Avec l\u2019\u00e9volution des huiles pour la cuisson et des proc\u00e9dures, il peut \u00eatre difficile de d\u00e9cider quelle est la meilleure option pour votre menu.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-butter\">Beurre<\/h2>\n\n\n\n<p>Le beurre est g\u00e9n\u00e9ralement fait \u00e0 partir de lait de vache, mais parfois de lait de ch\u00e8vre ou de brebis. La fabrication du beurre est un proc\u00e9d\u00e9 tr\u00e8s ancien pratiqu\u00e9 depuis des milliers d\u2019ann\u00e9es \u00e0 l\u2019aide de deux ingr\u00e9dients bien simples: la cr\u00e8me et le sel.<\/p>\n\n\n\n<p><strong>Avantages:&nbsp;<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Le beurre est fait \u00e0 partir de peu d\u2019ingr\u00e9dients et il peut \u00eatre qualifi\u00e9 \u00ab clean label \u00bb* , attribut recherch\u00e9 par de nombreux consommateurs.<\/li>\n\n\n\n<li>Le beurre contient une grande quantit\u00e9 de gras satur\u00e9s, mais les gras satur\u00e9s pr\u00e9sents dans les produits laitiers augmentent le mauvais et le bon cholest\u00e9rol, et de ce fait augmentent le risque de maladie cardiaque**.\u00a0<\/li>\n\n\n\n<li>Un produit d\u00e9riv\u00e9 du beurre, le beurre clarifi\u00e9, est fabriqu\u00e9 en retirant du beurre la mati\u00e8re grasse du lait. Si vous fabriquez votre beurre clarifi\u00e9, il faut consid\u00e9rer la main-d\u2019\u0153uvre n\u00e9cessaire et une perte de produit.\u00a0<\/li>\n\n\n\n<li>Le beurre clarifi\u00e9 est tout de m\u00eame riche en calories et en gras; il doit donc \u00eatre utilis\u00e9 avec mod\u00e9ration.\u00a0<\/li>\n\n\n\n<li>Le beurre contient une faible quantit\u00e9 de gras trans naturels qui ne sont pas consid\u00e9r\u00e9s nocifs et ne sont pas associ\u00e9s aux maladies cardiaques.\u00a0<\/li>\n\n\n\n<li>Une cuill\u00e8re \u00e0 soupe de beurre contient 100 calories et peut rapidement entra\u00eener un gain de poids.\u00a0<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-margarine\">Margarine<\/h2>\n\n\n\n<p>La margarine est un substitut du beurre produit \u00e0 partir d\u2019huiles v\u00e9g\u00e9tales et d\u2019eau. Elle a toujours \u00e9t\u00e9 commercialis\u00e9e comme \u00e9tant un choix sant\u00e9 car elle contient moins de gras satur\u00e9s. Il existe plusieurs types de margarine sur le march\u00e9; \u00e0 faible teneur en mati\u00e8res grasses, sans sel, sans lactose, qui sont fabriqu\u00e9es avec diverses huiles v\u00e9g\u00e9tales.&nbsp;<\/p>\n\n\n\n<p><strong>Avantages:<\/strong><\/p>\n\n\n\n<p>La margarine contient moins de gras satur\u00e9s que le beurre car elle est faite d\u2019huile v\u00e9g\u00e9tale et non de produits d\u2019origine animale.&nbsp;<br>La margarine est naturellement sans cholest\u00e9rol et contient des taux plus \u00e9lev\u00e9s de gras monoinsatur\u00e9s et polyinsatur\u00e9s (bons gras). Les gras insatur\u00e9s contribuent \u00e0 diminuer le taux de mauvais cholest\u00e9rol dans l\u2019organisme.<\/p>\n\n\n\n<p><strong>Inconv\u00e9nients:&nbsp;<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>La margarine peut contenir des gras trans ou des huiles partiellement hydrog\u00e9n\u00e9es. Des recherches ont d\u00e9montr\u00e9 que ces types de gras sont plus nocifs que les gras satur\u00e9s car ils augmentent consid\u00e9rablement le risque de maladie cardiovasculaire.\n<ul class=\"wp-block-list\">\n<li>Conseil: Lire la liste des ingr\u00e9dients sur le contenant de margarine.
