La notion d\u2019\u00e9tiquetage nutritionnel fait r\u00e9f\u00e9rence \u00e0 toute l\u2019information se trouvant sur les \u00e9tiquettes des aliments pr\u00e9emball\u00e9s, ce qui comprend : le tableau de la valeur nutritive et la liste des ingr\u00e9dients, lesquels sont obligatoires, de m\u00eame que les all\u00e9gations de sant\u00e9 facultatives. Ces renseignements sont d\u2019une grande valeur et, depuis 2005, sont obligatoires pour tous les aliments pr\u00e9emball\u00e9s. M\u00eame s\u2019il n\u2019est pas toujours \u00e9vident de d\u00e9chiffrer l\u2019information, une fois que vous savez comment le faire, vous \u00eates alors en mesure de choisir des aliments sains, ou du moins, d\u2019avoir une id\u00e9e de ce que vous achetez. Il est cependant \u00e0 noter que tous les aliments ne doivent pas \u00eatre accompagn\u00e9s d\u2019un tableau de la valeur nutritive.<\/p>\n<h3>Les aliments suivants n\u2019en ont pas besoin :<\/h3>\n<ul>\n<li>Fruits et l\u00e9gumes frais<\/li>\n<li>Viande et volaille crues (sauf si elle est hach\u00e9e)<\/li>\n<li>Poisson et fruits de mer frais<\/li>\n<li>Aliments pr\u00e9par\u00e9s ou transform\u00e9s sur place (produits de boulangerie, salades, etc.)<\/li>\n<li>Aliments contenant tr\u00e8s peu de nutriments comme le caf\u00e9, le th\u00e9, les herbes et les \u00e9pices<\/li>\n<li>Boissons alcoolis\u00e9es<\/li>\n<\/ul>\n<p>Comme le tableau de la valeur nutritive a la m\u00eame apparence sur la plupart des aliments, il est facile \u00e0 trouver et \u00e0 lire. Toutefois, tous les renseignements qui s\u2019y trouvent sont d\u00e9termin\u00e9s en fonction d\u2019une quantit\u00e9 donn\u00e9e du produit, laquelle est toujours inscrite dans la partie sup\u00e9rieure du tableau. C\u2019est le premier \u00e9l\u00e9ment \u00e0 consulter, puisqu\u2019il permet de savoir \u00e0 quelle quantit\u00e9 de nourriture les renseignements fournis correspondent. \u00c0 moins que le paquet ne contienne qu\u2019une portion, comme dans le cas des repas \u00e0 r\u00e9chauffer au micro-ondes, les renseignements du tableau sont rarement repr\u00e9sentatifs de la totalit\u00e9 du paquet. Par exemple, sur une bo\u00eete de biscuits aux brisures de chocolat, les renseignements correspondent \u00e0 ce que le fabricant consid\u00e8re comme une portion, c\u2019est-\u00e0-dire peut-\u00eatre deux biscuits. De plus, il faut savoir que la taille des portions, m\u00eame pour les cat\u00e9gories pr\u00e9cises d\u2019aliments (p. ex. les biscuits), n\u2019est pas n\u00e9cessairement \u00e9quivalente d\u2019un produit \u00e0 l\u2019autre. Ainsi, sur une bo\u00eete de biscuits, une portion peut correspondre \u00e0 deux biscuits alors que sur une autre elle sera plut\u00f4t de trois. Il importe de garder cet aspect en t\u00eate lorsqu\u2019on tente de comparer la valeur nutritive de deux produits semblables, ce qui ne s\u2019av\u00e8re pas toujours simple.&nbsp;<\/p>\n<h3>Les treize principaux nutriments pr\u00e9sent\u00e9s dans le tableau sont:<\/h3>\n<ul>\n<li>les lipides<\/li>\n<li>les gras satur\u00e9s<\/li>\n<li>les gras trans<\/li>\n<li>le cholest\u00e9rol<\/li>\n<li>le sodium<\/li>\n<li>les glucides<\/li>\n<li>les fibres<\/li>\n<li>les sucres<\/li>\n<li>les prot\u00e9ines<\/li>\n<li>vitamine A<\/li>\n<li>vitamine C<\/li>\n<li>le calcium<\/li>\n<li>le fer<\/li>\n<\/ul>\n<p>La mention d\u2019autres nutriments comme le potassium ou les om\u00e9ga-3 est facultative, \u00e0 moins que l\u2019\u00e9tiquette ne comporte une all\u00e9gation de sant\u00e9 \u00e0 ce sujet, auquel cas le nutriment en question doit appara\u00eetre dans le tableau. Il est aussi \u00e0 noter que les fibres et les sucres sont des types de glucides et qu\u2019ils sont donc inclus dans la quantit\u00e9 totale de glucides. Il en va de m\u00eame des gras satur\u00e9s et des gras trans, qui sont compris dans le total des lipides.<\/p>\n<p>Savez-vous que ce que signifient les pourcentages apparaissant du c\u00f4t\u00e9 droit du tableau? Ils correspondent au pourcentage de l\u2019apport recommand\u00e9 chaque jour pour une personne qui consomme environ 2 000 calories. Or, si vous \u00eates tr\u00e8s petit ou tr\u00e8s costaud, votre consommation de calories est sans doute diff\u00e9rente, et les pourcentages ne sont donc pas adapt\u00e9s \u00e0 votre situation. Par ailleurs, lorsqu\u2019aucun pourcentage n\u2019est indiqu\u00e9, c\u2019est simplement qu\u2019on ne recommande pas de consommer chaque jour une quantit\u00e9 pr\u00e9cise de ce nutriment. Enfin, dans le cas du sodium, le pourcentage correspond \u00e0 la consommation quotidienne maximale, qui est de 2 400 mg, et non \u00e0 la quantit\u00e9 que vous devriez consommer.<\/p>\n<p>Maintenant que vous en savez un peu plus sur la fa\u00e7on de lire un tableau de la valeur nutritive, vous serez en mesure de mieux choisir les produits que vous achetez.
