La maladie c\u0153liaque est reconnue mondialement comme \u00e9tant la maladie chronique la plus courante. Elle affecte 1% de la population mondiale. Au Canada, on estime qu\u2019un canadien sur 133 a cette maladie. Le nombre de personnes recevant ce diagnostic est en croissance en raison du fait que nous sommes de plus en plus sensibilis\u00e9s \u00e0 cette maladie (Sant\u00e9 Canada, 2015).  La maladie C\u0153liaque est une maladie auto-immune causant l\u2019inflammation des villosit\u00e9s intestinales lorsque du gluten est consomm\u00e9. L\u2019ingestion de gluten provoque alors une r\u00e9action non-d\u00e9sir\u00e9e du syst\u00e8me immunitaire causant des dommages cellulaires et de l\u2019inflammation chronique au niveau intestinal. Si, malgr\u00e9 son diagnostic, une personne atteinte de la maladie continue d\u2019ing\u00e9rer des aliments contenant du gluten, les dommages cellulaires deviennent tels qu\u2019il en r\u00e9sulte une malabsorption des nutriments. \u00c0 plus long terme, les cons\u00e9quences de la maladie sont des douleurs abdominales, de la diarrh\u00e9e, une perte de poids et de l\u2019an\u00e9mie. L\u2019alimentation sans gluten \u00e0 vie est le seul rem\u00e8de existant pour cette maladie.&nbsp;<\/p>\n<h2>Qu\u2019est-ce que le gluten?<\/h2>\n<p>Le gluten est une prot\u00e9ine que l\u2019on retrouve principalement dans ces grains et leurs d\u00e9riv\u00e9s: seigle, avoine, bl\u00e9, orge, triticale. Le gluten est la substance responsable de la structure et de l\u2019\u00e9lasticit\u00e9 d\u2019une p\u00e2te. Selon Sant\u00e9 Canada, seuls les aliments sans gluten transform\u00e9s ou dont la composition a \u00e9t\u00e9 d\u00e9termin\u00e9e dans le but particulier de combler les besoins des personnes atteintes de la maladie c\u0153liaque sont consid\u00e9r\u00e9s \u00e0 titre d'aliments \u00e0 usage di\u00e9t\u00e9tique sp\u00e9cial, et l\u2019all\u00e9gation sans gluten peut figurer en toute l\u00e9gitimit\u00e9 sur leur \u00e9tiquetage. Pour obtenir l\u2019all\u00e9gation \u2018\u2019sans gluten\u2019\u2019 un aliment  doit contenir une concentration de gluten  inf\u00e9rieure \u00e0 20 ppm (partie par millions). Cette concentration a \u00e9t\u00e9 jug\u00e9e s\u00e9curitaire pour les personnes atteintes de la maladie de c\u0153liaque. Plusieurs types de grains sont aussi naturellement s\u00e9curitaires pour les personnes atteintes de la maladie : le riz, l\u2019amarante, le ma\u00efs, le quinoa et les farines \u00e0 base de l\u00e9gumineuses sont sans gluten. Pour une liste compl\u00e8te d\u2019aliments sans gluten, visiter le site internet de l\u2019Association Canadienne de la maladie c\u0153liaque. http:\/\/www.celiac.ca\/?lang=fr\/<\/p>\n<h3>Comment d\u00e9tecter la pr\u00e9sence de gluten dans un aliment<\/h3>\n<p>Sant\u00e9 Canada a identifi\u00e9 10 cat\u00e9gories d\u2019aliments causant la majorit\u00e9 des allergies alimentaires au Canada, appel\u00e9s allerg\u00e8nes prioritaires. L\u2019\u00e9tiquette des aliments pr\u00e9-emball\u00e9s contenant un de ces dix allerg\u00e8nes doit mentionner l\u2019allerg\u00e8ne en question. De plus, chaque fournisseur se doit maintenant de d\u00e9clarer la pr\u00e9sence de gluten en plus des dix allerg\u00e8nes prioritaires. Pour faciliter la d\u00e9tection des allerg\u00e8nes ou du gluten, Sant\u00e9 Canada a requis que cette information apparaissent  sur l\u2019emballage de chaque produit soit dans la liste des ingr\u00e9dients ou soit dans une mention \u2018\u2019contient\u2026\u2019\u2019. Le gluten peut se retrouver dans plusieurs d\u00e9riv\u00e9s des grains mentionn\u00e9s plus haut; lire l\u2019\u00e9tiquette devient alors primordial pour le consommateur souffrant de la maladie c\u0153liaque. \u00c0 noter que les personnes atteintes de la maladie peuvent consommer sans probl\u00e8mes les aliments naturellement sans-gluten suivants : fruits et l\u00e9gumes frais, lait, fromage, yogourt, l\u00e9gumineuses, \u0153ufs, noix, huile, beurre et margarine.<\/p>\n<h3>Les d\u00e9fis d\u2019un service alimentaire sans gluten<\/h3>\n<p>Dans un service alimentaire, le d\u00e9fi consiste \u00e0 g\u00e9rer ad\u00e9quatement la production d\u2019un repas sans-gluten. Il est important, lorsqu\u2019un consommateur poss\u00e8de des restrictions alimentaires aussi strictes, d\u2019\u00e9viter la contamination crois\u00e9e. Celle-ci survient lorsqu\u2019un aliment est mis en contact avec un autre  ou lorsqu\u2019un \u00e9quipement ou une partie du contaminant est mis en contact avec l\u2019aliment. \u00c9liminer le risque de contamination crois\u00e9e est tr\u00e8s important pour la s\u00e9curit\u00e9 du consommateur.<\/p>\n<h3>\u00c9tapes pour \u00e9viter la contamination crois\u00e9e du gluten<\/h3>\n<ul>\n<li style=\"margin-left: 0.5in;\">Pr\u00e9parer les aliments sans gluten dans un endroit diff\u00e9rent.<\/li>\n<li style=\"margin-left: 0.5in;\">Minimiser l\u2019utilisation des ventilateurs durant la cuisson des aliments car les farines volatiles peuvent causer la contamination crois\u00e9e.<\/li>\n<li style=\"margin-left: 0.5in;\">Couvrir les contenants de nourriture.<\/li>\n<li style=\"margin-left: 0.5in;\">Utiliser des ustensiles, de la vaisselle et des surfaces de travail exclusifs \u00e0 la pr\u00e9paration des aliments sans gluten.<\/li>\n<li style=\"margin-left: 0.5in;\">Nettoyer et d\u00e9sinfecter chaque surface de travail.<\/li>\n<li style=\"margin-left: 0.5in;\">Porter des gants et des v\u00eatements propres.<\/li>\n<li style=\"margin-left: 0.5in;\">Wear clean clothing.
