On a cependant constat\u00e9 dans les derni\u00e8res ann\u00e9es une augmentation du nombre de personnes sensibles ou intol\u00e9rantes au gluten, une prot\u00e9ine pr\u00e9sente dans le bl\u00e9, le seigle et l\u2019orge.\n\nOn a donc assist\u00e9 \u00e0 l\u2019arriv\u00e9e en force de grains ne contenant pas de gluten dans notre di\u00e8te quotidienne, puisque, en plus des personnes intol\u00e9rantes, beaucoup de gens choisissent aussi de limiter leur consommation de bl\u00e9. Et comme les produits sans gluten sont tr\u00e8s populaires et que cette tendance ne semble pas pr\u00eate de s\u2019essouffler, de nouveaux produits de services alimentaires sans gluten apparaissent constamment sur le march\u00e9.<\/p>\n<h2>Valeur nutritive des grains anciens<\/h2>\n<p>Les consommateurs veulent de la vari\u00e9t\u00e9 et de la saveur, mais surtout, des f\u00e9culents de rechange sains. Les c\u00e9r\u00e9ales jadis communes pour remplacer celles contenant du gluten, par exemple, le riz, l\u2019avoine non contamin\u00e9e et le ma\u00efs partagent maintenant la vedette avec des \u00ab super grains \u00bb comme le quinoa, l\u2019amarante, le millet, le sorgho et le teff. Souvent appel\u00e9s grains anciens, ces grains, utilis\u00e9s dans certaines parties du monde depuis des si\u00e8cles, sont actuellement tr\u00e8s \u00e0 la mode non seulement parce qu\u2019ils sont sans gluten, mais aussi parce qu\u2019ils ont une valeur nutritive exceptionnelle et qu\u2019on leur pr\u00eate de nombreux bienfaits pour la sant\u00e9.<\/p>\n<h3>Grains entiers<\/h3>\n<p>Les grains entiers sont de bonnes sources de vitamines du complexe B (thiamine, riboflavine, niacine, acide folique, etc.), lesquelles jouent un r\u00f4le important dans le m\u00e9tabolisme cellulaire et la production de globules rouges. On entend par grain entier un grain dont toutes les parties ont \u00e9t\u00e9 conserv\u00e9es, c\u2019est-\u00e0-dire le son, le germe et l\u2019endosperme. Si le grain est transform\u00e9, le produit qui en r\u00e9sulte doit contenir les m\u00eames nutriments en proportion semblable \u00e0 celle du grain original.<\/p>\n<h3>L\u2019amarante<\/h3>\n<p>L\u2019amarante contient de la lysine, un acide amin\u00e9 essentiel qui joue un r\u00f4le majeur dans l\u2019absorption du calcium de m\u00eame que la formation des muscles et qui contribue \u00e0 la production d\u2019hormones et d\u2019anticorps.<\/p>\n<h3>Le teff<\/h3>\n<p>Le teff est un grain sans gluten \u00e0 la saveur subtile dont la couleur varie. Il est tr\u00e8s nutritif et contient beaucoup de prot\u00e9ines, de calcium et de fer. Moulu, il est principalement utilis\u00e9 comme solution de rechange \u00e0 la farine de bl\u00e9 dans les produits de boulangerie, mais il peut aussi servir \u00e0 \u00e9paissir notamment les sauces et les rago\u00fbts.<\/p>\n<h3>Le quinoa<\/h3>\n<p>La valeur nutritive du quinoa en fait la vedette des grains sans gluten et des grains anciens, probablement en raison de sa polyvalence et de son go\u00fbt g\u00e9n\u00e9ralement appr\u00e9ci\u00e9.<\/p>\n<p>Ce super grain se d\u00e9marque vraiment des autres, car il est une prot\u00e9ine compl\u00e8te, c\u2019est-\u00e0-dire qu\u2019il contient les neuf acides amin\u00e9s essentiels en proportion ad\u00e9quate. \u00c9tant donn\u00e9 que les prot\u00e9ines compl\u00e8tes ne se trouvent g\u00e9n\u00e9ralement que dans les aliments d\u2019origine animale, le quinoa est un aliment indispensable de la di\u00e8te v\u00e9g\u00e9tarienne ou v\u00e9g\u00e9talienne. Enfin, il est riche en mangan\u00e8se, en magn\u00e9sium, en fer, en cuivre, en phosphore et en divers autres nutriments, en plus d\u2019\u00eatre une excellente source de fibres.<\/p>\n<p>De plus en plus offert dans les restaurants, le quinoa est souvent utilis\u00e9 en remplacement du riz dans les salades et les plats divers, mais il peut aussi \u00eatre servi comme c\u00e9r\u00e9ale chaude au d\u00e9jeuner ou utilis\u00e9 comme panure pour la viande.<\/p>\n<h3>S\u00e9curit\u00e9 alimentaire<\/h3>\n<p>Quand on pr\u00e9pare et qu\u2019on sert un aliment sans gluten, il est essentiel de respecter les r\u00e8gles en mati\u00e8re de s\u00e9curit\u00e9 alimentaire, particuli\u00e8rement celles associ\u00e9es \u00e0 la contamination crois\u00e9e. Ainsi, il faut toujours utiliser des ustensiles de pr\u00e9paration et de service distincts. Lorsque c\u2019est possible, on peut aussi pr\u00e9parer les plats sans gluten \u00e0 un endroit diff\u00e9rent des autres pour veiller \u00e0 ce que le produit demeure sans gluten. Par exemple, le simple fait d\u2019utiliser le m\u00eame grille-pain pour tous les produits peut mener \u00e0 une r\u00e9action d\u2019intol\u00e9rance.
