Certains consid\u00e8rent qu\u2019il existe d\u00e9j\u00e0 une abondance d\u2019aliments et de breuvages sant\u00e9 au Canada. Technomic a r\u00e9cemment publi\u00e9 un rapport sur les tendances en mati\u00e8re d\u2019aliments sant\u00e9 r\u00e9v\u00e9lant que les consommateurs en redemandent. Cependant, leur attitude face \u00e0 la saine alimentation \u00e9volue.<\/p>\n<p>Au cours des derni\u00e8res ann\u00e9es, les op\u00e9rateurs et fournisseurs canadiens se sont adapt\u00e9s au grand int\u00e9r\u00eat des consommateurs pour les aliments sant\u00e9 en offrant des produits appropri\u00e9s. Effectivement, selon le Technomic\u2019s MenuMonitor, les menus des 250 principaux restaurants canadiens proposent 124% plus de plats sant\u00e9 depuis les quatre derni\u00e8res ann\u00e9es. Cette croissance est surtout attribuable aux options \u00ab sans gluten \u00bb, \u00ab v\u00e9g\u00e9tarien \u00bb, \u00ab sant\u00e9 \u00bb et \u00ab biologique \u00bb.<\/p>\n<h3>LES ALIMENTS SAINS<\/h3>\n<p>Au restaurant, on d\u00e9note davantage d\u2019ingr\u00e9dients \u00ab sains \u00bb au menu, lesquels sont un niveau au-dessus de \u00ab frais \u00bb ou \u00ab nature \u00bb. Les \u00e9dulcorants artificiels sont remplac\u00e9s par des sucres naturels. Les op\u00e9rateurs cr\u00e9ent des mets sans ingr\u00e9dients artificiels pour correspondre au d\u00e9sir des clients de consommer des aliments faits d\u2019ingr\u00e9dients \u00ab v\u00e9ritables \u00bb plut\u00f4t que d\u2019ingr\u00e9dients r\u00e9pondant aux all\u00e9gations traditionnelles telles \u00ab sans sucre \u00bb ou \u00ab sans gras \u00bb.<\/p>\n<p>Certaines cha\u00eenes insistent sur le fait que leurs produits naturels ne contiennent aucun additif artificiel, d\u2019autres cr\u00e9ent ou r\u00e9inventent des produits ne contenant aucun ingr\u00e9dient artificiel, ni hormones, ni antibiotiques. Voici des exemples d\u2019aliments sains faits d\u2019ingr\u00e9dients v\u00e9ritables que proposent quelques cha\u00eenes :<\/p>\n<ul>\n<li>A&amp;W Canada offre du b\u0153uf \u00e9lev\u00e9 sans hormones ni st\u00e9ro\u00efdes.<\/li>\n<li>Chez Liquid Nutrition, le Pure Smoothie est compos\u00e9 de jus de pomme, de betterave, de fraise et de banane, ainsi que de miel et de spiruline.<\/li>\n<li>Depuis l\u2019\u00e9t\u00e9 2014, 100% des filets de poisson chez McDonald\u2019s Canada sont faits \u00e0 partir de poisson provenant de la p\u00eache durable et certifi\u00e9 MSC (Marine Stewardship Council).<\/li>\n<\/ul>\n<p>De nombreux op\u00e9rateurs et fabricants adoptent la tendance en mati\u00e8re d\u2019aliments sains, fort probablement parce que les ingr\u00e9dients sains peuvent contribuer \u00e0 une augmentation des ventes et des additions. Effectivement, un rapport sur les tendances des consommateurs effectu\u00e9 par Technomic\u2019s d\u00e9montre que, comparativement aux autres all\u00e9gations \u00e9valu\u00e9es, les consommateurs sont davantage port\u00e9s \u00e0 acheter et \u00e0 payer plus pour un produit sans hormones, sans agents de conservation et sans antibiotiques.<\/p>\n<h3>BON POUR LA SANT\u00c9: D\u00c9FINITIONS ET GO\u00dbT<\/h3>\n<p>Op\u00e9rateurs et fabricants trouvent des fa\u00e7ons de r\u00e9pondre \u00e0 la demande en mati\u00e8re d\u2019aliments sains, mais il est important de savoir que la sant\u00e9 peut avoir diverses d\u00e9finitions. Selon des \u00e9tudes r\u00e9centes, certains consid\u00e8rent que la sant\u00e9 est li\u00e9e \u00e0 l\u2019alimentation, et pour d\u2019autres \u00e0 la provenance des aliments.<\/p>\n<p>Comprendre comment la client\u00e8le per\u00e7oit la sant\u00e9 peut contribuer \u00e0 cibler les options possibles pour le menu et\/ou le d\u00e9veloppement de produits.
