Beaucoup de clients entraient faire la file pour r\u00e9cup\u00e9rer leur commande \u00e0 emporter. La situation aurait rapidement pu d\u00e9g\u00e9n\u00e9rer, devenir chaotique et causer de la frustration chez plus d\u2019un client. Pourtant, la matriarche de la famille allait et venait entre la salle \u00e0 manger, le bar, la cuisine et m\u00eame la file \u00e0 l\u2019entr\u00e9e, veillant \u00e0 la bonne marche de tout le processus, comme un m\u00e9canisme parfaitement r\u00e9gl\u00e9.&nbsp;<\/p>\n<p dir=\"ltr\">J\u2019ai observ\u00e9 avec \u00e9tonnement huit personnes se diriger vers la sortie, puis trois commis arriver \u00e0 la table et s\u2019y activer comme une \u00e9quipe de ravitaillement de NASCAR. La table a \u00e9t\u00e9 nettoy\u00e9e et dress\u00e9e de nouveau, et le groupe suivant install\u00e9\u2026 en 40 secondes.<\/p>\n<p dir=\"ltr\">La porte s\u2019ouvrait et se refermait doucement, et le service \u00e9tait rapide et r\u00e9ellement chaleureux. Tout cela, sous la gouverne d\u2019une seule femme.&nbsp;<\/p>\n<p dir=\"ltr\">Que vous l\u2019appeliez capitaine, quart-arri\u00e8re ou comme bon vous semble, cette personne qui supervise la bonne marche de toutes les facettes du service est essentielle pour garantir \u00e0 votre client\u00e8le la meilleure exp\u00e9rience qui soit.<\/p>\n<p dir=\"ltr\">R\u00e9fl\u00e9chissez au \u00ab voyage \u00bb que vos clients se paient en visitant votre \u00e9tablissement. Entre le moment o\u00f9 ils entrent et celui o\u00f9 ils ressortent, ils passent par plusieurs \u00ab zones \u00bb : accueil, trajet jusqu\u2019\u00e0 la table, premier contact avec le serveur, prise de commande, r\u00e9ception des plats, paiement, remerciements, etc. Et tous ces points de contact ont un effet d\u00e9cisif. S\u2019ils sont parfaitement g\u00e9r\u00e9s, vos clients seront plus que satisfaits, reviendront et parleront de vous en bien \u00e0 leur entourage.<\/p>\n<p dir=\"ltr\">Quelqu\u2019un doit donc absolument avoir pour mission de s\u2019assurer que chaque \u00ab zone \u00bb est \u00e0 son maximum d\u2019efficacit\u00e9 et que le service y est parfait. &nbsp;<\/p>\n<p dir=\"ltr\">Dans le cas qui nous concerne, cette personne \u00e9tait une propri\u00e9taire efficace et consciencieuse. Toutefois, ce r\u00f4le est souvent assur\u00e9 par le g\u00e9rant, l\u2019h\u00f4te ou un serveur d\u00e9sign\u00e9. Mais, quel que soit son titre, cette personne doit avoir le respect et la confiance de tous. Ainsi, quand les choses commenceront \u00e0 d\u00e9railler, elle saura calmer les gens, prendre des d\u00e9cisions \u00e9clair\u00e9es et bien d\u00e9l\u00e9guer les t\u00e2ches pour remettre tout le monde sur la bonne voie. Cela permet aux employ\u00e9s de g\u00e9rer leurs quarts de travail, mais aussi de voir les messages que nous voulons leur transmettre ce jour-l\u00e0 : caract\u00e9ristiques du menu, promotions, r\u00e9servations ou tout autre \u00e9l\u00e9ment que nous jugeons pertinent. \u00bb &nbsp;<\/p>\n<p dir=\"ltr\">Quand les gens arrivent bien pr\u00e9par\u00e9s au travail, les rencontres de d\u00e9but de service sont moins longues et tout le monde peut se concentrer sur la satisfaction de la client\u00e8le.<\/p>\n<p dir=\"ltr\">M. Porat pr\u00e9cise aussi que l\u2019employ\u00e9 d\u00e9sign\u00e9 comme personne-ressource doit incarner la passion et la vision de l\u2019entreprise. \u00ab Il faut cr\u00e9er une atmosph\u00e8re familiale qui repose sur une attitude positive, peu importe la situation, conseille-t-il.
