Quelques mois avant cette tourn\u00e9e, je visite ces \u00e9tablissements accompagn\u00e9 d\u2019une \u00e9quipe de sp\u00e9cialistes de Service alimentaire Gordon. Il n\u2019y a pas si longtemps, les plats que nous go\u00fbtions en janvier \u00e9taient toujours au menu en avril. Mais les temps ont chang\u00e9.<\/p>\n<h3>Cuisiner selon le calendrier<\/h3>\n<p>Actuellement, l\u2019utilisation de produits de saison est si populaire que la plupart des plats qu\u2019on nous propose en janvier ne sont plus offerts en avril. Et c\u2019est une bonne chose. Les clients d\u2019aujourd\u2019hui veulent qu\u2019on leur pr\u00e9sente des plats naturels et minimalement transform\u00e9s. Ils sont friands d\u2019ingr\u00e9dients saisonniers et adoptent les restaurants qui utilisent des aliments bien frais. Les chefs rel\u00e8vent le d\u00e9fi de fa\u00e7on cr\u00e9ative en exploitant la popularit\u00e9 des saveurs du monde et des mariages inusit\u00e9s et go\u00fbteux.<\/p>\n<p>M\u00eame si la qualit\u00e9 des produits constitue le principal avantage de l\u2019approvisionnement local en produits de saison, le go\u00fbt et le co\u00fbt de ces produits sont aussi des arguments de poids. Mais ce n\u2019est pas tout. Encore faut-il utiliser ces produits de fa\u00e7on \u00e0 se d\u00e9marquer de la concurrence, comme c\u2019est le cas de la salade de nectarines grill\u00e9es offerte chez Gjelina, \u00e0 Los Angeles, qui se compose de burrata, de tr\u00e9vise, de roquette et de prosciutto, et est arros\u00e9e de vinaigre balsamique \u00e2g\u00e9. Ce plat \u00e0 la fois sucr\u00e9 et sal\u00e9 combine de fa\u00e7on intelligente diverses textures et temp\u00e9ratures. Il est meilleur que la somme de ses parties.<\/p>\n<h3>Tu dis tomate et je r\u00e9ponds kaki<\/h3>\n<p>J\u2019ai r\u00e9cemment go\u00fbt\u00e9 \u00e0 un sandwich incroyablement d\u00e9licieux. En effet, Corner Door, aussi \u00e0 Los Angeles, propose un sandwich au fromage fondu compos\u00e9 de kaki poch\u00e9, de fromage romano et de roquette. L\u2019id\u00e9e de remplacer la tomate par le kaki, dont le go\u00fbt est l\u00e9g\u00e8rement sucr\u00e9 et terreux, montre bien ce que les chefs arrivent \u00e0 cr\u00e9er quand ils ne se limitent pas aux ingr\u00e9dients traditionnels. Au-del\u00e0 de la tomate, du ma\u00efs et de la fraise, il existe une grande vari\u00e9t\u00e9 d\u2019ingr\u00e9dients de saison vraiment savoureux. Les choux de Bruxelles, tr\u00e8s populaires notamment dans les bistrots, en sont un bon exemple. L\u2019artichaut, le chou-rave ou le kaki sont aussi des ingr\u00e9dients qui permettent de se d\u00e9marquer. Ladies\u2019 Gunboat Society, toujours \u00e0 Los Angeles, d\u00e9cline l\u2019artichaut de deux fa\u00e7ons, r\u00f4ti et en pur\u00e9e, le tout accompagn\u00e9 de chimichurri et de copeaux de fromage romano. Et Cadet, aussi \u00e0 Los Angeles, propose une salade de chou fris\u00e9 garnie de fines tranches de kaki et de pacanes, puis arros\u00e9e d\u2019une vinaigrette aux noix. Enfin, Ada Street, \u00e0 Chicago, sert une salade de chou-rave \u00e9minc\u00e9, de raisins, de fromage romano et d\u2019une vinaigrette au citron confit. &nbsp;<\/p>\n<h3>Des occasions toute l\u2019ann\u00e9e<\/h3>\n<p>M\u00eame en hiver, on trouve plusieurs ingr\u00e9dients frais et go\u00fbteux. Le chou, les courges, les pommes de vari\u00e9t\u00e9 ancienne et les agrumes de sp\u00e9cialit\u00e9 honorent la saison froide en lui donnant de la couleur, de la saveur et de la texture. J\u2019ai go\u00fbt\u00e9 chez Via Carota, \u00e0 New York, une salade d\u2019oranges sanguines et Cara Cara (orange navel \u00e0 chair rose) arros\u00e9e d\u2019une vinaigrette aux herbes et parsem\u00e9e d\u2019oignon rouge finement \u00e9minc\u00e9 d\u2019une simplicit\u00e9 d\u00e9sarmante, mais au go\u00fbt sublime!<\/p>\n<p>Le cannage et les autres m\u00e9thodes de conservation sont aussi une bonne fa\u00e7on de profiter des aliments de saison \u00e0 l\u2019ann\u00e9e. Les bonheurs de l\u2019\u00e9t\u00e9 sont toujours les bienvenus pendant la saison froide. La cong\u00e9lation, parfaite pour les petits fruits, est une des m\u00e9thodes les plus simples \u00e0 utiliser. Les marinades sont \u00e9galement \u00e0 privil\u00e9gier. Les petits plaisirs estivaux pourront ainsi \u00e9gayer vos plats sp\u00e9ciaux tout au long de l\u2019ann\u00e9e. Et veillez \u00e0 les mettre en valeur, car ils sont une excellente fa\u00e7on de vous d\u00e9marquer. Vous pourriez par exemple offrir une assiette de marinades maison compos\u00e9e d\u2019un m\u00e9lange d\u2019ingr\u00e9dients fra\u00eechement marin\u00e9s (chou-fleur, carottes ou m\u00eame un \u0153uf) et d\u2019autres marinades faites d\u2019ingr\u00e9dients estivaux.&nbsp;<\/p>\n<p>Compliqu\u00e9? Pas tant que \u00e7a.
