Selon la plus r\u00e9cente \u00e9tude de Restaurants Canada, pr\u00e8s de la moiti\u00e9 (48 %) des restaurants avec service aux tables ont d\u00e9clar\u00e9 manquer de main-d\u2019\u0153uvre qualifi\u00e9e au cours du quatri\u00e8me trimestre, pourcentage le plus \u00e9lev\u00e9 depuis le dernier trimestre de 2014.&nbsp;<\/p>\n<p>\u00ab\u00ad C\u2019est un sujet vraiment d\u00e9licat \u00bb, laisse savoir St\u00e9phane Renaud, chef pour la division de Qu\u00e9bec de Service alimentaire Gordon. \u00ab\u00ad La main-d\u2019\u0153uvre est rare, difficile \u00e0 trouver et souvent peu qualifi\u00e9e. Les restaurateurs n\u2019arrivent pas \u00e0 obtenir le niveau de qualit\u00e9 qu\u2019ils voudraient. \u00bb<\/p>\n<p>C\u2019est pourquoi beaucoup de chefs adoptent les produits \u00e0 valeur ajout\u00e9e. Non, le sujet n\u2019a rien de sexy. Pendant des ann\u00e9es, ces produits ont fait l\u2019objet de beaucoup d\u2019id\u00e9es pr\u00e9con\u00e7ues : ils ne sont pas pour les \u00ab\u00ad vrais chefs \u00bb, ils sont destin\u00e9s au secteur institutionnel ou ils permettent de tourner les coins ronds au d\u00e9triment de la cr\u00e9ativit\u00e9 et du go\u00fbt.&nbsp;<\/p>\n<h3>Un regard neuf<\/h3>\n<p>Heureusement, les temps ont chang\u00e9. Ces produits offrent maintenant des solutions actuelles et pertinentes qui aident les restaurateurs \u00e0 demeurer cr\u00e9atifs et \u00e0 contourner les probl\u00e8mes de main-d\u2019\u0153uvre : produits exclusifs \u00e9labor\u00e9s selon les directives de chefs, l\u00e9gumes surgel\u00e9s presque impossibles \u00e0 diff\u00e9rencier des l\u00e9gumes frais, etc.<\/p>\n<p>\u00ab\u00ad C\u2019est la solution logique \u00e0 un probl\u00e8me bien r\u00e9el, affirme M. Renaud. Il y a quatre ou cinq ans, personne ne s\u2019int\u00e9ressait \u00e0 la plupart de ces produits. Mais comme la pr\u00e9paration de base n\u00e9cessite de 70 \u00e0 80 heures, ce temps pourrait plut\u00f4t servir \u00e0 am\u00e9liorer la qualit\u00e9 de la r\u00e9alisation des plats et du montage des assiettes. \u00bb&nbsp;<\/p>\n<p>Les produits \u00e0 valeur ajout\u00e9e laissent du temps pour am\u00e9liorer la constance de m\u00eame que cr\u00e9er des plats uniques. Pour Michael Viloria, chef pour la division de la Colombie-Britannique, ce sont les petits ajouts comme un beurre brun au romarin et du miel au poivre noir dans un plat de poulet qui font toute la diff\u00e9rence.&nbsp;<\/p>\n<p>\u00ab\u00ad Quand le rendement, la main-d\u2019\u0153uvre et la constance comptent, les produits \u00e0 valeur ajout\u00e9e sont une bonne solution, explique-t-il. J\u2019ai constat\u00e9 que la plupart des restaurateurs cherchent \u00e0 offrir un menu vari\u00e9 malgr\u00e9 un espace et des outils limit\u00e9s. Et ces produits leur permettent de le faire. \u00bb<\/p>\n<h3>Plus d\u2019\u00e9conomies<\/h3>\n<p>En plus de r\u00e9duire les besoins en main-d\u2019\u0153uvre, les produits \u00e0 valeur ajout\u00e9e diminuent aussi l\u2019inventaire et le gaspillage. Les produits pr\u00e9par\u00e9s comme le b\u0153uf brais\u00e9 n\u2019ont qu\u2019\u00e0 \u00eatre chauff\u00e9s et peuvent souvent \u00eatre utilis\u00e9s de plein de fa\u00e7ons. Des herbes fra\u00eeches, des agrumes et des fruits et l\u00e9gumes de saison compl\u00e9teront agr\u00e9ablement les plats sans mettre trop de pression sur la cuisine.&nbsp;<\/p>\n<p>\u00ab\u00ad L\u2019avantage, c\u2019est que ce sont des aliments pr\u00eats \u00e0 manger et qu\u2019on peut choisir de les utiliser tels quels ou de les transformer pour se les approprier \u00bb, indique M. Viloria. On peut les voir comme des produits de base qui laissent le temps de se concentrer sur ces touches finales qui font toute la diff\u00e9rence pour le client.&nbsp;<\/p>\n<p>\u00c9tant donn\u00e9 la situation actuelle, on doit s\u2019attarder aux t\u00e2ches qui font augmenter les revenus gr\u00e2ce \u00e0 une valeur per\u00e7ue plus \u00e9lev\u00e9e. Quand on analyse le menu et qu\u2019on calcule le co\u00fbt r\u00e9el des ingr\u00e9dients et de la main-d\u2019\u0153uvre, la n\u00e9cessit\u00e9 des produits \u00e0 valeur ajout\u00e9e devient \u00e9vidente.&nbsp;<\/p>\n<p>On ne gagne rien \u00e0 payer ses cuisiniers \u00e0 \u00e9plucher des l\u00e9gumes pendant des heures; les clients n\u2019y voient pas la diff\u00e9rence et cela n\u2019augmente en rien la qualit\u00e9 et la valeur inh\u00e9rente d\u2019un plat.
