En 2014, dans le cadre d\u2019une tourn\u00e9e sur les tendances culinaires, Gerry Ludwig, chef corporatif consultant chez Service alimentaire Gordon\u00ae, a visit\u00e9 Dimes, minuscule restaurant situ\u00e9 en p\u00e9riph\u00e9rie du quartier chinois de New York. Un plat en particulier du menu original de l\u2019\u00e9tablissement a retenu son attention : le bol \u00e0 l\u2019a\u00e7a\u00ef, compos\u00e9 de pur\u00e9e froide d\u2019a\u00e7a\u00ef, de banane et de petits fruits garnis de granola et d\u2019autres fruits frais. \u00ab C\u2019\u00e9tait tout simplement d\u00e9licieux \u00bb, s\u2019exclame M. Ludwig. Alissa Wagner, chef et copropri\u00e9taire du restaurant, lui sugg\u00e8re alors de se rendre \u00e0 Los Angeles, ce qu\u2019il fait en 2015. Il y d\u00e9couvre des restaurants de d\u00e9jeuners et de brunchs, des caf\u00e9s et m\u00eame une petite cha\u00eene \u2013 Backyard Bowls \u2013, tous sp\u00e9cialis\u00e9s dans les bols \u00e0 l\u2019a\u00e7a\u00ef.<\/p>\n<h2>Oui, oui, cette baie unique\u2026<\/h2>\n<p>Le go\u00fbt, l\u2019aura de sant\u00e9 et le statut de superaliment de la baie d\u2019a\u00e7a\u00ef en font un des chouchous des restaurants ax\u00e9s sur la sant\u00e9 des grandes zones urbaines. Mais dans certaines r\u00e9gions, vous pourriez \u00eatre le premier \u00e0 offrir des bols \u00e0 l\u2019a\u00e7a\u00ef.<\/p>\n<p>Semblable au raisin, l\u2019a\u00e7a\u00ef provient du palmier pinot, plante indig\u00e8ne des for\u00eats tropicales humides de l\u2019Am\u00e9rique du Sud. Il est riche en fibres et en acides gras om\u00e9ga-6 et 9, de m\u00eame qu\u2019en vitamines du complexe B et en min\u00e9raux comme le potassium et le magn\u00e9sium. Sa teneur \u00e9lev\u00e9e en pectine fait de cette baie un ingr\u00e9dient parfait pour les bols.&nbsp;<\/p>\n<p>On le trouve en poudre ou en pur\u00e9e surgel\u00e9e. Gerry Ludwig recommande de choisir la seconde option. Pour cr\u00e9er un bol, il suffit de m\u00e9langer la pur\u00e9e d\u2019a\u00e7a\u00ef surgel\u00e9e \u00e0 de la banane et des petits fruits presque gel\u00e9s, mais suffisamment mous pour bien se m\u00e9langer. Le r\u00e9sultat doit \u00eatre servi imm\u00e9diatement. On peut toutefois en pr\u00e9parer une grande quantit\u00e9, puis la congeler. La pr\u00e9paration d\u2019a\u00e7a\u00ef restera mall\u00e9able, un peu comme un sorbet. Avant de la servir, il suffit de la laisser environ cinq minutes \u00e0 temp\u00e9rature ambiante. La pur\u00e9e sera alors bien froide, sans \u00eatre congel\u00e9e.<\/p>\n<h2>Une croissance rapide<\/h2>\n<p>Alissa Wagner explique que, chez Dimes, tous les bols contiennent de l\u2019a\u00e7a\u00ef et de la banane. Le bol le plus populaire est celui auquel on ajoute fraises, boisson d\u2019amandes, granola aux baies de goji, graines de chanvre et pollen d\u2019abeille. Celui contenant des bleuets, de la banane, du lait de coco et des flocons de ma\u00efs est aussi tr\u00e8s appr\u00e9ci\u00e9.<\/p>\n<p>Chez Backyard Bowls, qui compte quatre \u00e9tablissements situ\u00e9s dans la r\u00e9gion de Los Angeles et de Santa Barbara, on offre un menu accessible compos\u00e9 de bols \u00e0 l\u2019a\u00e7a\u00ef aux saveurs originales et all\u00e9chantes comme beurre d\u2019arachides-banane et avocat-noix de coco. Les bols sont offerts en format pour enfant, normal ou monstre, le dernier \u00e9tant visiblement destin\u00e9 \u00e0 \u00eatre partag\u00e9.<\/p>\n<p>\u00c0 Los Angeles, Harvest Bar propose une douzaine de bols \u00e0 l\u2019a\u00e7a\u00ef personnalisables, ce qui permet de varier grandement les plaisirs. Les ingr\u00e9dients qu\u2019on peut ajouter vont de ceux ouvertement sains (chou fris\u00e9, \u00e9pinards, spiruline et chia) \u00e0 un joyeux m\u00e9lange d\u2019exotisme (ananas, mangue, lait de coco, noix de coco r\u00e2p\u00e9e, kiwi et baies de goji).<\/p>\n<p>R\u00e9elle g\u00e2terie, la popularit\u00e9 grandissante du bol \u00e0 l\u2019a\u00e7a\u00ef n\u2019a rien d\u2019\u00e9tonnant. Les gens sont attir\u00e9s autant par l\u2019aura de sant\u00e9 de la baie que par son go\u00fbt.&nbsp;<\/p>\n<p>Selon Gerry Ludwig, c\u2019est ce qui rend le fruit si attrayant : ce petit plaisir vient aussi avec des bienfaits pour la sant\u00e9. La popularit\u00e9 croissante du bol \u00e0 l\u2019a\u00e7a\u00ef est tr\u00e8s excitante. D\u2019ici deux ans, les campus de la plupart des grands coll\u00e8ges en serviront sans doute.
