaches an internal temperature of 160Ā°F (71Ā°C) and the cheese has melted. Repeat the process for 2 more burgers.
Construct burgers by spooning an equal amount of mustard on bun bottoms, top with a cheeseburger patty, a portion of pastrami, a portion of slaw, and a top bun.
