Mais vous \u00eates-vous d\u00e9j\u00e0 interrog\u00e9 \u00e0 propos des maladies li\u00e9es aux boissons? Pourtant, les machines \u00e0 glace et les distributeurs de boissons sont une source importante de maladies dans les services alimentaires.<\/p>\n<p>Taux d\u2019humidit\u00e9, temp\u00e9rature \u00e9lev\u00e9e, forte concentration en sucre, endroits difficiles \u00e0 nettoyer et mauvaises m\u00e9thodes de manipulation et de nettoyage sont autant d\u2019aspects qui rendent ces machines sujettes \u00e0 la contamination par des microbes ou des virus. Certains agents pathog\u00e8nes comme les norovirus, la salmonelle, la Shigella, la list\u00e9riose, l\u2019h\u00e9patite A et l\u2019E. coli peuvent donc appara\u00eetre dans ces machines.<\/p>\n<p>Le d\u00e9montage, puis le nettoyage r\u00e9gulier et m\u00e9ticuleux de toutes les pi\u00e8ces de ces machines au moyen des m\u00e9thodes et produits recommand\u00e9s par le fabricant peuvent toutefois r\u00e9duire grandement le risque d\u2019infection. Il importe aussi de v\u00e9rifier souvent l\u2019\u00e9tanch\u00e9it\u00e9 des joints, la machine dans son ensemble, la tuyauterie, le filtre \u00e0 eau et l\u2019antirefouleur, puis de faire r\u00e9parer ce qui est endommag\u00e9, car l\u2019eau qui fuit favorise la reproduction des mouches et des cafards.&nbsp;<\/p>\n<p>Quant aux machines \u00e0 glace, elles peuvent \u00e9galement \u00eatre contamin\u00e9es, m\u00eame si elles produisent un liquide gel\u00e9. Il faut donc les nettoyer r\u00e9guli\u00e8rement et en profondeur, sans quoi une substance visqueuse difficile \u00e0 \u00e9liminer et appel\u00e9e biofilm (moisissures ou bact\u00e9ries ainsi que leurs s\u00e9cr\u00e9tions) risque de se former. De nombreux fabricants recommandent, en plus du nettoyage et de la d\u00e9sinfection ordinaires, un nettoyage en profondeur tous les six mois. Pour ce faire, certains gros \u00e9tablissements pr\u00e9f\u00e8rent toutefois avoir recours aux services d\u2019une entreprise sp\u00e9cialis\u00e9e.<\/p>\n<h3>Les maladies sur la glace<\/h3>\n<p>Ne laissez pas les maladies sur la glace. Le nettoyage des machines \u00e0 glace est primordial et il est essentiel d\u2019utiliser des m\u00e9thodes de manipulation de la glace hygi\u00e9niques. Voici quelques fa\u00e7ons de limiter au maximum les risques d\u2019apparition d\u2019une maladie d\u2019origine alimentaire provenant de la glace :<\/p>\n<ul>\n<li>Respecter les recommandations du fabricant lors du nettoyage et de la d\u00e9sinfection.<\/li>\n<li>Former son personnel afin qu\u2019il sache comment nettoyer et d\u00e9sinfecter souvent et m\u00e9ticuleusement l\u2019\u00e9quipement, plus pr\u00e9cis\u00e9ment d\u00e9monter et r\u00e9assembler la machine, choisir le produit \u00e0 utiliser et sa concentration de m\u00eame que rep\u00e9rer la moisissure et la salet\u00e9.<\/li>\n<li>Cr\u00e9er un document comprenant les instructions pour d\u00e9monter et assembler les pi\u00e8ces amovibles, les produits de nettoyage \u00e0 utiliser et leur concentration, les informations au sujet de la moisissure, de la poussi\u00e8re, la fr\u00e9quence du nettoyage et la fa\u00e7on dont les informations seront not\u00e9es.<\/li>\n<li>Se laver les mains avant l\u2019utilisation et le nettoyage de l\u2019\u00e9quipement.&nbsp;<\/li>\n<li>Utiliser des pelles propres, incassables et de classe alimentaire et les ranger dans leur support.&nbsp;<\/li>\n<li>Inspecter souvent les \u00e9l\u00e9ments suivants : drain, tuyauterie, joints, jonctions, antirefouleur, filtre \u00e0 eau, pelles, embouts, robinets et plateaux, puis corriger imm\u00e9diatement les probl\u00e8mes.<\/li>\n<li>\u00c9liminer tous les liquides stagnants afin d\u2019\u00e9viter de cr\u00e9er des conditions propices \u00e0 la prolif\u00e9ration des mouches ou des cafards.<\/li>\n<li>Embaucher un service externe pour le nettoyage r\u00e9gulier de l\u2019\u00e9quipement.<\/li>\n<\/ul>","protected":false},"excerpt":{"rendered":"<p>Q: What are the risks of foodborne illnesses when using ice machines and beverage dispensers?&nbsp; A: The risks of foodborne illness in a foodservice environment aren\u2019t anything new.
