Elles am\u00e9liorent l\u2019apparence, l\u2019odeur et le go\u00fbt de la nourriture, et ce, sans ajout de sel, de sucre ou de mati\u00e8res grasses. Elles constituent aussi une bonne source d\u2019antioxydants, lesquels contribuent notamment \u00e0 lutter contre les effets du vieillissement, des mauvaises habitudes alimentaires et de la pollution. Les dommages caus\u00e9s par ces facteurs peuvent augmenter le risque de cancer, de diab\u00e8te et de maladie cardiaque. Particuli\u00e8rement puissantes, les cinq \u00e9pices suivantes donneront des saveurs uniques \u00e0 vos plats et pourraient contribuer \u00e0 la sant\u00e9 de vos clients.<\/p>\n<h3>1. Curcuma<\/h3>\n<p>Cette \u00e9pice d\u2019un jaune intense provient d\u2019une racine originaire de l\u2019Asie du Sud-Est et donne notamment leur couleur unique \u00e0 la moutarde, la poudre de cari et certains fromages. Dans les cuisines du Moyen-Orient du sud de l\u2019Asie, on utilise le curcuma pour donner aux plats sal\u00e9s des saveurs bois\u00e9es. En m\u00e9decine traditionnelle, on consid\u00e8re que le curcuma favorise la digestion, mais, selon des recherches scientifiques, il pourrait aussi r\u00e9duire l\u2019inflammation, gr\u00e2ce \u00e0 la curcumine qu\u2019il contient. L\u2019inflammation est un m\u00e9canisme de protection de l\u2019organisme, qui agit sous forme d\u2019irritation et d\u2019enflure, mais qui peut \u00e9galement mener \u00e0 des probl\u00e8mes de sant\u00e9. La curcumine pr\u00e9sente dans le curcuma contribue \u00e0 lutter contre l\u2019irritation caus\u00e9e par l\u2019inflammation et peut aider \u00e0 r\u00e9duire le risque de certaines maladies comme l\u2019Alzheimer, l\u2019arthrite et les cardiopathies.<\/p>\n<h3>2. Piment chili<\/h3>\n<p>Piment doux, cayenne, jalape\u00f1o et aji ne sont que quelques-uns des piments originaires du Mexique. En tant qu\u2019\u00e9pices, ils sont s\u00e9ch\u00e9s, moulus, puis utilis\u00e9s pour donner un peu (ou beaucoup) de piquant aux plats. Les sauces comme la sriracha sont tr\u00e8s relev\u00e9es en raison de la p\u00e2te de piment chili qu\u2019elles contiennent. Par ailleurs, les bienfaits du piment sont associ\u00e9s \u00e0 une substance appel\u00e9e capsa\u00efcine, laquelle peut am\u00e9liorer la circulation sanguine et r\u00e9duire le taux de cholest\u00e9rol, ce qui a des effets positifs sur le c\u0153ur. La capsa\u00efcine pourrait \u00e9galement contribuer au sentiment de sati\u00e9t\u00e9 et faire augmenter la temp\u00e9rature corporelle pour d\u00e9clencher le processus permettant de br\u00fbler les graisses. Utilisez le piment pour donner du piquant aux soupes, aux pommes de terre et aux trempettes comme le houmous ou le guacamole. Conseil : commencez avec de petites quantit\u00e9s, puis augmentez graduellement en fonction des pr\u00e9f\u00e9rences ou de la tol\u00e9rance de vos clients.<\/p>\n<h3>3. Clou de girofle<\/h3>\n<p>La saveur douce et chaude du clou de girofle en fait le compagnon parfait des recettes d\u2019automne et d\u2019hiver. Le clou de girofle moulu s\u2019int\u00e8gre bien aux pains et autres produits de boulangerie, aux c\u00e9r\u00e9ales chaudes, aux compotes et aux cidres. On l\u2019utilise depuis longtemps en herboristerie et en m\u00e9decine traditionnelle chinoise pour engourdir la douleur, et il a r\u00e9cemment \u00e9t\u00e9 d\u00e9montr\u00e9 que cette \u00e9pice contient de l\u2019eug\u00e9nol, lequel pourrait aider \u00e0 att\u00e9nuer les douleurs musculaires et celles li\u00e9es \u00e0 l\u2019arthrite. En prime, parmi toutes les herbes et \u00e9pices, le clou de girofle est celle dont la concentration en antioxydants est la plus \u00e9lev\u00e9e, ce qui en fait un bon alli\u00e9 pour lutter contre le cancer, les maladies cardiaques et le diab\u00e8te.&nbsp;<\/p>\n<h3>4. Gingembre<\/h3>\n<p>La racine de gingembre moulue est souvent int\u00e9gr\u00e9e aux plats de l\u00e9gumes et aux vinaigrettes de style asiatiques, mais se retrouve aussi dans certains th\u00e9s de sp\u00e9cialit\u00e9. On en trouve parfois notamment dans le matcha, th\u00e9 vert en poudre \u00e0 l\u2019origine utilis\u00e9 dans la c\u00e9r\u00e9monie du th\u00e9 japonaise, dont l\u2019amertume est contrebalanc\u00e9e par les notes d\u2019agrumes \u00e9pic\u00e9es du gingembre. Traditionnellement employ\u00e9 pour traiter la naus\u00e9e, le gingembre contient une substance nomm\u00e9e ging\u00e9rol, qui, selon des \u00e9tudes, pourrait aider \u00e0 r\u00e9duire l\u2019inflammation et le taux de cholest\u00e9rol, donc le risque de maladie cardiaque.<\/p>\n<h3>5. Dukka<\/h3>\n<p>Le dukka est un m\u00e9lange d\u2019\u00e9pices \u00e9gyptien dont les ingr\u00e9dients de base sont les noisettes grill\u00e9es, les graines de s\u00e9same, la coriandre et le cumin. Pour le pr\u00e9parer, il suffit de combiner tous les ingr\u00e9dients. Les noix et les graines contenues dans le m\u00e9lange sont une source d\u2019om\u00e9ga-3 et d\u2019om\u00e9ga-6, qui contribuent \u00e0 la sant\u00e9 du c\u0153ur. Le dukka est aussi riche en prot\u00e9ines et en vitamines du complexe B, qui, respectivement, aident \u00e0 la force musculaire et donnent de l\u2019\u00e9nergie. On peut m\u00e9langer le dukka \u00e0 de l\u2019huile d\u2019olive pour en faire une vinaigrette ou une trempette, ou simplement l\u2019utiliser pour rehausser les l\u00e9gumes grill\u00e9s, le tofu ou les \u0153ufs brouill\u00e9s.&nbsp;<\/p>\n<p>Comme une foule d\u2019autres aliments, les herbes et les \u00e9pices cadrent tout \u00e0 fait avec une di\u00e8te \u00e9quilibr\u00e9e. Les scientifiques ne sont pas encore parvenus \u00e0 comprendre la quantit\u00e9 exacte d\u2019herbes ou d\u2019\u00e9pices qu\u2019il faut consommer pour en obtenir tous les bienfaits pour la sant\u00e9, mais ils savent cependant que leur utilisation avec mod\u00e9ration fournit des antioxydants et d\u2019autres micronutriments.
