En effet, les r\u00e9actions allergiques aux aliments peuvent survenir brusquement et \u00eatre tr\u00e8s graves. Selon Sant\u00e9 Canada, environ 2,5 millions de Canadiens, soit pr\u00e8s de 7 % de la population, d\u00e9clarent avoir une allergie alimentaire. En outre, les r\u00e9sultats d\u2019une r\u00e9cente \u00e9tude portent \u00e0 croire que 5 \u00e0 10 % des a\u00een\u00e9s en sont atteints. En fait, les allergies peuvent appara\u00eetre \u00e0 tout \u00e2ge et touchent les enfants et les adultes, toutes origines confondues. Chez certains enfants, l\u2019intol\u00e9rance au lactose et les allergies au soya et aux \u0153ufs disparaissent au bout de quelques ann\u00e9es, mais celles aux arachides, aux noix et aux fruits de mer ont g\u00e9n\u00e9ralement tendance \u00e0 perdurer \u00e0 l\u2019\u00e2ge adulte. Comme il a \u00e9t\u00e9 d\u00e9montr\u00e9 que les allergies peuvent m\u00eame appara\u00eetre chez les personnes \u00e2g\u00e9es, vous devez \u00eatre vigilant.<\/p>\n<h2>Qu\u2019est-ce qu\u2019une allergie alimentaire?<\/h2>\n<p>L\u2019allergie alimentaire est une r\u00e9action disproportionn\u00e9e \u00e0 un aliment qui est d\u00e9clench\u00e9e par le syst\u00e8me immunitaire. Ce dernier, dont le r\u00f4le consiste normalement \u00e0 nous prot\u00e9ger des maladies, prend, \u00e0 tort, une prot\u00e9ine inoffensive pour un envahisseur et l\u2019attaque. Cette prot\u00e9ine devient alors un allerg\u00e8ne pour la personne. Lorsque l\u2019aliment contenant la prot\u00e9ine en question est consomm\u00e9 de nouveau, une r\u00e9action immunitaire se manifestant par divers sympt\u00f4mes est d\u00e9clench\u00e9e. En effet, la r\u00e9action allergique peut prendre de nombreuses formes, et elle peut varier de l\u00e9g\u00e8re \u00e0 grave. Parmi les sympt\u00f4mes possibles, notons les douleurs \u00e0 l\u2019estomac, la diarrh\u00e9e, la naus\u00e9e, les vomissements ou les difficult\u00e9s respiratoires. En outre, il est important de garder \u00e0 l\u2019esprit que les sympt\u00f4mes peuvent diff\u00e9rer d\u2019une personne \u00e0 l\u2019autre, mais aussi varier, chez une m\u00eame personne, d\u2019une r\u00e9action \u00e0 l\u2019autre. Enfin, la plupart des r\u00e9actions allergiques surviennent dans les minutes suivant l\u2019exposition \u00e0 l\u2019allerg\u00e8ne et m\u00eame une quantit\u00e9 infime d\u2019un aliment peut suffire \u00e0 provoquer une r\u00e9action allergique.&nbsp;<\/p>\n<h3>Allerg\u00e8nes les plus communs<\/h3>\n<p>Sant\u00e9 Canada a \u00e9tabli une liste des 10 cat\u00e9gories d\u2019aliments les plus susceptibles de causer une r\u00e9action allergique chez les Canadiens. Ces aliments, que l\u2019on d\u00e9signe souvent comme les \u00ab dix allerg\u00e8nes alimentaires prioritaires \u00bb, sont : les arachides, les noix, le lait, les \u0153ufs, le soya, le bl\u00e9, le s\u00e9same, la moutarde, les sulfites et les fruits de mer (poisson, crustac\u00e9s et mollusques). Cependant, m\u00eame si ces aliments causent 90 % des r\u00e9actions allergiques, il faut savoir que cette liste n\u2019est pas exhaustive. En fait, n\u2019importe quel aliment peut d\u00e9clencher une r\u00e9action allergique. De plus, il n\u2019existe aucun traitement pour gu\u00e9rir les allergies alimentaires. La meilleure fa\u00e7on d\u2019\u00e9viter les r\u00e9actions allergiques consiste \u00e0 \u00e9viter l\u2019allerg\u00e8ne qui les cause. Ainsi, le d\u00e9pistage pr\u00e9coce et la gestion rapide sont fondamentaux pour veiller \u00e0 la s\u00e9curit\u00e9 des r\u00e9sidents ayant des allergies alimentaires.<\/p>\n<h3>Voici quelques strat\u00e9gies visant \u00e0 faciliter la gestion des allergies alimentaires dans votre \u00e9tablissement:<\/h3>\n<ul style=\"list-style-type:circle;\">\n<li>Avant d\u2019\u00e9laborer un menu, il est important de d\u00e9finir pr\u00e9cis\u00e9ment chacun des r\u00e9gimes th\u00e9rapeutiques offerts dans votre \u00e9tablissement. Par exemple, offrirez-vous un menu sans gluten ou faible en gluten? Ensuite, il faut veiller \u00e0 communiquer l\u2019information au personnel, aux r\u00e9sidents et aux r\u00e9sidents potentiels ainsi qu\u2019aux familles afin de r\u00e9duire au maximum les risques.<\/li>\n<li>Vous pouvez aussi aider votre personnel \u00e0 mieux comprendre les allergies alimentaires en offrant des formations sur l\u2019innocuit\u00e9 des aliments. Ces formations permettent notamment d\u2019apprendre ou de r\u00e9viser comment lire les \u00e9tiquettes sur les produits, y compris les renseignements concernant les allerg\u00e8nes.<\/li>\n<li>Une autre mani\u00e8re de pr\u00e9venir les r\u00e9actions allergiques consiste \u00e0 \u00e9viter que des allerg\u00e8nes entrent accidentellement en contact avec d\u2019autres aliments par le biais de la contamination crois\u00e9e.
