Et les clients plongent t\u00eate premi\u00e8re dans la d\u00e9couverte de saveurs pr\u00e9sent\u00e9es dans un format connu.<\/h2>\n<p>La cat\u00e9gorie des salades est g\u00e9n\u00e9ralement \u00e0 la tra\u00eene des tendances, contrairement aux amuse-gueules, accompagnements et plats principaux. Mais des tourn\u00e9es des tendances r\u00e9alis\u00e9es en 2017 au Canada et aux \u00c9tats-Unis ont permis de constater que les salades qui sortent de l\u2019ordinaire sont de plus en plus pr\u00e9sentes sur les menus.&nbsp;<\/p>\n<p>C\u2019est sans contredit un signe des temps. Les plats modernes se reconnaissent actuellement au mariage intentionnel des saveurs et des textures. Et les salades permettent ais\u00e9ment d\u2019exploiter la tendance g\u00e9n\u00e9rale \u00e0 la construction \u00e9tudi\u00e9e, o\u00f9 l\u2019oignon cru devient marin\u00e9 ou confit, les tomates sont grill\u00e9es \u2013 voire carbonis\u00e9es \u2013 et les laitues traditionnelles d\u00e9tr\u00f4n\u00e9es par d\u2019autres fruits et l\u00e9gumes pr\u00eats \u00e0 prendre le devant de la sc\u00e8ne.&nbsp;<\/p>\n<p>Bref, les salades de l\u2019heure ne laissent personne indiff\u00e9rent. Voici quatre id\u00e9es \u00e0 explorer.<\/p>\n<h3>1. De \u00ab\u00ad nouvelles \u00bb verdures<\/h3>\n<p>Si les laitues iceberg et romaine sont toujours des valeurs s\u00fbres, d\u2019autres verdures se taillent une place, ce qui permet de varier les textures et d\u2019am\u00e9liorer la valeur nutritive des salades. Selon Kent MacDonald, chef pour la division de l\u2019Atlantique de Service alimentaire Gordon\u00ae, \u00ab\u00ad la roquette et les jeunes pousses ne se d\u00e9modent pas \u00bb.&nbsp;<\/p>\n<p>Le chou fris\u00e9 demeure aussi un ingr\u00e9dient vedette qui offre plein de possibilit\u00e9s. Et les chefs emploient ces ingr\u00e9dients de mani\u00e8re spectaculaire. La chicor\u00e9e fris\u00e9e a \u00e9galement beaucoup de potentiel. En raison de son go\u00fbt amer et de sa texture unique, elle joue souvent un r\u00f4le de soutien \u2013 on l\u2019accompagne normalement de laitues \u00e0 la saveur moins prononc\u00e9e \u2013, mais produit tout de m\u00eame un effet dramatique.&nbsp;<\/p>\n<p>Enfin, l\u2019escarole gagne aussi en popularit\u00e9. Au-del\u00e0 de la laitue<\/h3>\n<p>Les chefs utilisent d\u00e9sormais toutes sortes de techniques pour pr\u00e9senter les fruits et l\u00e9gumes de fa\u00e7on cr\u00e9ative. Par exemple, la betterave crue servie r\u00e2p\u00e9e, en spirale ou en julienne en met plein la vue. Chez Three Hands, \u00e0 Toronto, on propose une salade compos\u00e9e de betteraves r\u00f4ties servies sur un lit de roquette, le tout garni de radis, de fromage de ch\u00e8vre fouett\u00e9, d\u2019\u00e9chalotes frites et d\u2019une vinaigrette au miel. C\u2019est une explosion de saveurs et de textures qui met d\u00e9cid\u00e9ment la betterave en vedette.&nbsp;<\/p>\n<p>D\u2019autres l\u00e9gumes crus trouvent \u00e9galement leur place dans les salades, notamment le radis melon d\u2019eau, le chou de Bruxelles et le navet. Pour r\u00e9ussir ce type de plat, il faut miser sur des ingr\u00e9dients puissants comme des \u00e9pices go\u00fbteuses ou des aliments riches en umami.&nbsp;<\/p>\n<h3>3. Des vinaigrettes r\u00e9ussies<\/h3>\n<p>C\u2019est un domaine o\u00f9 l\u2019on remarque \u00e9norm\u00e9ment d\u2019innovation. M. MacDonald indique d\u2019ailleurs que les vinaigrettes aux agrumes, plus particuli\u00e8rement \u00e0 l\u2019orange sanguine ou au citron, sont tr\u00e8s populaires en raison de leur mordant. Les vinaigrettes qui mettent en valeur les saveurs r\u00e9gionales comme le sirop d\u2019\u00e9rable, les bleuets et les autres fruits de saison sont aussi appr\u00e9ci\u00e9es.&nbsp;<\/p>\n<p>En outre, les chefs s\u2019int\u00e9ressent \u00e0 la texture des vinaigrettes, qui aide \u00e0 bonifier les salades de fa\u00e7on cr\u00e9ative et inattendue. Par exemple, chez Flock, \u00e0 Toronto, la salade Frenchy Flock (mesclun et roquette, haricots, oignons croustillants, chou-fleur r\u00f4ti, lentilles fran\u00e7aises, poivron, concombre, tomates cerises, \u0153ufs durs et courgette jaune) est arros\u00e9e d\u2019une vinaigrette aux tomates grill\u00e9es, olives et c\u00e2pres. La bagna cauda, ce riche et savoureux m\u00e9lange d\u2019anchois, d\u2019huile d\u2019olive, d\u2019ail et de beurre, offre aussi beaucoup de possibilit\u00e9s.<\/p>\n<h3>4. Des prot\u00e9ines bien go\u00fbteuses<\/h3>\n<p>Ces jours-ci, l\u2019assemblage de saveurs est partout : dans les bols, bouch\u00e9es, salades, etc. La popularit\u00e9 croissante des prot\u00e9ines tr\u00e8s savoureuses est en partie due \u00e0 la grande pr\u00e9sence de plats mettant en vedette des l\u00e9gumes accompagn\u00e9s de petites quantit\u00e9s de prot\u00e9ines comme du porc croustillant ou des charcuteries. Cette approche convient parfaitement aux salades, et le saumon fum\u00e9 \u00e0 froid et la dinde effiloch\u00e9e font de bons ajouts. \u00ab\u00ad Au Canada, particuli\u00e8rement sur les c\u00f4tes, les crevettes et le saumon sont souvent utilis\u00e9s pour agr\u00e9menter les salades, indique M. MacDonald. Tout est dans la texture. Un p\u00e9toncle frit bien croustillant se mariera agr\u00e9ablement \u00e0 la texture tendre du quinoa servi sur un lit de verdures. \u00bb Les aliments carbonis\u00e9s, les saveurs de barbecue fum\u00e9 et le bacon laqu\u00e9 donnent aussi du mordant aux salades.<\/p>\n<p>Actuellement, les consommateurs semblent ouverts \u00e0 l\u2019exploration et avides de d\u00e9couvrir des combinaisons de saveurs inusit\u00e9es. C\u2019est donc le temps d\u2019oser.
