Grosso modo, la rentabilit\u00e9 correspond \u00e0 la diff\u00e9rence entre les ventes et les co\u00fbts. La pression r\u00e9cente sur les ventes \u2012 notamment li\u00e9e \u00e0 la diversification des types d\u2019\u00e9tablissements de restauration \u2012 combin\u00e9e \u00e0 la croissance constante des co\u00fbts de main-d\u2019\u0153uvre et autres co\u00fbts a pour effet de r\u00e9duire des marges de profit d\u00e9j\u00e0 minces.&nbsp;<\/p>\n<p>Beaucoup de restaurateurs utilisent d\u00e9sormais les donn\u00e9es pour maximiser leur rentabilit\u00e9. En effet, l\u2019analyse rigoureuse des donn\u00e9es permet de d\u00e9couvrir des fa\u00e7ons de fid\u00e9liser sa client\u00e8le et d\u2019augmenter sa rentabilit\u00e9.&nbsp;<\/p>\n<p>Les nombreuses technologies qui ont vu le jour sont une source de connaissances pr\u00e9cieuses. Elles red\u00e9finissent aussi la mani\u00e8re dont les restaurateurs envisagent et g\u00e8rent leur entreprise et leur menu.&nbsp;<\/p>\n<h3>Technologies op\u00e9rationnelles<\/h3>\n<p>Les technologies op\u00e9rationnelles, par exemple, les logiciels de gestion d\u2019inventaire ou de recettes, n\u2019ont rien de nouveau. Il importe cependant de trouver un \u00e9quilibre entre l\u2019effort n\u00e9cessaire pour g\u00e9rer le syst\u00e8me et ce qu\u2019on en obtient. Dans ce cas, la loi des rendements d\u00e9croissants utilis\u00e9e en finance, qui se d\u00e9finit comme suit, pourra s\u2019av\u00e9rer utile :&nbsp;<\/p>\n<p>Point \u00e0 partir duquel les profits r\u00e9alis\u00e9s ou les avantages retir\u00e9s sont inf\u00e9rieurs \u00e0 l\u2019argent ou \u00e0 l\u2019\u00e9nergie investie.<\/p>\n<p>Avec les solutions de donn\u00e9es, ce point se trouve \u00e0 l\u2019intersection entre l\u2019effort que l\u2019on est pr\u00eat \u00e0 mettre pour garder les donn\u00e9es \u00e0 jour et l\u2019importance de l\u2019information obtenue gr\u00e2ce \u00e0 ces donn\u00e9es.
