On peut maintenant se procurer des pains, des c\u00e9r\u00e9ales et des barres tendres aux grains anciens maintenant que cette appellation a gagn\u00e9 en popularit\u00e9. Est-ce uniquement une mode ou peut-on r\u00e9ellement introduire cette tendance dans notre \u00e9tablissement et voir nos clients en retirer certains b\u00e9n\u00e9fices au niveau de leur sant\u00e9?<\/p>\n<h3>Qu\u2019est ce qu\u2019on entend par grains anciens?<\/h3>\n<p>L\u2019appellation sous-entend que ces grains  sont plant\u00e9s et cultiv\u00e9s depuis des milliers d'ann\u00e9es.  Les grains anciens comprennent :&nbsp;<\/p>\n<ul>\n<li>L\u2019amarante<\/li>\n<li>L\u2019orge&nbsp;<\/li>\n<li>Le sarrasin<\/li>\n<li>Le kamut<\/li>\n<li>L\u2019\u00e9peautre<\/li>\n<li>Le millet<\/li>\n<li>Le sorgho<\/li>\n<li>Le teff<\/li>\n<li>Le quinoa<\/li>\n<\/ul>\n<p>Voici une br\u00e8ve description de chaque type de c\u00e9r\u00e9ales et des avantages qu\u2019ils peuvent apporter \u00e0 vos clients.&nbsp;<\/p>\n<p><strong>L\u2019amarante<\/strong> est une plante herbac\u00e9e dont les graines sont comestibles. Cette c\u00e9r\u00e9ale au go\u00fbt l\u00e9g\u00e8rement \u00e9pic\u00e9 ne contient pas de gluten. Sa farine peut \u00eatre utilis\u00e9e pour pr\u00e9parer des biscuits, des cr\u00eapes ou des gaufres. Les prot\u00e9ines de l\u2019amarante sont plus \u00e9quilibr\u00e9es que les autres c\u00e9r\u00e9ales, c\u2019est-\u00e0-dire qu\u2019elles sont plus compl\u00e8tes.&nbsp;<\/p>\n<p><strong>L\u2019orge <\/strong>est la toute premi\u00e8re c\u00e9r\u00e9ale cultiv\u00e9e dans les d\u00e9buts de l\u2019agriculture. Elle est connue de tous mais souvent peu utilis\u00e9e \u00e0 l\u2019exception de la tr\u00e8s populaire \u2018\u2019soupe au barley\u2018\u2019. Pourtant elle fait un excellent plat d\u2019accompagnement! L\u2019orge est une excellente source de fibres solubles et de fa\u00e7on g\u00e9n\u00e9rale une source \u00e9lev\u00e9e de fibres.&nbsp;<\/p>\n<p><strong>Le sarrasin<\/strong> est le fruit d\u2019une plante apparent\u00e9e \u00e0 la rhubarbe. Plus sa farine est fonc\u00e9e plus elle contient de nutriments. La galette de sarrasin est un incontournable souvent tr\u00e8s appr\u00e9ci\u00e9 de la client\u00e8le! Les grains de sarrasins cuits sont une bonne source de fer.&nbsp;<\/p>\n<p><strong>Le kamut <\/strong>et <strong>spelt<\/strong> sont deux vari\u00e9t\u00e9s de bl\u00e9 cultiv\u00e9es anciennement. Leur valeur nutritive est semblable \u00e0 celle du bl\u00e9. Elles forment des pains color\u00e9s et go\u00fbteux qui sont tr\u00e8s recherch\u00e9s de la client\u00e8le.&nbsp;<\/p>\n<p><strong>Le millet <\/strong>est une plante gramin\u00e9e qui comprend dans sa famille le <strong>sorghum<\/strong> et<strong> teff<\/strong>. Les trois sont d\u00e9pourvus de gluten et ont un go\u00fbt plut\u00f4t prononc\u00e9 qui n\u2019est pas toujours appr\u00e9ci\u00e9 de tous. Le millet est une bonne source de magn\u00e9sium et la qualit\u00e9 de ses prot\u00e9ines est sup\u00e9rieure \u00e0 celle du bl\u00e9.&nbsp;<\/p>\n<p><strong>Le quinoa<\/strong> est une plante originaire d\u2019Am\u00e9rique du sud qui est devenue tr\u00e8s populaire au Canada. \u00c9galement sans gluten, ce dernier est utilis\u00e9 maintenant comme accompagnement, dans le pain, dans les muffins, dans les potages. C\u00f4t\u00e9 valeur nutritive, le quinoa est une excellente source de magn\u00e9sium, de fer et de potassium. Il contient \u00e9galement plus de prot\u00e9ines que la plupart des c\u00e9r\u00e9ales.&nbsp;<\/p>\n<h3>Mon avis de nutritionniste sur les grains anciens:<\/h3>\n<p>Malgr\u00e9 l\u2019aspect nouveau qu\u2019on essaie de leur attribuer, on n\u2019a pas r\u00e9invent\u00e9 la roue avec les grains anciens: ce sont en fait des grains entiers. Bien \u00e9vident qu\u2019ils soient meilleurs pour la sant\u00e9 que les c\u00e9r\u00e9ales raffin\u00e9es; ils contiennent davantage de fibres, de vitamines et de min\u00e9raux, comme toutes les c\u00e9r\u00e9ales \u00e0 grains entiers.&nbsp;<\/p>\n<p>M\u00eame si je suis d\u2019avis qu\u2019il ne s\u2019agit pas de la d\u00e9couverte du si\u00e8cle en mati\u00e8re de sant\u00e9 et de nutrition, je crois que leur utilisation m\u00e9rite d\u2019\u00eatre consid\u00e9r\u00e9e dans votre \u00e9tablissement afin d\u2019augmenter la vari\u00e9t\u00e9 de vos plats en termes de saveur et de couleur. De plus, les grains anciens permettront d\u2019augmenter la teneur en fibres de vos mets! Soyez cr\u00e9atifs!
