D\u00e9couvrez pourquoi et comment vous devriez en tenir compte.<\/h2>\n<p>La culture alimentaire actuelle fait la part belle aux produits simples et peu transform\u00e9s, \u00e0 la durabilit\u00e9, \u00e0 l\u2019approvisionnement local et \u00e0 la r\u00e9duction du gaspillage. Et les aliments entiers ont une place dans ce tableau. Il convient toutefois de se demander en quoi ils diff\u00e8rent des aliments transform\u00e9s et comment ils devraient \u00eatre int\u00e9gr\u00e9s au menu.<\/p>\n<h3>Quelques d\u00e9finitions<\/h3>\n<p>La cat\u00e9gorie des aliments entiers comprend-elle les \u0153ufs durs, les noix, les fraises en pur\u00e9e et le granola? Oui et non. M\u00eame si, techniquement, chacun de ses aliments a subi une transformation (ils ont respectivement \u00e9t\u00e9 bouillis, \u00e9cal\u00e9s, r\u00e9duits en pur\u00e9e et cuits), beaucoup les consid\u00e9reraient comme entiers, mais tr\u00e8s l\u00e9g\u00e8rement transform\u00e9s. Si l\u2019on compare ces aliments, par exemple, au macaroni au fromage en bo\u00eete, aux croustilles, au pain blanc et aux granules de pommes de terre, la d\u00e9finition d\u2019aliment transform\u00e9 devient beaucoup plus claire.<\/p>\n<p>Typiquement, quand on parle d\u2019aliments entiers, on fait r\u00e9f\u00e9rence \u00e0 des aliments peu transform\u00e9s et \u00e0 un concept qui se rapproche de celui de \u00ab\u2009clean label\u2009\u00bb. Dans les deux cas, l\u2019id\u00e9e consiste \u00e0 \u00e9liminer les saveurs et colorants artificiels ainsi qu\u2019\u00e0 r\u00e9duire les agents de conservation. Ainsi, les termes aliments entiers et aliments peu transform\u00e9s sont souvent utilis\u00e9s indiff\u00e9remment l\u2019un de l\u2019autre.<\/p>\n<h3>\u00c9volution des choses<\/h3>\n<p>Au Canada, l\u2019industrialisation et la guerre ont, par la force des choses, amen\u00e9 certains changements sur le plan alimentaire. Les travailleurs des usines et les soldats avaient besoin d\u2019aliments \u00ab\u2009portatifs\u2009\u00bb et stables \u00e0 temp\u00e9rature ambiante. Puis, avec le mouvement hippie des ann\u00e9es 60 et 70, on a plut\u00f4t vu une sensibilisation aux m\u00eames questions que maintenant : produits peu transform\u00e9s, durabilit\u00e9, approvisionnement local et r\u00e9duction du gaspillage. Les aliments frais et entiers \u00e9taient alors tr\u00e8s \u00e0 la mode. Mais sans les technologies pour donner une impulsion au mouvement, ce dernier a connu une progression plut\u00f4t lente.<\/p>\n<p>Apr\u00e8s la Seconde Guerre mondiale sont apparus les aliments transform\u00e9s modernes, c\u2019est-\u00e0-dire des aliments assez complexes. Les producteurs alimentaires se sont bouscul\u00e9s pour satisfaire les besoins d\u2019une population grandissante, employant les technologies pour am\u00e9liorer les produits existants et donnant ainsi naissance aux aliments fonctionnels que nous connaissons. Malheureusement, ces \u00ab\u2009am\u00e9liorations\u2009\u00bb ont estomp\u00e9 la ligne de d\u00e9marcation entre les aliments entiers et ceux transform\u00e9s. Nous nous sommes alors retrouv\u00e9s confront\u00e9s \u00e0 la difficult\u00e9 de d\u00e9terminer ce qu\u2019il fallait ou non manger dans un contexte o\u00f9 il devenait de plus en plus dur de faire des choix sains.