Et peu importe le type d\u2019\u00e9tablissement que vous exploitez, vous auriez avantage \u00e0 examiner vos pratiques.<\/p>\n<p>En fait, la r\u00e9duction, m\u00eame minime, du gaspillage d\u2019aliments, d\u2019\u00e9nergie et d\u2019eau peut faire une grosse diff\u00e9rence pour vous et pour l\u2019environnement. Commencez par d\u00e9terminer d\u2019o\u00f9 provient le gaspillage, puis apportez les changements n\u00e9cessaires. Montrez \u00e0 vos employ\u00e9s comment pr\u00e9parer les aliments de fa\u00e7on \u00e0 r\u00e9duire les pertes et \u00e0 conserver les parties pleines de saveur.<\/p>\n<p>Pour ce faire, Jane Wilsher, directrice des services alimentaires du Merrill Residential Restaurant de l\u2019universit\u00e9 Central Michigan, conseille de commencer par mettre un panier \u00e0 d\u00e9chets alimentaires dans l\u2019aire de pr\u00e9paration, ce qui permettra de recueillir les parties inutilis\u00e9es des aliments. Il faudra ensuite examiner ce qu\u2019on y jette et corriger la situation, au besoin.<\/p>\n<p>\u00ab Avant de jeter une tomate enti\u00e8re en raison d\u2019une meurtrissure, il faut se demander si on peut retirer la partie ab\u00eem\u00e9e et utiliser le reste pour des tacos \u00bb, explique-t-elle.<\/p>\n<p>La surproduction est aussi tr\u00e8s dispendieuse. Quinze portions de trop par jour \u00e0 75 cents la portion signifient des pertes de plusieurs milliers de dollars au bout d\u2019un an.<\/p>\n<h3>2) Compostage, recyclage et dons<\/h3>\n<p>Bien s\u00fbr, la surproduction et les pertes sont in\u00e9vitables, mais les d\u00e9chets peuvent n\u00e9anmoins \u00eatre g\u00e9r\u00e9s de fa\u00e7on efficace.<\/p>\n<p>Ainsi, Mme Wilsher explique que l\u2019universit\u00e9 Central Michigan dispose de 60 bacs de collecte destin\u00e9s au compostage qui peuvent contenir chacun environ 240 litres. Ces bacs sont ramass\u00e9s trois fois par semaine et transport\u00e9s vers une entreprise locale de compostage. Les d\u00e9chets alimentaires sont ensuite transform\u00e9s en fertilisant, dont 90 pour cent est vendu \u00e0 des agriculteurs locaux.<\/p>\n<p>Selon elle, un bon programme de recyclage permet aussi de r\u00e9duire les co\u00fbts en tous genres. On peut notamment recycler le papier, le carton, l\u2019aluminium, le verre et le plastique. M\u00eame s\u2019il est difficile de quantifier les \u00e9conomies possibles, Mme Wilsher fait remarquer que le recyclage permet de r\u00e9duire de fa\u00e7on notable les d\u00e9chets qui finissent dans les sites d\u2019enfouissement.<\/p>\n<p>Dans les \u00e9coles publiques des environs de Traverse City, Tom Freitas, directeur des services alimentaires et de nutrition, explique que dans son district on r\u00e9duit la quantit\u00e9 de d\u00e9chets produits en donnant les aliments invendus comme les fruits en coupe ou les pizzas \u00e0 l\u2019organisme Goodwill Food Rescue.<\/p>\n<h3>3) Type de service<\/h3>\n<p>Pour r\u00e9duire les pertes, r\u00e9fl\u00e9chissez aux mani\u00e8res dont vous pourriez modifier les services que vous offrez. Par exemple, comme les oranges sont d\u00e9licieuses, mais franchement d\u00e9sagr\u00e9ables \u00e0 \u00e9plucher, elles finissent souvent \u00e0 la poubelle. Ainsi, le gaspillage diminue quand les oranges sont \u00e9pluch\u00e9es, les pommes tranch\u00e9es et les condiments fournis \u00e0 la demande.<\/p>\n<p>Selon Tom Freitas, \u00ab le comptoir \u00e0 salades est tr\u00e8s rentable et limite les pertes. Les \u00e9tudiants ne prennent que ce qu\u2019ils veulent, sans compter qu\u2019on peut facilement savoir ce qui est populaire et ce qui ne l\u2019est pas. \u00bb<\/p>\n<h3>4) Co\u00fbts \u00e9nerg\u00e9tiques<\/h3>\n<p>Vous ferez des \u00e9conomies en fixant une heure pour allumer et \u00e9teindre les fours de m\u00eame qu\u2019en \u00e9vitant d\u2019allumer le chauffe-plats trop \u00e0 l\u2019avance. Vos r\u00e9frig\u00e9rateurs consommeront moins d\u2019\u00e9nergie s\u2019ils sont dot\u00e9s de rideaux en PVC. Enfin, l\u2019utilisation d\u2019autres types d\u2019ampoules que celles incandescentes et l\u2019installation de d\u00e9tecteurs de pr\u00e9sence r\u00e9duiront les co\u00fbts d\u2019\u00e9clairage.<\/p>\n<h3>5) Consommation d\u2019eau<\/h3>\n<p>Les co\u00fbts associ\u00e9s au nettoyage peuvent \u00eatre r\u00e9duits de fa\u00e7on notable par la r\u00e9duction de la quantit\u00e9 d\u2019eau chaude utilis\u00e9e.
