Les carottes se transformeront en soupe, en souffl\u00e9 ou m\u00eame en ketchup. Quant au chou-fleur, on peut le griller comme un steak, le r\u00e9duire en pur\u00e9e comme les pommes de terre ou le mettre en valeur dans une soupe, une sauce ou un souffl\u00e9.<\/p>\n<h3>R\u00f4tis et bien go\u00fbteux<\/h3>\n<p>For both vegetables, the trendiest preparation is whole-roasting\u2014ideally suited to centre-of-the-plate menuing.&nbsp;The large, impressive vegetables create a dramatic appearance on the plate and they convey freshness and quality.&nbsp;Rotisserie-roast whole heads of cauliflower, then top with sauce, breadcrumbs, and crumbled bacon.<\/p>\n<ul>\n<li>Faites cuire un chou-fleur entier dans une r\u00f4tissoire, puis nappez-le de sauce et garnissez-le de chapelure et de miettes de bacon.<\/li>\n<li>Servez des morceaux de chou-fleur r\u00f4ti, des pois chiches et des pommes de terre rattes dans une sauce aux tomates assaisonn\u00e9e de garam masala et de sumac.<\/li>\n<li>Proposez des carottes miniatures r\u00f4ties aux fines herbes (cerfeuil, persil, estragon, ciboulette) et \u00e0 l\u2019huile d\u2019olive.<\/li>\n<li>Faites r\u00f4tir dans un tagine des carottes de vari\u00e9t\u00e9 ancienne accompagn\u00e9es de piment chili, de cumin et d\u2019amandes Marcona pour cr\u00e9er un plat d\u2019influence marocaine.<\/li>\n<\/ul>\n<h3>L\u2019attrait du chou-fleur<\/h3>\n<p>Le chou-fleur doit sa popularit\u00e9 \u00e0 son c\u00f4t\u00e9 amer, ce qui, selon Technomic inc., constitue une caract\u00e9ristique tr\u00e8s recherch\u00e9e en 2015. Il faut toutefois garder \u00e0 l\u2019esprit que ce l\u00e9gume a une apparence et une texture plut\u00f4t ordinaires. Il faut donc l\u2019accompagner d\u2019ingr\u00e9dients color\u00e9s et croustillants.<\/p>\n<ul>\n<li>Faites cuire du chou-fleur sur le gril pour lui donner du go\u00fbt et de la couleur et servez-le avec des sauces et des l\u00e9gumes all\u00e9chants.<\/li>\n<li>Le chou-fleur frit (en tempura ou autre) est d\u00e9licieux. Trempez des fleurettes de chou-fleur dans le babeurre, faites-les frire, puis servez-les avec une sauce Buffalo, au sriracha ou au cinq-\u00e9pices chinois.<\/li>\n<\/ul>\n<h3>La r\u00e9volution orange des carottes<\/h3>\n<p>Les combinaisons innovatrices permettent d\u2019\u00e9lever les carottes enti\u00e8res au rang de vedettes de l\u2019assiette.<\/p>\n<ul>\n<li>Arrosez les carottes d\u2019huile d\u2019olive de premi\u00e8re qualit\u00e9 ou d\u2019huile de p\u00e9pins de raisins infus\u00e9e et saupoudrez le tout de copeaux de truffes.<\/li>\n<li>Pour faire ressortir le go\u00fbt sucr\u00e9 des carottes r\u00f4ties ou brais\u00e9es, m\u00e9langez-les \u00e0 des herbes fra\u00eeches (estragon, thym ou oseille).<\/li>\n<li>Comme les saveurs asiatiques se marient bien aux carottes, pensez \u00e0 les faire cuire dans un bouillon infus\u00e9 de citronnelle ou de gingembre.&nbsp;<\/li>\n<li>Servez des carottes glac\u00e9es accompagn\u00e9es d\u2019une r\u00e9duction de vinaigre balsamique.<\/li>\n<\/ul>\n<h3>De la racine \u00e0 la tige<\/h3>\n<p>Toutes les parties de la carotte sont comestibles. Puis, ajoutez-les aux soupes, aux salades et \u00e0 la chermoula ou utilisez-les comme garniture.<\/li>\n<li>Laissez les tiges vertes attach\u00e9es aux fleurettes de chou-fleur, qui seront ainsi plus faciles \u00e0 prendre et \u00e0 tremper dans une de vos d\u00e9licieuses sauces.<\/li>\n<li>\u00c9mincez les tiges de chou-fleur et ajoutez-les aux salades.<\/li>\n<\/ul>\n<h3>Choisir les meilleurs l\u00e9gumes<\/h3>\n<p>Choisissez des choux-fleurs tr\u00e8s blancs et exempts de taches noires, signe de pourriture.<\/p>\n<ul>\n<li>Retirez le chou-fleur de son emballage en plastique, car celui-ci emprisonne l\u2019humidit\u00e9, ce qui cause les taches fonc\u00e9es.<\/li>\n<li>Utilisez les carottes dans les quelques semaines suivant leur achat.
