Voici quelques id\u00e9es pour mettre en valeur ce produit encore m\u00e9connu.<\/h2>\n<p>Si l\u2019on se fie au chef Jason Kalinowski, conseiller culinaire pour la division de l\u2019Ontario de Service alimentaire Gordon\u00ae, la nduja (prononc\u00e9e \u00ab\u00ad ndouilla \u00bb) pourrait nous r\u00e9server des surprises en 2018. \u00ab\u00ad On la voit appara\u00eetre dans les \u00e9piceries et boucheries sp\u00e9cialis\u00e9es. C\u2019est maintenant le temps pour les restaurateurs de se l\u2019approprier et de l\u2019int\u00e9grer au menu. \u00bb<\/p>\n<p>Ce saucisson intense et \u00e9pic\u00e9 qui provient de la Calabre, en Italie, se d\u00e9marque \u00e0 la fois en raison de ses saveurs riches et de sa texture tartinable. Il s\u2019agit d\u2019un produit de boucherie artisanal compos\u00e9 d\u2019\u00e9paule de porc, de piment calabrais et de gras de porc, le tout ins\u00e9r\u00e9 dans un boyau, puis suspendu en vue d\u2019\u00eatre s\u00e9ch\u00e9. \u00ab\u00ad Le produit contient assez de gras pour rester tartinable une fois pr\u00eat \u00bb. Utilis\u00e9 \u00e0 petite dose, ce produit tr\u00e8s go\u00fbteux convient \u00e0 toutes sortes de plats : planches de charcuteries, pizzas, p\u00e2tes, etc. Il peut aussi \u00eatre employ\u00e9 de mani\u00e8re cr\u00e9ative dans les vinaigrettes et les beurres aromatis\u00e9s.<\/p>\n<p>Gr\u00e2ce \u00e0 sa saveur riche et tr\u00e8s piquante, la nduja n\u2019a pas son pareil pour rehausser les saveurs. Chez Buon Gusto, \u00e0 Guelph (Ontario), la nduja figure \u00e0 plusieurs endroits du menu concoct\u00e9 par le chef et associ\u00e9 Dave Manno. Elle est offerte dans le Salumi e Formaggi, un antipasto compos\u00e9 de capicollo, nduja, gorgonzola, provolone, noix de Grenoble, poivron, olives et pain artisanal italien. Le saucisson pimente aussi la pizza calabraise du restaurant, garnie de tomates san marzano, fior di latte, prosciutto cuit, ail r\u00f4ti, grana padano et pousses de roquette.<br \/>\n&nbsp;<br \/>\nComme une toute petite quantit\u00e9 de nduja suffit, le produit ne revient pas aussi cher qu\u2019il y para\u00eet (de cinq \u00e0 six dollars les 100 grammes). On peut \u00e9galement le pr\u00e9parer soi-m\u00eame, ce qui permet d\u2019offrir un produit au go\u00fbt unique pour lequel les gens seront pr\u00eats \u00e0 payer un peu plus. Pour ce faire, on r\u00e9duit en pur\u00e9e au robot culinaire du jambon cru s\u00e9ch\u00e9 et une mati\u00e8re grasse (id\u00e9alement du gras de canard ou de porc), puis on assaisonne le tout de paprika ou de poivre de cayenne.&nbsp;<\/p>\n<p>\u00ab\u00ad La nduja peut donner du piquant \u00e0 virtuellement tous les plats \u00bb, explique M. Kalinowski. \u00c9tant donn\u00e9 que ce saucisson est encore peu connu au Canada, il faut sauter sur l\u2019occasion d\u2019\u00eatre un des premiers \u00e0 l\u2019offrir.<\/p>\n<p>M. Kalinowski nous propose d\u2019ailleurs trois fa\u00e7ons de mettre en valeur ce produit piquant aux saveurs complexes.<\/p>\n<h3>1. \u00c9talage de saveurs<\/h3>\n<p>Selon lui, ceux qui ont d\u00e9j\u00e0 servi de la tartinade au confit de canard sur des crostinis ne seront pas d\u00e9pays\u00e9s. \u00ab\u00ad Une des mani\u00e8res les plus simples de pr\u00e9senter la nduja est de l\u2019offrir en amuse-gueule \u00bb, laisse-t-il savoir. Les clients qui commandent quelques \u00ab\u00ad tapas \u00bb \u00e0 six dollars chacun se cr\u00e9ent une exp\u00e9rience gourmande riche et vari\u00e9e qui, pour le restaurateur, sera plus rentable que la vente d\u2019une entr\u00e9e ou d\u2019une assiette \u00e0 partager.<\/p>\n<p>Sur les menus<\/p>\n<ul>\n<li>Sandwich NBLT : nduja, bacon Beeler\u2019s, tomate de vari\u00e9t\u00e9 ancienne, mayo aux herbes, ciabatta \u2013 Forbidden Root, Chicago<\/li>\n<li>Nduja et pain grill\u00e9 \u2013 Roberta\u2019s, New York<\/li>\n<\/ul>\n<h3>2. \u00c0 toutes les sauces<\/h3>\n<p>Les vinaigrettes sont le v\u00e9hicule id\u00e9al pour un ingr\u00e9dient puissant comme la nduja. Cette derni\u00e8re donnera du mordant et de l\u2019umami \u00e0 n\u2019importe quelle vinaigrette \u00e0 base de tomates inspir\u00e9e des saveurs toscanes. \u00ab\u00ad J\u2019aime cette id\u00e9e. L\u2019ajout de nduja dans une vinaigrette ou une sauce pr\u00e9par\u00e9e est une fa\u00e7on ing\u00e9nieuse de rehausser les saveurs sans vraiment faire augmenter les co\u00fbts de main-d\u2019\u0153uvre \u00bb, laisse savoir M. Tout simplement craquant<\/h3>\n<p>Les plats italiens sont \u00e9galement parfaits pour mettre la nduja en valeur. \u00ab\u00ad On peut l\u2019\u00e9mietter, puis la faire griller au four jusqu\u2019\u00e0 ce qu\u2019elle soit croustillante, pour ensuite l\u2019ajouter aux pizzas, aux p\u00e2tes ou \u00e0 la soupe \u00bb, propose M.
