Roasted Rhubarb Mostarda

Ingredients
2 cup Frozen Rhubarb (Rhubarb)
1/4 cup Sugar (Rhubarb)
1/2 cup Yellow Mustard Seeds (Mostarda)
3/4 cup White Wine Vinegar plus 1/4 cup (add more as needed) (Mostarda)
1/2 tsp. Salt (Mostarda)
2 Tbsp. Honey (Mostarda)
Recipe Preparation
Rhubarb:
In a mixing bowl, coat rhubarb with sugar.
Spread the mixture evenly on the lined sheet pan.
Roast at 350Ā°F (175Ā°C) over for 30 minutes or until rhubarb is slightly caramelized.
Cool.
Mostarda:
Soak mustard seeds in water for 1 hour.
Strain and rinse.
Combine all ingredients in a saucepan on medium-high heat and reduce the mixture by about half.
Allow it to cool.
Rhubarb Mostarda:
Combine the remaining 1/3 cup vinegar and roasted rhubarb.
Refrigerate overnight before serving.
