Mais il est encore plus difficile de combler leurs besoins nutritionnels. En effet, les personnes atteintes de d\u00e9mence se heurtent \u00e0 de nombreux obstacles, dont les probl\u00e8mes de vision, qui rendent la nourriture moins app\u00e9tissante, la surcharge sensorielle quand ils se trouvent dans une salle \u00e0 manger achaland\u00e9e et bruyante ou les oublis, qui leur font de sauter des repas parce qu\u2019ils pensent avoir d\u00e9j\u00e0 mang\u00e9. Dans ces situations, les plats enrichis peuvent permettre de fournir des aliments tr\u00e8s nutritifs en petite quantit\u00e9.<\/p>\n<p>Et \u00e7a n\u2019a rien de sorcier. Comme l\u2019explique Jessie Waalkes, nutritionniste pour le Centre de ressources nutritionnelles de Service alimentaire Gordon, il suffit d\u2019utiliser des aliments de tous les jours et d\u2019en augmenter la teneur en calories et en prot\u00e9ines afin de pr\u00e9venir la malnutrition, associ\u00e9e \u00e0 l\u2019augmentation du risque de probl\u00e8mes de sant\u00e9.<\/p>\n<p>\u00ab\u2009Les aliments enrichis sont g\u00e9n\u00e9ralement des aliments normaux auxquels on ajoute des petits extras, pr\u00e9cise-t-elle. C\u2019est tr\u00e8s simple. On peut, par exemple, mettre plus de beurre ou de cr\u00e8me sure dans la pur\u00e9e de pommes de terre ou utiliser du lait entier plut\u00f4t qu\u2019\u00e9cr\u00e9m\u00e9 dans le gruau ou la cr\u00e8me de bl\u00e9.\u2009\u00bb<\/p>\n<h3>Les aliments d\u2019abord<\/h3>\n<p>Les aliments enrichis peuvent aider beaucoup de personnes. S\u2019ils sont b\u00e9n\u00e9fiques pour les r\u00e9sidents ayant des troubles de m\u00e9moire, ils pourraient aussi l\u2019\u00eatre pour ceux qui se r\u00e9tablissent d\u2019une maladie.<\/p>\n<p>\u00ab\u2009Nous cherchons toujours \u00e0 donner aux gens de vrais aliments avant d\u2019envisager les suppl\u00e9ments, affirme Mme Waalkes. Et ces aliments peuvent \u00eatre \u00e0 la fois d\u00e9licieux et nourrissants!\u2009\u00bb<\/p>\n<p>Dans les \u00e9tablissements de sant\u00e9, o\u00f9 les repas sont pr\u00e9par\u00e9s en grandes quantit\u00e9s, elle conseille de servir aux personnes devant recevoir des aliments enrichis, par exemple, une \u00ab\u2009super sauce\u2009\u00bb bourr\u00e9e de calories pour accompagner la dinde et la pur\u00e9e. Et si un r\u00e9sident insiste pour avoir un sandwich au beurre d\u2019arachides et \u00e0 la confiture, il suffit de beurrer le pain avant d\u2019y tartiner le beurre d\u2019arachides. Le go\u00fbt sera le m\u00eame, mais le plat contiendra plus de calories.<\/p>\n<h3>Reconnaissance des besoins<\/h3>\n<p>Il est assez facile de savoir quand quelqu\u2019un ne mange pas beaucoup, poursuit Mme Waalkes. La perte de poids et les restes dans les assiettes en sont deux bons indicateurs. Mais il faut aussi tenter de comprendre pourquoi c\u2019est le cas. Chez les personnes atteintes de d\u00e9mence, cinq principaux facteurs nuisent \u00e0 la prise alimentaire :<\/p>\n<ol>\n<li>Troubles cognitifs. La personne ne reconna\u00eet pas l\u2019aliment ou la boisson comme quelque chose de destin\u00e9 \u00e0 \u00eatre consomm\u00e9.<\/li>\n<li>Probl\u00e8mes moteurs. Le r\u00e9sident est incapable d\u2019utiliser les ustensiles ou de mastiquer la nourriture.<\/li>\n<li>Troubles sensoriels. La personne a un sens de l\u2019odorat ou du go\u00fbt r\u00e9duit, ne sent pas la soif, arrive difficilement \u00e0 d\u00e9tecter la temp\u00e9rature des aliments ou ne distingue pas les aliments dans son assiette.<\/li>\n<li>Comportements alimentaires. Le r\u00e9sident est agit\u00e9, a des habitudes alimentaires changeantes, refuse de manger ou mange trop, n\u2019a plus les m\u00eames go\u00fbts qu\u2019avant ou joue avec sa nourriture.