Ham & White Bean Polpette

Ingredients
1 cup Gordon Choice Pit Ham
1 ½ cup Cannellini Beans
2 Tbsp Brickmans Mustard, Craft Beer
½ cup Tavolini Mozzarella/muenster Blend
2 ea Garlic Cloves, minced
6 oz Tavolini Red Pepper Sauce
½ cup Onion, small diced
1 oz Baby Kale
1 cup Flour
2 ea Egg
1 cup Panko
1 Tbsp Trade East Lemon Pepper Seasoning
1 Tbsp Kosher Salt
2 tsp Black Pepper
1 Tbsp Grated Parmesan
2 Tbsp Vegetable Oil
Recipe Preparation
Roughly chop ham in a food processor
Mash beans with potato masher
Rough chop baby kale blend
Add ham, beans, garlic, kale, mustard, onion and 1 egg into a bowl and mix well
Form into 2oz balls and chill for 10 minutes.
Place ¾ c flour in one shallow pan
Crack the remaining egg and whisk together with ¼ c water into another shallow pan
Mix panko, remaining flour and lemon pepper seasoning in a final shallow pan
Take each ball and lightly press to form a patty. Dip each patty first in flour, then egg, followed by crumbs.
Heat sauce and reserve warm
Heat oil in a large frypan over medium heat.
In small batches, cook the patties for 2-3 minutes each side until golden and crisp all over.
Serve 3 on each plate with 2 oz of reserved warm sauce
