Certains m\u00e9langes, comme l\u2019huile de coton et l\u2019huile de soya, peuvent \u00e9galement \u00eatre utilis\u00e9s pour combiner les caract\u00e9ristiques les plus int\u00e9ressantes de chacune.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-frying-life-and-oil-breakdown\">Dur\u00e9e de vie et d\u00e9gradation de l\u2019huile<\/h2>\n\n\n\n<p>L\u2019une des choses les plus importantes \u00e0 consid\u00e9rer dans le choix d\u2019une huile est la fr\u00e9quence \u00e0 laquelle vous devez la changer. Mais n\u2019oubliez pas que l\u2019utilisation et l\u2019entretien peuvent \u00e9galement affecter la dur\u00e9e de vie de l\u2019huile. M\u00eame si les huiles de premi\u00e8re qualit\u00e9 sont tr\u00e8s stables, certains facteurs contribuent \u00e0 r\u00e9duire leur dur\u00e9e de vie. Vous pouvez utiliser l\u2019acronyme CHASS pour vous souvenir de certains de ces facteurs :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Heat<\/strong> &#8211; monitor the heat level in your fryer. Heat is needed to cook, but if it\u2019s too hot, your oils will break down too quickly.\u00a0<\/li>\n\n\n\n<li><strong>Air<\/strong> &#8211; cover your fryers during slow hours and at night to reduce its contact with air.<\/li>\n\n\n\n<li><strong>Moisture<\/strong> &#8211; everything you cook contains moisture &#8211; particularly proteins like chicken. Load your fry baskets away from the fryer especially when food is frozen.\u00a0<\/li>\n\n\n\n<li><strong>Sel<\/strong> &#8211; salt breaks down in oil and can cause foaming.
