Selon Restaurants Canada, les ventes ont augment\u00e9 de 4,2 % cette ann\u00e9e dans le secteur commercial. Cela signifie donc que les consommateurs s\u2019en remettent encore plus qu\u2019avant aux millions d\u2019employ\u00e9s qui pr\u00e9parent leur nourriture. Compte tenu du fait que la majorit\u00e9 des employ\u00e9s de ce secteur affirment qu\u2019ils serviraient ce qu\u2019ils pr\u00e9parent \u00e0 leur famille, c\u2019est une bonne chose. N\u00e9anmoins, d\u2019apr\u00e8s le gouvernement du Canada, environ 4 millions de Canadiens (soit 1 sur 8) sont touch\u00e9s par une maladie d\u2019origine alimentaire chaque ann\u00e9e. Au vu de ce qui pr\u00e9c\u00e8de, on est en droit de se demander comment c\u2019est possible.&nbsp;<\/p>\n\n\n\n<p>Eh bien, \u00e7a l\u2019est entre autres parce que les employ\u00e9s ne comprennent pas toujours avec quelle facilit\u00e9 une maladie d\u2019origine alimentaire peut se propager. En fait, les norovirus, qui causent la gastro-ent\u00e9rite, se transmettent ais\u00e9ment au contact des mains. Ils sont la principale cause d\u2019\u00e9closion de maladies d\u2019origine alimentaire. Comme bon nombre de travailleurs de l\u2019industrie d\u00e9clarent qu\u2019ils se rendent \u00abtoujours\u00bb ou \u00absouvent\u00bb au travail quand ils sont malades, on comprend facilement pourquoi ce type de maladie inqui\u00e8te de plus en plus. Mais on peut aussi se demander pourquoi ces employ\u00e9s vont malgr\u00e9 tout au travail.&nbsp;<\/p>\n\n\n\n<p>Les trois principales raisons invoqu\u00e9es sont la peur de laisser tomber ses coll\u00e8gues, la perte de salaire et l\u2019impression de ne pas \u00eatre contagieux.&nbsp;<\/p>\n\n\n\n<p>Pour comprendre les risques associ\u00e9s \u00e0 la maladie, le personnel doit recevoir une formation sur la salubrit\u00e9 alimentaire. Vous ne pouvez peut-\u00eatre pas vous permettre d\u2019offrir des cong\u00e9s de maladie pay\u00e9s, mais vous pouvez certainement expliquer pourquoi il est dangereux de travailler quand on est malade : risque de transmission, fermeture temporaire (auquel cas personne ne serait pay\u00e9) et mise \u00e0 mal de la r\u00e9putation de l\u2019\u00e9tablissement.<\/p>\n\n\n\n<p>Lors de sa formation, l\u2019employ\u00e9 doit recevoir de l\u2019information sur la pr\u00e9vention des maladies d\u2019origine alimentaire et les sympt\u00f4mes associ\u00e9s aux norovirus : diarrh\u00e9e, vomissement, naus\u00e9e, douleur au ventre, fi\u00e8vre, mal de t\u00eate et douleurs musculaires.<\/p>\n\n\n\n<p>Veillez \u00e0 ce que vos employ\u00e9s avisent leur sup\u00e9rieur imm\u00e9diat s\u2019ils sont malades. Celui-ci pourra alors d\u00e9cider s\u2019il est n\u00e9cessaire d\u2019interdire \u00e0 l\u2019employ\u00e9 de manipuler des aliments.&nbsp;<\/p>\n\n\n\n<p>Les norovirus se propagent rapidement, le plus souvent parce qu\u2019on touche \u00e0 mains nues des aliments pr\u00eats \u00e0 manger (notamment des fruits et l\u00e9gumes frais). \u00c9tant donn\u00e9 que ces virus peuvent survivre jusqu\u2019\u00e0 deux semaines sur des surfaces comme les poign\u00e9es de porte et les interrupteurs, un nettoyage et un assainissement ad\u00e9quats sont \u00e9galement tr\u00e8s importants.&nbsp;<\/p>\n\n\n\n<p>Voici certaines pratiques qui contribueront \u00e0 pr\u00e9venir la propagation des norovirus :&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Adopter une bonne hygi\u00e8ne des mains (quand et comment se laver les mains).<\/li>\n\n\n\n<li>Laver les fruits et l\u00e9gumes, surtout ceux qui ne seront pas cuits.<\/li>\n\n\n\n<li>En informer son sup\u00e9rieur si on pense \u00eatre malade.&nbsp;<\/li>\n\n\n\n<li>Restreindre ou interdire la manipulation d\u2019aliments aux employ\u00e9s malades.<\/li>\n\n\n\n<li>\u00c9viter de servir de la nourriture quand on est malade ou qu\u2019un membre de notre famille l\u2019est.<\/li>\n\n\n\n<li>Se rappeler qu\u2019une personne continue d\u2019\u00eatre contagieuse quelques jours apr\u00e8s son r\u00e9tablissement.<\/li>\n\n\n\n<li>Nettoyer et d\u00e9sinfecter les surfaces contamin\u00e9es \u00e0 l\u2019aide d\u2019une solution javellisante dont la concentration se situe entre 1000 et 5000 ppm ou de tout autre d\u00e9sinfectant efficace contre les norovirus.<\/li>\n<\/ul>","protected":false},"excerpt":{"rendered":"<p>Employees don\u2019t always understand how easily foodborne illness can spread.
