En 2013, la NNB (New Nutrition Business) d\u00e9clarait la naturalit\u00e9 comme \u00e9tant la tendance pr\u00e9dominante. Comment peut-on int\u00e9grer cette tendance dans un service alimentaire? Encore faut-il comprendre en quoi consiste la naturalit\u00e9. La FDA (Food and Drug Association) ne poss\u00e8de pas de d\u00e9finition officielle pour cette tendance. L\u2019institut sur la nutrition et les aliments fonctionnels (INAF) parle de celle-ci comme d\u2019une opportunit\u00e9 de croissance sur laquelle une compagnie peut miser pour accaparer des volumes, des ventes additionnelles et de la profitabilit\u00e9 en innovant et en adoptant une position comp\u00e9titive de strat\u00e9gie de march\u00e9.  Le clean label n\u2019est donc pas n\u00e9cessairement un bienfait d\u00e9montr\u00e9 scientifiquement,  mais bien d\u2019une opportunit\u00e9 marketing pour les manufacturiers. Selon l\u2019INAF, le clean label est la strat\u00e9gie marketing qui se cache derni\u00e8re le succ\u00e8s du yogourt grec, de l\u2019eau de coco, des pistaches et des amandes.<span> <\/span><\/p>\n<h2 dir=\"ltr\">Les besoins des clients<\/h2>\n<p dir=\"ltr\">Selon la revue Canadian Grocer, les consommateurs recherchent \u00e0 travers cette tendance des aliments sans colorants artificiels, sans additifs alimentaires, sans OGM ainsi que des aliments biologiques. Les consommateurs veulent une liste d\u2019ingr\u00e9dients la plus \u00e9pur\u00e9e possible. Toutefois, Sant\u00e9 Canada poss\u00e8de une liste exhaustive d\u2019additifs alimentaires autoris\u00e9es comprenant des colorants, des agents \u00e9mulsifiants, des enzymes, des agents ch\u00e9lateurs, des \u00e9dulcorants et bien d\u2019autres. Ainsi,  les additifs alimentaires sont pr\u00e9sents dans plusieurs produits. Obtenir une liste d\u2019ingr\u00e9dients \u00e9pur\u00e9e devient donc un objectif ardu pour les manufacturiers.<\/p>\n<p dir=\"ltr\">Avant d\u2019adopter cette tendance, en tant que nutritionniste,  je vous sugg\u00e8re de d\u00e9buter par la lecture de la liste des ingr\u00e9dients lorsque vous choisissez un nouveau produit. Deux principes de base doivent \u00eatre respect\u00e9s pour faire un choix \u00e9clair\u00e9. Le premier est d\u2019opter pour un produit ayant une liste d\u2019ingr\u00e9dients la plus courte possible et le deuxi\u00e8me est de porter attention aux trois premiers ingr\u00e9dients de cette liste. En ordre d\u00e9croissant de poids, les premiers ingr\u00e9dients qui figurent dans la liste sont ceux pr\u00e9sents en plus grande quantit\u00e9 dans le produit. Ainsi, si vous voyez le mot \u2018\u2019sucre\u2019\u2019 en tout premier lieu, celui-ci est l\u2019ingr\u00e9dient principal se retrouvant dans votre produit.<span> <\/span><\/p>\n<h3 dir=\"ltr\">Trouver l'\u00e9quilibre<\/h3>\n<p dir=\"ltr\">Je ne suis pas contre la tendance de la naturalit\u00e9. Cependant, je crois qu\u2019il est possible qu\u2019une saine alimentation inclue des produits qui poss\u00e8dent des additifs alimentaires et des agents de conservation.   Ainsi, je ne vous sugg\u00e8re pas d\u2019opter pour un menu 100% \u00ab clean label \u00bb dans votre service alimentaire. Apr\u00e8s tout, d\u2019autres facteurs sont importants \u00e0 consid\u00e9rer comme le co\u00fbt de l\u2019aliment, sa dur\u00e9e de conservation et ses qualit\u00e9s organoleptiques.
