Mais \u00eates-vous vraiment pr\u00eat?<\/h2>\n<p>J\u2019ai r\u00e9cemment rencontr\u00e9 un nouveau restaurateur qui c\u00e9l\u00e9brait le premier anniversaire de son \u00e9tablissement. Selon lui, son ann\u00e9e s\u2019\u00e9tait bien d\u00e9roul\u00e9e. Pourtant, j\u2019ai eu l\u2019impression que les choses ne s\u2019\u00e9taient pas aussi bien pass\u00e9es qu\u2019il l\u2019avait esp\u00e9r\u00e9.&nbsp;<\/p>\n<p>Nous avons fait le tour de la question, passant du marketing aux prix des plats. Puis j\u2019ai chang\u00e9 de sujet et lui ai demand\u00e9 comment allait sa famille. Nouvellement arriv\u00e9 au pays, il m\u2019a parl\u00e9 en termes \u00e9logieux de son \u00e9pouse et de ses enfants, et des portes que le Canada lui avait ouvertes. Apr\u00e8s tout, il est le fier propri\u00e9taire d\u2019un restaurant.<\/p>\n<p>Puis je l\u2019ai vu baisser le regard. Il m\u2019a avou\u00e9 que son seul regret \u00e9tait de ne jamais avoir de temps pour sa famille.<\/p>\n<p>Il n\u2019avait eu que quatre jours de cong\u00e9 pendant sa premi\u00e8re ann\u00e9e d\u2019activit\u00e9. Il \u00e9tait toutefois convaincu que les choses allaient s\u2019am\u00e9liorer et qu\u2019il passerait bient\u00f4t plus de temps avec ses proches.<\/p>\n<p>C\u2019est \u00e0 ce moment qu\u2019il m\u2019a annonc\u00e9 la chose la plus surprenante que j\u2019aie entendue :<\/p>\n<p>il \u00e9tait impatient d\u2019ouvrir un deuxi\u00e8me \u00e9tablissement, et son agent d\u2019immeuble \u00e9tait d\u00e9j\u00e0 \u00e0 la recherche d\u2019un local!<\/p>\n<p>J\u2019\u00e9tais tout simplement estomaqu\u00e9. Voil\u00e0 pourquoi j\u2019ai d\u00e9cid\u00e9 de faire le point. Pas seulement avec lui, mais aussi avec vous tous qui songez \u00e0 prendre de l\u2019expansion.<\/p>\n<p>Je comprends l\u2019attrait des \u00e9tablissements multiples : si vous avez r\u00e9alis\u00e9 un certain profit \u00e0 un endroit, vous vous dites que vous pourriez doubler ou tripler ce profit en ouvrant un ou deux autres restaurants.<\/p>\n<p>M\u00eame s\u2019il est possible de g\u00e9rer plus d\u2019un restaurant avec succ\u00e8s, si vous souhaitez maintenir un semblant d\u2019\u00e9quilibre travail-vie personnelle (et, croyez-moi, vous le devriez), vous devez absolument faire ce qui suit avant de consid\u00e9rer s\u00e9rieusement la chose.<\/p>\n<h3>1. Trouver le bon associ\u00e9<\/h3>\n<p>Comme vous ne pouvez \u00eatre partout \u00e0 la fois, vous ne devriez envisager la croissance qu\u2019une fois que vous aurez trouv\u00e9 quelqu\u2019un pour vous \u00e9pauler au quotidien. Libre \u00e0 vous d\u2019opter pour un associ\u00e9 au sens juridique du terme, un directeur g\u00e9n\u00e9ral, etc., ce qui compte, c\u2019est de trouver quelqu\u2019un d\u2019aussi passionn\u00e9 et engag\u00e9 envers votre entreprise que vous l\u2019\u00eates. Apr\u00e8s tout, ces aspects ne s\u2019enseignent pas et vous ne devriez pas confier de grandes responsabilit\u00e9s \u00e0 quelqu\u2019un qui ne s\u2019investit pas enti\u00e8rement dans votre entreprise.