Comme les herbes s\u00e9ch\u00e9es ont un go\u00fbt plus prononc\u00e9 que les herbes fra\u00eeches, une cuill\u00e8re \u00e0 th\u00e9 d\u2019herbes s\u00e9ch\u00e9es correspond g\u00e9n\u00e9ralement \u00e0 une cuill\u00e8re \u00e0 soupe d\u2019herbes fra\u00eeches. De plus, les herbes s\u00e9ch\u00e9es doivent \u00eatre r\u00e9hydrat\u00e9es. Il faut donc les ajouter en d\u00e9but de cuisson, ce qui leur donne aussi le temps de bien lib\u00e9rer leurs saveurs. Quant aux herbes fra\u00eeches, on les ajoute en fin de cuisson ou juste avant de servir. En ce qui concerne les \u00e9pices, elles sont constitu\u00e9es de l\u2019\u00e9corce, de bourgeons, de la racine ou de la tige de plantes et d\u2019arbres. Pour garantir qu\u2019elles soient bien fra\u00eeches et savoureuses, il est pr\u00e9f\u00e9rable d\u2019en acheter souvent, mais en petite quantit\u00e9.&nbsp;<\/p>\n<p>En outre, les \u00e9pices enti\u00e8res gardent leur saveur beaucoup plus longtemps que celles moulues. Elle consiste \u00e0 amener de l\u2019eau \u00e0 \u00e9bullition, puis \u00e0 la laisser fr\u00e9mir de fa\u00e7on continue pour qu\u2019elle se transforme en vapeur. La vapeur chauffe les aliments plac\u00e9s au-dessus de l\u2019eau (et non dedans) dans une casserole couverte ou un cuiseur \u00e0 vapeur. Cette m\u00e9thode permet de faire cuire lentement autant les l\u00e9gumes, que le poulet ou les produits de la mer. Elle permet notamment aux aliments de garder leur saveur, leur couleur, leur forme et leur texture, et pr\u00e9serve mieux les nutriments que beaucoup d\u2019autres techniques de cuisson.
