Ce dernier favorise la prise de conscience, permet de cibler les besoins de formation et cr\u00e9e une comp\u00e9tition amicale.<\/h2>\n<p>On ne peut g\u00e9rer ce qu\u2019on ne mesure pas. Voil\u00e0 pourquoi il est si important d\u2019accro\u00eetre la sensibilisation \u00e0 la quantit\u00e9 r\u00e9elle de d\u00e9chets de cuisine, ou pr\u00e9consommation, que vos employ\u00e9s produisent et de profiter de l\u2019occasion pour leur offrir une formation sur la mani\u00e8re de r\u00e9duire le gaspillage.<\/p>\n<p>Notre outil de contr\u00f4le des pertes alimentaires repr\u00e9sente une fa\u00e7on simple, et gratuite, d\u2019amorcer la discussion sur le gaspillage pr\u00e9consommation avec votre personnel.<\/p>\n<p><a class=\"button\" href=\"\/fr-ca\/sites\/gfs.com\/files\/Waste-Watchers-Poster.pdf\/\" target=\"_blank\" rel=\"noopener\">T\u00e9l\u00e9charger l'outil (PDF)<\/a><\/p>\n<h3>Comment l\u2019outil fonctionne-t-il?<\/h3>\n<p>1. Utilisez la premi\u00e8re rang\u00e9e pour noter toutes les pertes pr\u00e9consommation, selon leur poids ou leur nombre de portions (n\u2019en choisir qu\u2019une seule), pour chaque jour de la semaine. Additionnez ensuite tous les chiffres de la premi\u00e8re rang\u00e9e et inscrivez le total dans la derni\u00e8re colonne. Ce chiffre servira de base de r\u00e9f\u00e9rence.<\/p>\n<p>2. Avec votre personnel, fixez-vous un objectif de r\u00e9duction hebdomadaire (ou autre, selon ce qui convient \u00e0 votre \u00e9quipe). Par exemple : Nous allons diminuer le total de pertes de 5 % par semaine.<\/p>\n<p>3. Imprimez une autre copie du tableau et demandez \u00e0 vos employ\u00e9s de noter chaque jour les pertes. Vous pourriez aussi en imprimer plusieurs et les afficher aux endroits o\u00f9 l\u2019on jette le plus de nourriture (p. ex. une pour le personnel de service et une pour celui en cuisine).&nbsp;<\/p>\n<ul>\n<li>Il faut inscrire la date et la quantit\u00e9 de pertes pr\u00e9consommation avant que l\u2019aliment ne soit jet\u00e9 ou mis au compost.<\/li>\n<li>Veillez \u00e0 ce que la m\u00e9thode utilis\u00e9e reste toujours la m\u00eame (poids ou nombre de portions).<\/li>\n<\/ul>\n<p>4. \u00c0 la fin de chaque journ\u00e9e, ramassez tous les tableaux, faites le total des pertes et inscrivez le r\u00e9sultat \u00e0 l\u2019endroit appropri\u00e9 dans votre tableau principal (celui sur lequel figure votre base de r\u00e9f\u00e9rence).<\/p>\n<p>5. Examinez r\u00e9guli\u00e8rement les r\u00e9sultats avec votre \u00e9quipe, chaque jour ou chaque semaine, et cherchez ensemble des solutions r\u00e9alistes qui vous permettront de continuer de r\u00e9duire le gaspillage. Pendant ces rencontres, vous pouvez aussi en profiter pour faire un rappel concernant certaines notions :<\/p>\n<ul>\n<li>Recettes normalis\u00e9es<\/li>\n<li>Ajustement du rendement des recettes<\/li>\n<li>Techniques de coupe des fruits et l\u00e9gumes<\/li>\n<li>Entreposage ad\u00e9quat des fruits et l\u00e9gumes<\/li>\n<li>Mani\u00e8res d\u2019utiliser la pelure, les parties inutilis\u00e9es et les restes'<\/li>\n<\/ul>\n<p>6. Si votre \u00e9quipe atteint son objectif hebdomadaire, r\u00e9compensez-la! Offrez de la pizza, de la cr\u00e8me glac\u00e9e, du ma\u00efs souffl\u00e9, etc. Et si vos employ\u00e9s atteignent chaque semaine leur objectif, pensez \u00e0 organiser quelque chose d\u2019un peu plus gros. Pour les garder motiv\u00e9s, vous pourriez aussi envisager de faire tirer des prix comme une carte-cadeau ou des billets de cin\u00e9ma.<\/p>\n<p>7. Afin de vous assurer que votre \u00e9quipe reste concentr\u00e9e sur la r\u00e9duction des pertes pr\u00e9consommation, faites cette activit\u00e9 deux ou trois par ann\u00e9e.<\/p>\n<p>8. Partagez votre r\u00e9ussite avec la direction et la communaut\u00e9.
