Une seule personne est requise pour surveiller le gril pendant la cuisson. Vous pouvez ainsi assigner d\u2019autres t\u00e2ches au reste du personnel.\u00bb<\/p>\n\n\n\n<p>Vous n\u2019avez pas besoin d\u2019\u00eatre un as du barbecue pour rehausser votre menu. Pour ajouter une saveur de barbecue \u00e0 leurs plats, des restaurateurs qui ne poss\u00e8dent pas de fumoir peuvent se tourner vers les produits semi-pr\u00e9par\u00e9s comme le flanc de porc fum\u00e9, le porc effiloch\u00e9 pr\u00e9cuit, le b\u0153uf barbacoa pr\u00eat \u00e0 \u00eatre r\u00e9chauff\u00e9, et m\u00eame le poulet marin\u00e9 pr\u00e9cuit.<\/p>\n\n\n\n<p>\u00abSi vous voulez vous d\u00e9marquer, commencez par utiliser l\u2019une de ces options, propose Kurt Kwiatkowski. Ces ingr\u00e9dients sont combin\u00e9s pour cr\u00e9er une farce, que l\u2019on place dans des tortillas qui sont ensuite roul\u00e9es et frites, puis napp\u00e9es d\u2019une sauce Veracruz onctueuse avant d\u2019\u00eatre parsem\u00e9es de c\u00e2pres.<\/p>\n\n\n\n<p>\u00abLe poisson d\u00e9gage un ar\u00f4me de mesquite fum\u00e9 sans \u00eatre trop intense, explique Kurt Kwiatkowski. La profondeur des saveurs et l\u2019ar\u00f4me de fum\u00e9e apportent beaucoup \u00e0 ce plat. Le poulet est tremp\u00e9 dans une saumure contenant du sak\u00e9, puis est fum\u00e9 lentement. Pendant le processus de fumage, le poulet est arros\u00e9 d\u2019une sauce cor\u00e9enne Maggi au gochujang.<\/p>\n\n\n\n<p>\u00abIl s\u2019agit d\u2019une saumure pour la volaille qui sort de l\u2019ordinaire, indique Kurt Kwiatkowski. Il est d\u00e9pos\u00e9 sur un petit pain hollandais croustillant, qui est garni d\u2019un m\u00e9lange color\u00e9 de l\u00e9gumes marin\u00e9s et servi avec une sauce au jus.<\/p>\n\n\n\n<p>\u00abIl s\u2019agit d\u2019une coupe de b\u0153uf qu\u2019on n\u2019utilise pas souvent. Elle est semblable \u00e0 la pointe de poitrine, mais n\u00e9cessite moins de parage. Lorsqu\u2019elle est cuite lentement au barbecue \u00e0 basse temp\u00e9rature et qu\u2019on y ajoute les saveurs aromatiques de l\u2019assaisonnement nihari du nord de l\u2019Inde, elle donne vie \u00e0 ce sandwich\u00bb, explique le chef.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-global-bbq-opportunities-abound\"><strong>Les fa\u00e7ons de marier les saveurs du monde \u00e0 celles du barbecue ne manquent pas<\/strong><\/h3>\n\n\n\n<p>La cuisine indienne au barbecue n\u2019est pas coutumi\u00e8re, mais ce mariage improbable prouve \u00e0 quel point il est facile de d\u00e9roger aux r\u00e8gles de combinaison des saveurs.&nbsp;<\/p>\n\n\n\n<p>Le gla\u00e7age au gochujang est excellent sur les c\u00f4tes lev\u00e9es. Les \u00e9pices nord-africaines (coriandre, cumin, piment de la Jama\u00efque, gingembre) prennent vie dans un gigot d\u2019agneau ras-el-hanout. Les saveurs mayas d\u2019antan, comme les agrumes, la p\u00e2te de chili et la cannelle, peuvent \u00eatre utilis\u00e9es pour cr\u00e9er un plat de porc fum\u00e9 cochinita pibil.<\/p>\n\n\n\n<p>Les fruits et l\u00e9gumes au barbecue peuvent \u00e9galement \u00eatre rehauss\u00e9s de saveurs internationales. L\u2019utilisation de bois de ch\u00eane pour griller les courgettes ajoute une touche de fum\u00e9e \u00e0 la douceur du l\u00e9gume, et la sauce sambal aux noix de cajou d\u2019Asie du Sud-Est et la bagna cauda aux noix de Grenoble apportent une richesse \u00e9pic\u00e9e, savoureuse et fum\u00e9e \u00e0 la table.<\/p>\n\n\n\n<p>L\u2019aubergine fum\u00e9e et glac\u00e9e au miso donne une nouvelle dimension au baba ghanouj. L\u2019aubergine japonaise cuite lentement avec un gla\u00e7age au miso se pr\u00e9sente \u00e0 la table comme un amuse-gueule fum\u00e9, parfait comme trempette ou \u00e9tendu sur des pointes de pain grill\u00e9.
