{"id":25868,"date":"2017-12-27T10:12:18","date_gmt":"2017-12-27T15:12:18","guid":{"rendered":"https:\/\/dev-gordon-food-service-canada.pantheonsite.io\/ideas\/a-mind-for-memory-care\/"},"modified":"2025-07-01T12:07:10","modified_gmt":"2025-07-01T16:07:10","slug":"des-aliments-au-secours-de-la-memoire","status":"publish","type":"post","link":"https:\/\/gfs.ca\/fr-ca\/ideas\/a-mind-for-memory-care\/","title":{"rendered":"Des aliments au secours de la m\u00e9moire"},"content":{"rendered":"<h2>Aper\u00e7u du r\u00e9gime MIND et de la fa\u00e7on dont il pourrait contribuer \u00e0 l\u2019am\u00e9lioration de la sant\u00e9 du cerveau et \u00e0 la r\u00e9duction du risque de maladie d\u2019Alzheimer.<\/h2>\n<p>De nouvelles \u00e9tudes examinent les effets du <a href=\"http:\/\/www.eatright.org\/resource\/health\/wellness\/healthy-aging\/memory-boosting-foods\">r\u00e9gime alimentaire sur la sant\u00e9 du cerveau<\/a>, et les r\u00e9sultats sont surprenants. Si nous savons depuis longtemps que la di\u00e8te peut jouer un r\u00f4le global dans le contr\u00f4le et la pr\u00e9vention de certaines maladies, l\u2019\u00e9tude men\u00e9e par les chercheurs du Rush University Medical Center, \u00e0 Chicago, a permis de conclure \u00e0 une r\u00e9duction du risque de la maladie d\u2019Alzheimer de 53 pour cent chez les personnes ayant respect\u00e9 le r\u00e9gime propos\u00e9. Le r\u00e9gime MIND (pour Mediterranean-DASH Intervention for Neurodegenerative Delay) est une combinaison du <a href=\"http:\/\/www.eatright.org\/resource\/food\/planning-and-prep\/cooking-tips-and-trends\/make-it-mediterranean\">r\u00e9gime m\u00e9diterran\u00e9en<\/a>&nbsp;et du <a href=\"http:\/\/www.eatright.org\/resource\/health\/wellness\/heart-and-cardiovascular-health\/dash-diet-reducing-hypertension-through-diet-and-lifestyle\">r\u00e9gime DASH (dont l\u2019acronyme signifie litt\u00e9ralement approche nutritionnelle pour r\u00e9duire l\u2019hypertension).<\/a>. MIND stands for Mediterranean-DASH Intervention for Neurodegenerative Delay.<\/p>\n<h3>On est ce que l\u2019on mange<\/h3>\n<p>De fa\u00e7on g\u00e9n\u00e9rale, le r\u00e9gime MIND est plus ou moins strict : les aliments sont regroup\u00e9s en dix familles d\u2019aliments \u00ab\u2009bons pour le cerveau\u2009\u00bb et cinq familles d\u2019aliments \u00ab\u2009n\u00e9fastes\u2009\u00bb. On y met aussi l\u2019accent sur l\u2019importance de consommer souvent des l\u00e9gumes verts : chou fris\u00e9, \u00e9pinards, brocoli, chou cavalier, etc. Comme ce r\u00e9gime est ax\u00e9 sur certaines habitudes alimentaires plut\u00f4t que sur des recommandations nutritionnelles pr\u00e9cises, il est assez simple \u00e0 respecter. En fait, dans le cadre de l\u2019\u00e9tude, le risque de d\u00e9mence variait de 35 \u00e0 53 pour cent, selon la rigueur avec laquelle les participants avaient suivi le r\u00e9gime. Bien s\u00fbr, m\u00eame si les r\u00e9sultats du r\u00e9gime MIND sont prometteurs, il faut savoir que d\u2019autres \u00e9tudes seront n\u00e9cessaires afin de confirmer les r\u00e9sultats initiaux.<\/p>\n<p><strong>Le r\u00e9gime MIND d\u00e9compos\u00e9<\/strong><\/p>\n<p>On recommande de consommer des aliments provenant des familles suivantes, dites \u00ab\u2009bonnes pour le cerveau\u2009\u00bb :<\/p>\n<ul>\n<li>L\u00e9gumes, particuli\u00e8rement les l\u00e9gumes-feuilles<\/li>\n<li>Noix<\/li>\n<li>Petits fruits<\/li>\n<li>Haricots<\/li>\n<li>Grains entiers<\/li>\n<li>Poisson et volaille<\/li>\n<li>Huile d\u2019olive<\/li>\n<li>Vin<\/li>\n<\/ul>\n<p>Et on recommande d\u2019\u00e9viter ou de limiter la consommation d\u2019aliments provenant