Irish Soda Bread

Ingredients
4 cup All Purpose Flour
4 tsp. Baking Powder
1 tsp. Salt
1 cup Granulated Sugar
1 1/2 cup Milk
1 stick Unsalted Butter
1 1/2 cup Raisins or Currants
1 Tbsp. Sugar, course
Recipe Preparation
Pour boiling water over raisins or currants and soak until plump. Drain and then dredge in flour and set aside.
In a Stainless Steel bowl add the the first 6 ingredients.
Stir ingredients until just incorporated and then knead 5-6 times (dough should be sticky).
Knead in raisins or currants (whichever was used).
Place dough in a greased loaf pan and sprinkle with sugar crystals.
Bake at 350Ā°F (175Ā°C) for 1 hour. Check bread after 40 minutes. If it is getting too brown, then cover and bake for the remaining time.
Bread is done when a toothpick comes out clean.
Allow the bread to cool to room temperature before slicing.
Best served with salted Kerrygold Butter.
