Aujourd\u2019hui, elle s\u2019\u00e9tend un peu partout au Canada.&nbsp;<\/p>\n<p>Selon une enqu\u00eate de Restaurants Canada men\u00e9e en 2015, 43 % des restaurateurs canadiens affirment manquer de main-d\u2019\u0153uvre en cuisine. D\u2019ici 2030, l\u2019association pr\u00e9dit une p\u00e9nurie de 136 000 travailleurs qualifi\u00e9s ou non, autant \u00e0 temps plein qu\u2019\u00e0 temps partiel, dont 20 000 chefs et cuisiniers.&nbsp;<\/p>\n<p>\u00ab Dans un pays de la taille du n\u00f4tre, ces chiffres sont consid\u00e9rables \u00bb, soutient Donna Dooher, PDG de Restaurants Canada.&nbsp;<\/p>\n<p>De nombreux facteurs sociaux et politiques ont men\u00e9 \u00e0 cette p\u00e9nurie que connaissent actuellement les services alimentaires, qui emploient 1,1 million de personnes. Un de ces facteurs est le resserrement, en juin 2014, des r\u00e8gles du Programme des travailleurs \u00e9trangers temporaires, lequel permet \u00e0 des gens d\u2019ailleurs de venir travailler au Canada pendant un certain temps.&nbsp;&nbsp;<\/p>\n<p>Mme Dooher pense aussi que la d\u00e9mographie y est \u00e9galement pour quelque chose. La population vieillit, et les jeunes envisagent diff\u00e9remment le travail en cuisine. \u00ab Les possibilit\u00e9s sont donc nombreuses pour les dipl\u00f4m\u00e9s des \u00e9coles culinaires, notamment dans le secteur des soins de sant\u00e9 \u00bb, pr\u00e9cise-t-elle.&nbsp;<\/p>\n<h2>Une p\u00e9nurie qui oblige les restaurateurs \u00e0 s\u2019adapter&nbsp;<\/h2>\n<p>La p\u00e9nurie cr\u00e9e aussi d\u2019autres probl\u00e8mes. En effet, les restaurateurs doivent consacrer plus de temps au recrutement et r\u00e9organiser leurs op\u00e9rations.<\/p>\n<p>Donna Dooher et son mari sont propri\u00e9taires de Mildred\u2019s Temple Kitchen, un \u00e9tablissement de Toronto comprenant 110 places. Comme son mari a beaucoup de difficult\u00e9 \u00e0 trouver des cuisiniers hautement qualifi\u00e9s, le restaurant est maintenant ferm\u00e9 le soir les dimanche, lundi et mardi, et offre le brunch, un repas rentable, tous les jours. \u00ab Les restaurateurs deviennent de plus en plus cr\u00e9atifs quant aux heures d\u2019ouverture \u00bb, explique Mme Dooher.<\/p>\n<p>Dans les quatre \u00e9tablissements de TJ Chumps, restaurant \u00e0 service complet de moyenne gamme, on a \u00e9limin\u00e9 tout ce qui demande trop de main-d\u2019\u0153uvre, affirme Blake Wright, directeur associ\u00e9 de l\u2019entreprise. On ach\u00e8te maintenant du fromage tranch\u00e9 ou r\u00e2p\u00e9 ainsi que des fruits et l\u00e9gumes d\u00e9j\u00e0 coup\u00e9s. Le menu est aussi pass\u00e9 de 60 \u00e0 40 items.&nbsp;<\/p>\n<p>Les restaurants utilisent \u00e9galement une \u00e9chelle salariale qui permet aux travailleurs de voir les \u00e9tapes \u00e0 franchir pour obtenir une augmentation et progresser de plongeur \u00e0 responsable de la cuisine. Ces augmentations reposent sur un syst\u00e8me de partage des profits. \u00ab Plus ils aident l\u2019entreprise de faire de l\u2019argent, plus on peut leur en donner \u00bb, conclut M. Wright. &nbsp;<\/p>\n<h3>Tout se joue avant, pendant et apr\u00e8s l\u2019embauche&nbsp;<\/h3>\n<p>Tout indique que la p\u00e9nurie de main-d\u2019\u0153uvre dans l\u2019industrie des services alimentaires continuera d\u2019empirer avant de s\u2019am\u00e9liorer. Certains \u00e9l\u00e9ments pourraient cependant changer la donne.&nbsp;<\/p>\n<p>Selon Mme Dooher, le nouveau gouvernement s\u2019est engag\u00e9 \u00e0 travailler avec les divers secteurs, y compris celui de la restauration. Et les restaurateurs canadiens s\u2019attaqueront aussi au d\u00e9fi. \u00ab Les \u00e9tablissements sont tr\u00e8s cr\u00e9atifs, affirme-t-elle. Je pense qu\u2019ils inventeront de nouveaux mod\u00e8les qui leur permettront de bien g\u00e9rer leur marge de profit. \u00bb<\/p>\n<p>Il appartient donc aux restaurateurs de consacrer le temps et l\u2019effort n\u00e9cessaire au recrutement et \u00e0 la formation, et d\u2019envisager les travailleurs comme un \u00e9l\u00e9ment vital de leur entreprise.&nbsp;<\/p>\n<p>Dan Longton, PDG de TraitSet, entreprise de la Floride sp\u00e9cialis\u00e9e dans la gestion de la main-d\u2019\u0153uvre, nous donne quelques conseils en mati\u00e8re de recrutement, de s\u00e9lection, de formation et de r\u00e9tention.&nbsp;<\/p>\n<p><strong>Recrutement.<\/strong> Publiez des annonces, utilisez des sites comme Kijiji ou Craiglist, et demandez des recommandations \u00e0 votre personnel. Mais surtout, affichez-vous dans les m\u00e9dias sociaux. Par ailleurs, vous pourriez aussi envisager de participer \u00e0 des journ\u00e9es \u00ab carri\u00e8res \u00bb dans les \u00e9coles secondaires.<\/p>\n<p><strong>S\u00e9lection.<\/strong> Dan Longton fait passer une \u00e9valuation de 42 questions sur l\u2019\u00e9thique et l\u2019int\u00e9grit\u00e9. Malheureusement, le taux de r\u00e9ussite n\u2019est que de 30 %. Dan Longton recommande de \u00ab leur laisser \u00e9couter de la musique en cuisine \u00bb. On peut aussi tenter d\u2019\u00e9tablir un plan de carri\u00e8re pour les nouveaux employ\u00e9s.