&nbsp;<\/p>\n<p>Les restaurateurs choisissent parfois de s\u2019associer \u00e0 un membre de leur famille ou \u00e0 un ami. Si cela peut sembler logique, vous devez toutefois savoir que rien ne peut ruiner une relation plus rapidement que les affaires.<\/p>\n<p>Une fois la bonne personne trouv\u00e9e, vous devez l\u00e2cher graduellement les r\u00eanes et laisser \u00e0 l\u2019autre l\u2019occasion d\u2019apprendre de ses erreurs, comme vous l\u2019avez fait. Concentrez-vous sur les r\u00e9sultats plut\u00f4t que sur la fa\u00e7on dont ils ont \u00e9t\u00e9 atteints. Car, m\u00eame si vos m\u00e9thodes fonctionnent, elles ne sont pas pour autant la seule fa\u00e7on de faire.<\/p>\n<h3>2. \u00c9tablir des politiques et des proc\u00e9dures<\/h3>\n<p>Prenez n\u2019importe quelle bonne cha\u00eene de restaurants et vous constaterez que la structure est un domaine dans lequel elles excellent.&nbsp;<\/p>\n<p>Disposez-vous d\u2019un manuel d\u2019employ\u00e9 qui d\u00e9crit clairement la vision de votre entreprise?<br \/>\nCe manuel doit contenir des politiques et proc\u00e9dures qui d\u00e9finissent les normes \u00e0 respecter rigoureusement. Cette approche permet de maintenir la qualit\u00e9 du service et des plats m\u00eame si vous n\u2019\u00eates pas l\u00e0 pour tout superviser.<\/p>\n<p>Tout doit \u00eatre mis par \u00e9crit : code vestimentaire, <a href=\"https:\/\/gfs.ca\/fr-ca\/ideas\/penurie-de-main-doeuvre-personnel-a-gagner\/\">formation du personnel<\/a>, gestion de l\u2019inventaire, recettes, conduite des employ\u00e9s, descriptions de postes, t\u00e2ches \u00e0 effectuer \u00e0 l\u2019ouverture et \u00e0 la fermeture, gestion des m\u00e9dias sociaux, etc. Sans cela, vous n\u2019aurez aucune fa\u00e7on d\u2019obliger votre \u00e9quipe \u00e0 rendre des comptes.&nbsp;<\/p>\n<h3>3. \u00c9valuer votre sant\u00e9 financi\u00e8re et le potentiel de rentabilit\u00e9<\/h3>\n<p>La situation financi\u00e8re de votre \u00e9tablissement actuel doit \u00eatre assez bonne pour pouvoir supporter la baisse de revenus qui risque de se produire pendant la concr\u00e9tisation de votre nouveau projet. M\u00eame si la plupart des restaurateurs esp\u00e8rent que \u00e7a n\u2019arrivera pas, d\u2019apr\u00e8s mon exp\u00e9rience, et celle de mes pairs, le rendement diminue presque toujours. Si vous \u00eates la force motrice derri\u00e8re le succ\u00e8s de votre restaurant, il va de soi que les ventes risquent de baisser un peu quand vous allez concentrer la majorit\u00e9 de votre \u00e9nergie ailleurs. Heureusement, les choses devraient se placer rapidement si elles sont bien g\u00e9r\u00e9es.&nbsp;<\/p>\n<p>Enfin, il ne sert \u00e0 rien de vous imposer, \u00e0 vous et \u00e0 votre famille, tout le travail, le risque et le stress associ\u00e9s \u00e0 l\u2019ouverture d\u2019un deuxi\u00e8me \u00e9tablissement si cela ne vous permet pas \u00e0 moyen terme de profiter d\u2019un mode de vie plus confortable. Vous devez donc \u00e9valuer soigneusement le potentiel de profit d\u2019un autre \u00e9tablissement avant de vous lancer.<\/p>\n<p>Bien s\u00fbr, la d\u00e9cision de prendre de l\u2019expansion ou non ne repose pas que sur ces questions.
