Pourtant, tous ceux qui raffolent de ses saveurs riches et aromatiques ne peuvent s\u2019emp\u00eacher de se demander pourquoi elle n\u2019est pas plus populaire. C\u2019est peut-\u00eatre que, pour la majorit\u00e9 des gens, ces saveurs intenses semblent juste un peu trop exotiques. Actuellement, c\u2019est donc plut\u00f4t dans la fusion des genres que les ingr\u00e9dients indiens trouvent leur place.<\/p>\n<p>Les consommateurs sont de plus en plus habitu\u00e9s \u00e0 retrouver les influences de plusieurs cuisines dans leur assiette. Le concept, qui consiste \u00e0 prendre un \u00e9l\u00e9ment connu et \u00e0 le combiner \u00e0 un autre qui ne l\u2019est pas (et qui provient g\u00e9n\u00e9ralement d\u2019une r\u00e9gion compl\u00e8tement diff\u00e9rente) oriente depuis un moment l\u2019\u00e9volution des menus un peu partout en Am\u00e9rique du Nord. Et la cuisine indienne est maintenant de la partie. Le r\u00e9sultat? Une belle occasion de se distinguer, de donner des airs d\u2019aventure aux plats populaires que sont burgers, frites, ailes de poulet et salades.<\/p>\n<p>\u201cMainstream restaurants are starting to realize that these types of flavour adapt very well and can help differentiate their menus,\u201d says Eric Caron, Corporate Chef for Gordon Food Service\u00a0in Quebec. Why? Because of the rich contrasts of textures and flavours, and the big opportunity in plant-based items that can help drive low cost menu items. Indeed, plant-based dishes are finding favour with many diners, particularly younger ones, so it makes sense to look to a cuisine that inherently features pulses and produce in flavour-forward ways.<\/p>\n<p>Les ingr\u00e9dients uniques de la cuisine indienne donnent beaucoup de latitude aux chefs. \u00ab\u00ad En jouant avec ces saveurs intenses dans des plats qui m\u00ealent les genres, les restaurants s\u2019adaptent parfaitement aux d\u00e9sirs des consommateurs \u00bb, explique M. Caron. En fait, cette approche rend les saveurs plus accessibles. Les chefs cr\u00e9atifs et les plats exquis qu\u2019ils proposent ouvrent la voie aux \u00e9tablissements de moyenne gamme ou de restauration rapide haut de gamme qui souhaitent utiliser certains \u00e9l\u00e9ments de cette cuisine.<\/p>\n<h3>Sur les menus<\/h3>\n<p>Le garde-manger indien regorge d\u2019ingr\u00e9dients go\u00fbteux qui s\u2019int\u00e8grent \u00e0 merveille aux plats classiques et qui permettent de cr\u00e9er des combinaisons audacieuses : poutine garnie de poulet tikka masala, taco de crevettes glac\u00e9es au tamarin garni de yogourt \u00e0 la harissa et bien d\u2019autres.<\/p>\n<p><strong>Bombay Street Food, Toronto<\/strong><br \/>\nIci, les ailes de poulet tandoori s\u2019inspirent des c\u00e9l\u00e8bres \u00ab\u00ad sucettes \u00bb de poulet que l\u2019on trouve dans les restaurants de Bombay. Assaisonn\u00e9es \u00e0 l\u2019indienne, elles sont servies accompagn\u00e9es d\u2019une sauce au yogourt piquante, qui rappelle vaguement la sauce ranch, mais en plus exotique.<\/p>\n<p>Autres exemples :<\/p>\n<ul>\n<li>Omelette masala et roti : \u0153ufs, oignon, coriandre, gingembre, tomate, pomme de terre et \u00e9pices, le tout servi avec un roti maison<\/li>\n<li>Caf\u00e9 glac\u00e9 \u00e0 la cardamome : caf\u00e9, cardamome et lait concentr\u00e9 sucr\u00e9<\/li>\n<\/ul>\n<p><strong>Holi Masala, Vancouver<\/strong><br \/>\n\u00c0 Vancouver, ce camion-restaurant propose une cuisine indienne color\u00e9e et cr\u00e9ative. Les poutines, bols et autres plats connus se transforment en un d\u00e9lice compl\u00e8tement nouveau gr\u00e2ce aux saveurs indiennes. La poutine au poulet au beurre en est un bon exemple.<\/p>\n<p>Autres exemples :<\/p>\n<ul>\n<li>Chicken Tikka Tacos on paratha bread<\/li>\n<li>Mini-burgers au poulet tandoori et frites masala<\/li>\n<\/ul>\n<p><strong>Le Balthazar Resto-pub, Qu\u00e9bec<\/strong><br \/>\n\u00ab\u00ad Nous avons vu appara\u00eetre beaucoup d\u2019endroits comme celui-l\u00e0, o\u00f9 la bi\u00e8re artisanale est \u00e0 l\u2019honneur, indique M. Caron. Et la fusion \u00e0 l\u2019indienne leur convient parfaitement, parce que les saveurs de l\u2019Inde s\u2019accordent tr\u00e8s bien aux bi\u00e8res artisanales \u00bb. Il suffit de penser \u00e0 leur burger de quinoa, assaisonn\u00e9 de curcuma et de cumin, et garni d\u2019une mayonnaise au paprika fum\u00e9.<\/p>\n<p><strong>Indian Accent, New York<\/strong><br \/>\nNous avons \u00e9galement fait de belles d\u00e9couvertes chez Indian Accent, o\u00f9 le chef Manish Mehrotra combine plats indiens r\u00e9confortants et influences du monde. Il sert notamment le kulcha (sorte de pain) farci de canard \u00e0 la sauce hoisin, de pastrami ou de poulet au beurre.<\/p>\n<p>Autres exemples :<\/p>\n<ul>\n<li>Petites c\u00f4tes lev\u00e9es de dos et chutney de mangue, graines d\u2019oignon et poivre noir servis avec un riz au yogourt<\/li>\n<li>Shorba (soupe \u00e0 la citrouille) avec fromage bleu et naan<\/li>\n<\/ul>\n<p><strong>aRoqa, New York\u00a0<\/strong><br \/>\nQuant au chef Gaurav Anand, il propose une cuisine du monde cr\u00e9ative teint\u00e9e de saveurs indiennes, par exemple, un poulet tikka au habanero. Il s\u2019agit d\u2019un kebab de poulet dans une sauce tikka, soit \u00e0 base de tomates, mais dans laquelle il fait infuser du piment habanero pour la rendre bien piquante.