des cat\u00e9gories de ceux qui sont \u00ab\u2009n\u00e9fastes\u2009\u00bb :<\/p>\n<ul>\n<li>Viande rouge<\/li>\n<li>Beurre\/margarine<\/li>\n<li>Fromages<\/li>\n<li>P\u00e2tisseries et sucreries<\/li>\n<li>Aliments frits et \u00ab\u2009malbouffe\u2009\u00bb<\/li>\n<\/ul>\n<p>De fa\u00e7on g\u00e9n\u00e9rale, il faut savoir que de nombreuses \u00e9tudes ont permis de d\u00e9montrer que certains aliments ont des bienfaits sur le cerveau et pourraient donc permettre de ralentir le d\u00e9clin cognitif : l\u00e9gumes de la famille des crucif\u00e8res, l\u00e9gumes-feuilles, grains entiers, poissons riches en om\u00e9ga-3, petits fruits frais ou s\u00e9ch\u00e9s, noix, huile d\u2019olive et aliments riches en antioxydants. Selon Dana Fillmore, directrice du secteur sant\u00e9 chez Service alimentaire Gordon, \u00ab\u2009l\u2019objectif consiste \u00e0 amener les gens \u00e0 r\u00e9fl\u00e9chir sur leurs habitudes alimentaires en g\u00e9n\u00e9ral plut\u00f4t qu\u2019\u00e0 se concentrer sur un aliment en particulier. On veut leur faire comprendre que c\u2019est la combinaison des aliments\/nutriments consomm\u00e9s qui font la diff\u00e9rence, pas juste le fait d\u2019avoir assez mang\u00e9 d\u2019un aliment donn\u00e9.\u2009\u00bb<\/p>\n<h3>Des solutions simples<\/h3>\n<p>Les services alimentaires du secteur des soins aux a\u00een\u00e9s sont en pleine mutation, notamment parce que les baby-boomers s\u2019attendent \u00e0 ce qu\u2019on leur serve d\u2019excellents plats faits d\u2019ingr\u00e9dients frais et ax\u00e9s sur les cuisines r\u00e9gionales. Comme Gerry Ludwig, chef corporatif consultant chez Service alimentaire Gordon le fait remarquer, \u00ab\u2009les chefs utilisent les l\u00e9gumes de mani\u00e8re de plus en plus cr\u00e9ative. Ils traitent ces produits avec autant de passion que les prot\u00e9ines et, pour en faire ressortir les saveurs, utilisent des techniques de cuisson agressives, comme la cuisson sur le gril ou sur feu de bois, ou encore le r\u00f4tissage.\u2009\u00bb<\/p>\n<p>Toutes les occasions devraient \u00eatre bonnes pour pr\u00e9parer des plats innovateurs et savoureux permettant d\u2019augmenter la consommation de grains entiers et de l\u00e9gumes. Et la cuisine du monde, autant les saut\u00e9s asiatique que les soupes et rago\u00fbts \u00e0 la m\u00e9diterran\u00e9enne, permet facilement d\u2019int\u00e9grer divers grains et l\u00e9gumes \u00e0 des plats exquis. Par ailleurs, les baies d\u2019a\u00e7a\u00ef, que l\u2019on peut utiliser dans les boissons frapp\u00e9es ou les bols, sont un ingr\u00e9dient parfait \u00e0 servir au d\u00e9jeuner. Enfin, on peut \u00e9galement pr\u00e9parer des marinades de fruits ou de l\u00e9gumes faibles en sodium et les employer pour donner du mordant aux sandwichs et salades.<\/p>\n<p>M\u00eame s\u2019il n\u2019est pas toujours simple d\u2019offrir une cuisine qui pla\u00eet autant aux personnes ayant des go\u00fbts conventionnels qu\u2019\u00e0 celles en qu\u00eate de nouveaut\u00e9, si l\u2019on envisage les choses dans leur globalit\u00e9, il demeure assez simple d\u2019int\u00e9grer au menu des aliments ayant des bienfaits pour le cerveau. On peut notamment proposer des collations saines compos\u00e9es de grains entiers, de noix et de petits fruits, de fruits s\u00e9ch\u00e9s et d\u2019un m\u00e9lange de noix ou encore de craquelins multigrains tartin\u00e9s de confiture non sucr\u00e9e. Les boissons peuvent aussi permettre d\u2019ajouter au menu des aliments qui cadrent avec le r\u00e9gime MIND, par exemple, des boissons frapp\u00e9es faites \u00e0 partir de l\u00e9gumes et de petits fruits.
