Dur\u00e9e et temp\u00e9ratures de conservation<\/h3>\n<p>Pour \u00e9viter la prolif\u00e9ration bact\u00e9rienne et la propagation de maladies d\u2019origine alimentaire, on doit conserver certains aliments \u00e0 des temp\u00e9ratures pr\u00e9cises : \u0153ufs, viande, volaille, poisson et fruits de mer, produits laitiers, tomate et melon coup\u00e9s, riz et haricots. \n\nVoici cinq fa\u00e7ons de garder ces aliments hors de la zone de danger :\nUtiliser de l\u2019\u00e9quipement de conservation ad\u00e9quat. \nToujours conserver les aliments froids \u00e0 une temp\u00e9rature interne d\u2019au maximum 4 \u00b0C (40 \u00b0F). \nToujours conserver les aliments chauds \u00e0 une temp\u00e9rature interne d\u2019au minimum 60 \u00b0C (140 \u00b0F). \nV\u00e9rifier la temp\u00e9rature interne des aliments avant la livraison. \nLivrer les aliments le plus pr\u00e8s possible du moment o\u00f9 ils seront servis, puis r\u00e9cup\u00e9rer les restes imm\u00e9diatement apr\u00e8s.\nLes aliments stables \u00e0 temp\u00e9rature ambiante comme les barres de c\u00e9r\u00e9ales ou les muffins n\u2019ont pas besoin d\u2019\u00eatre conserv\u00e9s \u00e0 une temp\u00e9rature pr\u00e9cise.<\/p>\n<h3>2. Pr\u00e9vention de la contamination crois\u00e9e<\/h3>\n<p>La contamination crois\u00e9e survient quand des bact\u00e9ries ou d\u2019autres microorganismes sont involontairement transf\u00e9r\u00e9s d\u2019une substance ou d\u2019un objet \u00e0 un autre. Voici sept pratiques permettant de pr\u00e9venir la contamination crois\u00e9e :\n\nGarder les surfaces de pr\u00e9paration propres. \nChanger ou nettoyer les planches \u00e0 d\u00e9couper chaque fois qu\u2019on alterne entre la viande et les l\u00e9gumes. \nUtiliser des ustensiles et des plateaux distincts pour chaque produit.\nNe jamais alterner entre des aliments crus et cuits sur la m\u00eame planche \u00e0 d\u00e9couper.\nServir les aliments \u00e0 l\u2019aide d\u2019ustensiles ou de gants jetables \u00e0 usage unique.\nPr\u00e9couper et pr\u00e9emballer certains produits. \nNe jamais placer de mat\u00e9riel contenant des aliments directement sur le sol, mais plut\u00f4t les d\u00e9poser sur une table, une chaise, etc.<\/p>\n<h3>3. Nettoyage et assainissement des surfaces<\/h3>\n<p>Avant le service, il faut nettoyer et assainir toute surface servant au service ou \u00e0 la consommation des aliments : chariots, ustensiles, \u00e9quipement, tables, etc. \n\nVoici la marche \u00e0 suivre pour le nettoyage et l\u2019assainissement :\n\nNettoyer \u00e0 l\u2019aide d\u2019une solution d\u00e9tergente.\nRincer \u00e0 l\u2019eau claire.\nAssainir \u00e0 l\u2019aide d\u2019une solution d\u2019assainissement pr\u00e9par\u00e9e selon la concentration pr\u00e9vue.\nLaisser s\u00e9cher \u00e0 l\u2019air.&nbsp;<\/p>\n<h3>4. Lavage des mains<\/h3>\n<p>Le lavage des mains constitue l\u2019une des fa\u00e7ons les plus efficaces de pr\u00e9venir la propagation des infections et des maladies d\u2019origine alimentaire. \n\nAvant et apr\u00e8s le service des repas, on doit se laver les mains comme suit :\n\nSe mouiller les mains \u00e0 l\u2019eau courante la plus chaude possible tol\u00e9rable (au moins 38 \u00b0C).\nMettre du savon.\nFrotter vigoureusement les mains et les bras pendant au moins 20 secondes. Nettoyer sous les ongles et entre les doigts.\nRincer soigneusement \u00e0 l\u2019eau courante.\nS\u00e9cher les mains et les bras \u00e0 l\u2019aide d\u2019une serviette en papier jetable \u00e0 usage unique ou d\u2019un s\u00e8che-mains \u00e0 air chaud.&nbsp;<\/p>\n<h3>5. Pr\u00e9paration et service&nbsp;<\/h3>\n<p>On doit avoir acc\u00e8s \u00e0 l\u2019eau courante ou \u00e0 de l\u2019eau propre \u00e0 tous les endroits o\u00f9 l\u2019on pr\u00e9pare de la nourriture.\nOn apporte les aliments crus n\u00e9cessaires juste avant leur cuisson, pour \u00e9viter la zone de danger (situ\u00e9e entre 4 et 60 \u00b0C).\nOn sert les aliments imm\u00e9diatement et on \u00e9vite de les laisser longtemps \u00e0 temp\u00e9rature ambiante.<\/p>\n<h3>6. Gestion des portions restantes<\/h3>\n<p>Pour d\u00e9terminer si les restes de nourriture peuvent \u00eatre r\u00e9utilis\u00e9s, on doit se fier \u00e0 la r\u00e9glementation en vigueur. Pour plus de renseignements, consulter les autorit\u00e9s sanitaires locales.\n\nVoici la mani\u00e8re de g\u00e9rer les restes :\n\nJeter tous les aliments p\u00e9rissables qui ont \u00e9t\u00e9 \u00e0 temp\u00e9rature ambiante pendant plus de deux heures. \nR\u00e9chauffer les aliments cuits \u00e0 leur temp\u00e9rature initiale de cuisson dans un d\u00e9lai de deux heures. \nJeter les aliments non consomm\u00e9s dans les deux heures suivantes.\nConserver les aliments froids \u00e0 une temp\u00e9rature d\u2019au maximum 4 \u00b0C (40 \u00b0F).&nbsp;<\/p>\n<h3>Code de la route pour les camions-restaurants<\/h3>\n<p>Comme la r\u00e9glementation varie d\u2019un endroit \u00e0 l\u2019autre, les restaurateurs de rue doivent se renseigner aupr\u00e8s de leur municipalit\u00e9. Voici, \u00e0 titre d\u2019exemple, la r\u00e9glementation en vigueur \u00e0 Montr\u00e9al.<\/p>\n<p>Il faut cependant noter que partout au Canada les camions-restaurants, au m\u00eame titre que les restaurants, peuvent faire l\u2019objet d\u2019une inspection et doivent \u00eatre supervis\u00e9s par une personne form\u00e9e \u00e0 la manipulation des aliments.
