Si les choses \u00e9taient si simples, tous les d\u00e9partements de services alimentaires respecteraient leur budget.&nbsp;<br \/>\n&nbsp;<br \/>\nMalheureusement, c\u2019est un peu plus compliqu\u00e9 que cela. Car il existe une grande diff\u00e9rence entre les co\u00fbts th\u00e9oriques et les co\u00fbts r\u00e9els. L\u2019argent investi dispara\u00eet pour plusieurs raisons, notamment la surproduction, l\u2019alt\u00e9ration des produits, le gaspillage et le vol. Parce que l\u2019argent que vous \u00e9conomiserez vaut amplement l\u2019effort que vous y consacrerez. De plus, il existe des fa\u00e7ons simples (qui ne veut pas gagner du temps?) de g\u00e9rer efficacement son inventaire en peu de temps.&nbsp;<br \/>\n&nbsp;<br \/>\nNous vous pr\u00e9sentons donc les meilleures pratiques de contr\u00f4le de l\u2019inventaire de m\u00eame qu\u2019un outil qui facilite grandement le processus.&nbsp;<\/p>\n<h3>D\u00e9finition du processus<\/h3>\n<p>Avant d\u2019\u00e9tablir une proc\u00e9dure de gestion de l\u2019inventaire, on doit avoir une id\u00e9e claire des produits \u00e0 g\u00e9rer. La meilleure solution consiste \u00e0 contr\u00f4ler rigoureusement son guide de produits, c\u2019est-\u00e0-dire la liste compl\u00e8te de tous les produits achet\u00e9s aupr\u00e8s de ses fournisseurs. Ces feuilles d\u2019inventaire sont alors statiques et refl\u00e8tent tout ce qui pourrait possiblement \u00eatre gard\u00e9 en stock dans l\u2019\u00e9tablissement.<br \/>\n&nbsp;<br \/>\nSi cela semble trop de travail, on peut aussi envisager d\u2019opter pour une liste de produits soigneusement s\u00e9lectionn\u00e9s. Par exemple, on pourrait choisir de surveiller les aliments les plus co\u00fbteux comme les prot\u00e9ines ou certains fruits et l\u00e9gumes. Si la conservation des produits laitiers pose probl\u00e8me, on devrait logiquement ajouter certains de ces produits \u00e0 la liste.&nbsp;<br \/>\n&nbsp;<br \/>\nEn fait, il n\u2019est pas n\u00e9cessaire de tout v\u00e9rifier. Et pour faciliter davantage le processus, on peut ajouter \u00e0 la liste le produit le plus comparable \u00e0 un produit donn\u00e9 offert par son distributeur principal. Ce sera particuli\u00e8rement utile si on utilise un syst\u00e8me de gestion de l\u2019inventaire li\u00e9 aux produits du distributeur. Comme les prix sont assez semblables d\u2019un distributeur \u00e0 l\u2019autre, on r\u00e9cup\u00e9rera la diff\u00e9rence de prix en gagnant du temps et en simplifiant le processus d\u2019inventaire.&nbsp;<\/p>\n<h3>Organisation ad\u00e9quate<\/h3>\n<p>La r\u00e8gle d\u2019or de l\u2019inventaire sans papier consiste \u00e0 entreposer chaque produit achet\u00e9 \u00e0 un endroit pr\u00e9cis. Gr\u00e2ce \u00e0 cette approche, l\u2019inventaire sera tr\u00e8s facile \u00e0 g\u00e9rer.&nbsp;<\/p>\n<h3>Fr\u00e9quence et moment de l\u2019inventaire<\/h3>\n<p>Traditionnellement, on fait l\u2019inventaire \u00e0 intervalle r\u00e9gulier (ann\u00e9e, trimestre, mois ou m\u00eame semaine). Mais comme l\u2019inventaire physique vient g\u00e9n\u00e9ralement s\u2019ajouter aux t\u00e2ches assign\u00e9es, il fait augmenter les heures de travail. On peut toutefois proc\u00e9der \u00e0 de petits inventaires lors de la v\u00e9rification des stocks avant les commandes.&nbsp;<br \/>\n&nbsp;<br \/>\nTandis que l\u2019employ\u00e9 responsable des commandes visite chaque lieu d\u2019entreposage pour v\u00e9rifier les stocks avant de passer sa commande, il peut en profiter pour entrer les quantit\u00e9s des produits figurant sur la liste (une trentaine), c\u2019est-\u00e0-dire ceux qui sont marqu\u00e9s d\u2019un collant de couleur.&nbsp;<br \/>\n&nbsp;<br \/>\nPuisque l\u2019employ\u00e9 est d\u00e9j\u00e0 en train de v\u00e9rifier les stocks, cette m\u00e9thode augmente \u00e0 peine la charge de travail. De plus, elle a l\u2019avantage de permettre un inventaire des produits r\u00e9gulier et l\u2019examen des quantit\u00e9s avant les commandes. Quand on re\u00e7oit deux livraisons par semaine, il est m\u00eame possible de diviser la liste de produits en deux, par exemple en utilisant des collants roses pour les produits \u00e0 v\u00e9rifier le lundi et des verts pour ceux du jeudi.<\/p>\n<h3>Analyse des donn\u00e9es<\/h3>\n<p>Une fois la collecte de donn\u00e9es d\u2019inventaire commenc\u00e9e, on doit r\u00e9fl\u00e9chir \u00e0 la fa\u00e7on dont on conservera et on analysera ces donn\u00e9es au fil du temps. En effet, c\u2019est le seul moyen de rep\u00e9rer les probl\u00e8mes associ\u00e9s \u00e0 la surproduction, au gaspillage ou au vol. Et m\u00eame si certains consid\u00e8rent qu\u2019un tableur peut remplacer un bon syst\u00e8me de gestion de l\u2019inventaire, eh bien, ce n\u2019est pas le cas. &nbsp;<br \/>\n&nbsp;<br \/>\nDans un tableur, les prix doivent \u00eatre mis \u00e0 jour manuellement chaque ann\u00e9e. Les achats et les cr\u00e9dits doivent aussi \u00eatre entr\u00e9s \u00e0 la main. Enfin, l\u2019\u00e9quation qui permet d\u2019obtenir les co\u00fbts associ\u00e9s aux aliments est plut\u00f4t complexe. \u00c0 l\u2019inverse, le syst\u00e8me de gestion de l\u2019inventaire fait tout cela \u00e0 notre place. Id\u00e9alement, le syst\u00e8me doit \u00e9galement \u00eatre li\u00e9 aux syst\u00e8mes du distributeur, ce qui permet d\u2019obtenir de l\u2019information en temps r\u00e9el.<br \/>\n&nbsp;<br \/>\nEn r\u00e9sum\u00e9, les exploitants qui ne font un inventaire physique qu\u2019une fois l\u2019an ratent de belles occasions d\u2019\u00e9conomie.
