Recipe Preparation

  1. Place the chicken thighs skin side down in a cold cast iron skillet or a heavy bottom pan, place on the burner over medium heat, season the thighs with salt as the skin renders (15-20 min).
  2. Once the chicken thighs reach an internal temperature of 145° F (162° C), flip the chicken thighs, add the butter and the Trade East Lemon Pepper Seasoning to the center of the pan, tilt the pan, and baste the chicken thighs with a spoon until the internal temperature of the chicken is 162° F (72° C).
  3. Remove the chicken thighs from the pan and allow to rest, optional to add more Trade East Lemon Pepper Seasoning to the skin to elevate the heat level. Serve.
