L\u2019innovation industrielle nous permet de nourrir plus de gens que jamais. Ces avanc\u00e9es technologiques permettent aussi aux consommateurs d\u2019obtenir des renseignements \u00e0 propos de l\u2019impact de leurs choix alimentaires sur le futur de la plan\u00e8te. Plus les gens accordent de l\u2019importance aux cons\u00e9quences de la production, de la transformation et du transport des aliments sur l\u2019environnement, plus leurs choix alimentaires risquent de changer. Il importe donc de comprendre ce que les consommateurs ont \u00e0 c\u0153ur pour leur offrir ce qu\u2019ils cherchent. &nbsp;<\/p>\n<p>Selon une enqu\u00eate sur les tendances, la g\u00e9n\u00e9ration Z (la plus jeune des g\u00e9n\u00e9rations, dont les membres sont n\u00e9s \u00e0 partir de 1993) est particuli\u00e8rement consciente de son impact sur l\u2019environnement et elle a tendance \u00e0 opter pour des aliments naturels, biologiques et durables. Concr\u00e8tement, cela signifie que ces aspects risquent d\u2019avoir de plus en plus d\u2019influence sur l\u2019industrie des services alimentaires.<\/p>\n<p>Les pr\u00e9f\u00e9rences de la g\u00e9n\u00e9ration Z contribuent aussi \u00e0 l\u2019augmentation de l\u2019int\u00e9r\u00eat pour le v\u00e9g\u00e9tarisme, les aliments naturels et l\u2019approvisionnement local, peut-\u00eatre en raison des pr\u00e9occupations environnementales que soul\u00e8ve la n\u00e9cessit\u00e9 de nourrir une population mondiale toujours croissante \u00e0 l\u2019aide des m\u00e9thodes de production actuelles.&nbsp;<\/p>\n<h2>Comme leur production est g\u00e9n\u00e9ralement \u00e9nergivore et polluante, les cat\u00e9gories d\u2019aliments ci-dessous sont reconnues pour alimenter ces pr\u00e9occupations :<\/h2>\n<ul>\n<li>Animaux au sommet de la cha\u00eene alimentaire \u2013 particuli\u00e8rement les gros ruminants (vache, ch\u00e8vre, mouton).&nbsp;\n<ul>\n<li>L\u2019alimentation des animaux n\u00e9cessite l\u2019utilisation de fertilisants et d\u2019eau, et la conversion de for\u00eats en p\u00e2turages  a des effets n\u00e9fastes.<\/li>\n<li>La digestion et les excr\u00e9ments de ces animaux produisent du m\u00e9thane.<\/li>\n<\/ul>\n<\/li>\n<li>Produits de la mer.\n<ul>\n<li>Les flottes de p\u00eache en mer d\u00e9pendent exclusivement des combustibles fossiles.<\/li>\n<li>Les poissons tr\u00e8s recherch\u00e9s (p. ex. le thon rouge et l\u2019espadon) sont g\u00e9n\u00e9ralement surexploit\u00e9s, ce qui fait augmenter les d\u00e9placements et, donc, les \u00e9missions.<\/li>\n<\/ul>\n<\/li>\n<li>Aliments hautement transform\u00e9s.\n<ul>\n<li>Plus il y a d\u2019\u00e9tapes dans le processus de production, plus la consommation d\u2019\u00e9nergie est \u00e9lev\u00e9e.<\/li>\n<\/ul>\n<\/li>\n<li>Produits import\u00e9s.\n<ul>\n<li>Le transport sur de longues distances n\u00e9cessite beaucoup de carburant.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<h3>Les consommateurs qui essaient de r\u00e9duire leur empreinte de carbone gr\u00e2ce \u00e0 leurs choix alimentaires peuvent envisager d\u2019adopter les pratiques suivantes :<\/h3>\n<ul>\n<li>Consommer des aliments qui sont plus bas dans la cha\u00eene alimentaire : fruits, l\u00e9gumes, c\u00e9r\u00e9ales, noix, etc.<\/li>\n<li>Choisir des produits de la mer le plus local possible, issus de pratiques durables et plus bas dans la cha\u00eene alimentaire (moules, palourdes, calmars).<\/li>\n<li>Opter pour des aliments frais ou ayant \u00e9t\u00e9 le moins possible transform\u00e9s.<\/li>\n<li>Acheter des aliments biologiques, car les producteurs biologiques n\u2019utilisent pas de pesticides ou de fertilisants de synth\u00e8se, lesquels nuisent \u00e0 la qualit\u00e9 de l\u2019air et de l\u2019eau.<\/li>\n<li>Limiter les pertes. La production d\u2019aliments qui seront gaspill\u00e9s n\u00e9cessite inutilement de l\u2019eau, de l\u2019\u00e9nergie et des pesticides, et cr\u00e9e de la pollution.