<\/li>\n<li>App\u00e9tit. La m\u00e9dication ou le manque d\u2019exercice r\u00e9duisent l\u2019app\u00e9tit de la personne.<\/li>\n<\/ol>\n<p>Ces difficult\u00e9s doivent \u00eatre reconnues, car les strat\u00e9gies qui permettent de les surmonter font autant partie de la solution que les aliments enrichis. Par exemple, les noix ont beau \u00eatre tr\u00e8s nutritives, si la personne n\u2019arrive pas \u00e0 les mastiquer, elles resteront dans l\u2019assiette. Dans ce cas, il serait donc pr\u00e9f\u00e9rable d\u2019opter pour du beurre de noix. M\u00eame chose pour le poulet, la pur\u00e9e de pommes de terre et le fromage cottage : s\u2019ils sont nutritifs, ils peuvent aussi \u00eatre difficiles \u00e0 distinguer dans une assiette blanche. L\u2019utilisation d\u2019assiettes fonc\u00e9es cr\u00e9era un contraste qui facilitera la vie des personnes ayant des troubles de vision.<\/p>\n<h3>Une bonne strat\u00e9gie<\/h3>\n<p>M\u00eame si la plupart des gens attendent impatiemment l\u2019heure des repas, ce n\u2019est souvent pas le cas des personnes ayant des probl\u00e8mes de m\u00e9moire. Leur capacit\u00e9 d\u2019attention limit\u00e9e ne leur permet pas de passer une heure tranquillement assis \u00e0 discuter. Les aliments enrichis permettent cependant d\u2019offrir des repas rapides qui regorgent de prot\u00e9ines, de nutriments et de calories. Voici quelques suggestions pour enrichir les plats de tous les jours :<\/p>\n<p><strong>Produits laitiers.<\/strong> Dans les recettes n\u00e9cessitant du lait, optez pour du lait entier. Trouvez des fa\u00e7ons d\u2019utiliser le yogourt, le fromage cottage et la cr\u00e8me glac\u00e9e. Attention, cependant, aux intol\u00e9rances au lactose. Les \u0153ufs sont aussi une excellente source de prot\u00e9ines.<\/p>\n<p><strong>C\u00e9r\u00e9ales.<\/strong> Enrichissez les c\u00e9r\u00e9ales chaudes de lait en poudre, de beurre ou de sirop.<\/p>\n<p><strong>Pur\u00e9es.<\/strong> Ajoutez du beurre ou des prot\u00e9ines \u00e0 la pomme de terre, la patate douce, le navet ou les carottes pour cr\u00e9er des aliments adapt\u00e9s aux personnes ayant de la difficult\u00e9 \u00e0 mastiquer.<\/p>\n<p><strong>Soupes. <\/strong>Ajoutez beaucoup de l\u00e9gumes ou de poulet \u00e0 la soupe aux nouilles. Vous pouvez aussi remplacer le bouillon par une base contenant de la cr\u00e8me et du beurre.<\/p>\n<p><strong>Sauces.  de cr\u00e8me et utilisez un bouillon assez gras.<\/strong> Enrichissez-les de lait en poudre ou<\/p>\n<p><strong>Rago\u00fbts.<\/strong> Mettez-y du fromage, du lait entier, de la sauce ou de petits morceaux de viande.<\/p>\n<p><strong>Desserts.<\/strong> Les biscuits, les tablettes de chocolat, les smoothies et les laits frapp\u00e9s sont sucr\u00e9s\u2026 et plein de calories<\/p>\n<p><strong>Bouch\u00e9es.<\/strong> Hard-boiled eggs, meatball sliders, chicken fingers, empanadas and other handhelds.<\/p>\n<h3>De nombreuses solutions<\/h3>\n<p>Il existe beaucoup de fa\u00e7ons de servir des plats enrichis. Parfois, ce n\u2019est pas plus compliqu\u00e9 que de remplacer le lait dans le caf\u00e9 par de la cr\u00e8me fouett\u00e9e ou d\u2019ajouter une tranche de fromage de plus \u00e0 un sandwich grill\u00e9. Mme Waalkes se souvient d\u2019une r\u00e9sidente d\u2019un des endroits o\u00f9 elle a travaill\u00e9 qui adorait les godets de beurre d\u2019arachides. M\u00eame si elle ne recommanderait pas n\u00e9cessairement d\u2019employer cette strat\u00e9gie pour tout le monde, cet exemple permet de comprendre que la solution est parfois plus simple qu\u2019on ne le pense.<\/p>\n<p>\u00ab\u2009C\u2019est tout ce qu\u2019elle souhaitait manger.