<\/p>\n<p>Actuellement, on observe un autre changement soci\u00e9tal, qui se traduit par une demande renouvel\u00e9e en aliments naturels et entiers, le tout motiv\u00e9 par une meilleure compr\u00e9hension de la sant\u00e9 et du bien-\u00eatre, ainsi que du r\u00f4le que joue l\u2019alimentation sur ceux-ci. Les technologies, particuli\u00e8rement les m\u00e9dias sociaux, permettent d\u00e9sormais aux consommateurs de s\u2019adresser beaucoup plus facilement aux producteurs alimentaires, qui non seulement sont \u00e0 l\u2019\u00e9coute, mais prennent aussi le temps de r\u00e9pondre.<\/p>\n<h3>Des aliments entiers au menu<\/h3>\n<p>M\u00eame si certaines personnes d\u00e9daignent la transformation, il ne faut pas oublier qu\u2019elle est parfois n\u00e9cessaire, notamment parce qu\u2019elle permet de transporter les aliments de fa\u00e7on s\u00e9curitaire et qu\u2019elle peut contribuer \u00e0 la pr\u00e9servation des nutriments. Par exemple, les fruits et l\u00e9gumes destin\u00e9s \u00e0 la cong\u00e9lation sont cueillis \u00e0 pleine maturit\u00e9, c\u2019est-\u00e0-dire g\u00e9n\u00e9ralement au moment o\u00f9 ils renferment le plus de nutriments, puis sont surgel\u00e9s. S\u2019ils \u00e9taient vendus frais, le temps de livraison suffirait \u00e0 les ab\u00eemer et \u00e0 r\u00e9duire leur teneur en nutriments.<\/p>\n<p>Il faut aussi tenir compte des notions de saisonnalit\u00e9 et d\u2019innocuit\u00e9. Sans la transformation, beaucoup d\u2019ingr\u00e9dients ne pourraient \u00eatre disponibles \u00e0 l\u2019ann\u00e9e ni servis sans danger, ce qui rendrait l\u2019\u00e9laboration des menus beaucoup plus compliqu\u00e9e et ferait augmenter les co\u00fbts. Comme le temps et l\u2019argent resteront toujours une des principales contraintes des restaurateurs, il convient de se demander comment on peut respecter son budget tout en satisfaisant les attentes du client. Une des solutions consiste \u00e0 offrir quelques plats signature contenant des produits frais et entiers, et \u00e0 \u00e9quilibrer le reste du menu \u00e0 l\u2019aide de produits semi-pr\u00e9par\u00e9s.<\/p>\n<p>On peut \u00e9galement envisager de modifier ses recettes pour y int\u00e9grer principalement des aliments entiers et peu transform\u00e9s comme les fruits et les l\u00e9gumes frais, surgel\u00e9s ou en conserve, les grains entiers et des prot\u00e9ines comme les \u0153ufs, les noix, les viandes maigres et les l\u00e9gumineuses. Et il ne faut pas se limiter aux plats principaux. Les plats d\u2019accompagnements et les boissons ont aussi avantage \u00e0 \u00eatre repens\u00e9s. On peut, par exemple, offrir des boissons frapp\u00e9es bien fra\u00eeches.<\/p>\n<p>De fa\u00e7on g\u00e9n\u00e9rale, il importe de veiller \u00e0 ce que les changements soient coh\u00e9rents avec son image de marque. Si ce n\u2019est pas le cas, m\u00eame les meilleures id\u00e9es para\u00eetront d\u00e9plac\u00e9es et n\u2019auront pas la faveur de la client\u00e8le.<\/p>\n<h3>Afficher ses couleurs<\/h3>\n<p>Peu importe la fa\u00e7on dont vous d\u00e9cidez d\u2019int\u00e9grer les aliments entiers ou peu transform\u00e9s au menu, veillez \u00e0 mettre ces changements en valeur pour que vos clients remarquent les diff\u00e9rences. Vous pourriez, entre autres, modifier la description des plats ou leur accoler un symbole qui renvoie \u00e0 une explication ailleurs sur le menu.
