Ham & Cheese Khachapuri

Recipe Preparation

  1. Portion dough into 5oz pieces and let them come to room temperature
  2. Dice the ham into small pieces.
  3. Mix ham with cheese blend, ricotta, garlic, onions, parsley, egg, and seasoning and reserve
  4. Press and shape each dough into an oblong almost football shape with raised edges
  5. Preheat oven to 400*F (204*C) 
  6. Put 3 tablespoons of the ham and cheese blend into each portion
  7. Crack the remaining egg and whisk to make egg wash
  8. Put stuffed dough onto a parchment-lined baking sheet tray
  9. Brush the raised edges with the egg wash
  10. Cook in the oven for 6-8 minutes or until dough starts to turn light golden brown
  11. Remove from oven and press a large oval into the cheese mixture with the back of a spoon and crack an egg into each hole
  12. Put back in the oven for an additional 4-5 minutes or until egg white is just set. Don’t worry they will continue to cook when removed from the oven
  13. While that is finishing cooking heat butter and put granulated garlic in with the butter. Reserve warm
  14. Brush the final product edges with the butter mixture and serve garnished with banana peppers and pickled onions
