Mushroom Bruschetta

Ingredients
1 ea Baguette, sliced ½ inch
2 Tbsp Olive Oil, plus extra for drizzling
4 oz Gruyere cheese, shredded or sliced
3 cup Mushroom blend, finely chopped
1 Tbsp Garlic, chopped in oil or water
1 Tbsp Thyme, fresh
¼ cup White Wine
to taste Salt And Pepper
¼ cup Parmesan, grated
1 Tbsp Parsley, chopped, fresh
2 Tbsp Balsamic Glaze, for drizzle
Recipe Preparation
Preheat your oven to 375°F (190°C).
Arrange the bread slices on a baking sheet and drizzle them lightly with olive oil. Add Gruyere cheese to each slice.
Toast in the oven for 8-10 minutes, until cheese is melted and bread is lightly golden and crisp. Set aside.
Heat 2 tbsp olive oil in a large skillet over medium heat.
Add the chopped mushrooms and cook for 5-7 minutes, stirring occasionally, until they release their moisture and start to brown.
Stir in the chopped garlic and thyme, cooking for another 1-2 minutes until fragrant.
Add the white wine. Let it simmer until the liquid evaporates.
Season with salt and pepper to taste. Remove from heat.
Spoon the mushroom mixture onto the toasted bread slices.
Sprinkle with grated Parmesan cheese.
Garnish with fresh parsley and a drizzle of balsamic glaze for extra flavor.
