Les \u201cmauvaises graisses\u201d ne sont peut-\u00eatre pas aussi nocives qu'on le pensait. Les chercheurs dans le domaine de la nutrition s'accordent \u00e0 dire que les graisses satur\u00e9es augmentent le taux de LDL (lipoprot\u00e9ines de faible densit\u00e9) dans le sang, c'est-\u00e0-dire le \u201cmauvais cholest\u00e9rol\u201d. Cependant, l'augmentation du taux de LDL n'est peut-\u00eatre pas le seul facteur important \u00e0 prendre en compte. D'autres param\u00e8tres doivent \u00e9galement \u00eatre analys\u00e9s lorsqu'il s'agit d'\u00e9tudier l'impact sur les risques de maladies coronariennes. Il est \u00e9galement important de savoir que les graisses satur\u00e9es augmentent \u00e9galement les niveaux de HDL (lipoprot\u00e9ines de haute densit\u00e9) dans le sang, c'est-\u00e0-dire le \u201cbon cholest\u00e9rol\u201d. Le message qui est de plus en plus v\u00e9hicul\u00e9 est qu'il faut consid\u00e9rer l'alimentation dans sa globalit\u00e9 et non pas seulement un de ses \u00e9l\u00e9ments.<\/div>\n<div>&nbsp;<\/div>\n<div>\n<div>Depuis 2010, la recherche sugg\u00e8re que les graisses satur\u00e9es ne sont plus les premi\u00e8res responsables. Une m\u00e9ta-analyse (\u00e9tude qui combine les r\u00e9sultats de plusieurs \u00e9tudes ind\u00e9pendantes) n'a montr\u00e9 aucun lien entre la consommation de graisses satur\u00e9es et le risque de maladie coronarienne. Plus r\u00e9cemment, une \u00e9tude publi\u00e9e en 2014 montre que les acides gras satur\u00e9s pr\u00e9sents dans les produits laitiers r\u00e9duisent le risque de maladies coronariennes.<\/div>\n<div>&nbsp;<\/div>\n<div>\n<div>Comment cela est-il possible ? Avec la publication de telles \u00e9tudes, on peut penser que les acides gras satur\u00e9s ne seront plus les m\u00e9chants. Les experts en nutrition vont m\u00eame jusqu'\u00e0 dire que l'huile de coco, le beurre de cacao et l'huile de cam\u00e9line seront des mati\u00e8res grasses tr\u00e8s tendance cette ann\u00e9e.<\/div>\n<div>&nbsp;<\/div>\n<div>\n<div>Cela signifie-t-il que nous devons ajouter \u00e0 notre menu des aliments riches en graisses satur\u00e9es ? Je ne le crois pas. D'autres recherches doivent \u00eatre men\u00e9es pour confirmer ces r\u00e9sultats concernant les acides gras. Je pense que nous devons proposer des aliments vari\u00e9s, savoureux et nutritifs, quelles que soient les tendances actuelles de l'industrie alimentaire et quel que soit le type de client\u00e8le.
