Beaucoup d\u2019accessoires et d\u2019\u00e9quipement de service alimentaire n\u2019ont pratiquement pas chang\u00e9 depuis des dizaines d\u2019ann\u00e9es. Mais compte tenu de la hausse du salaire minimum et des probl\u00e8mes de main-d\u2019\u0153uvre, c\u2019est peut-\u00eatre le bon moment de jeter un \u0153il \u00e0 l\u2019\u00e9quipement qui peut aider \u00e0 am\u00e9liorer l\u2019efficacit\u00e9 en cuisine.<\/p>\n<p>M\u00eame s\u2019il existe des produits nouveaux ou am\u00e9lior\u00e9s, globalement, les accessoires de cuisine ne changent pas beaucoup, affirme Nick Dimson, de United \u2013 \u00c9quipements et accessoires de cuisine pour restaurants, entreprise situ\u00e9e en Ontario. Pourquoi? En raison des co\u00fbts et de la formation que cela implique. Mais aussi parce que les changements dans la pr\u00e9paration ont une incidence sur le menu et sur la satisfaction de la client\u00e8le.<\/p>\n<p>\u00ab\u00ad En restauration, c\u2019est ce que le client voit, touche et met dans sa bouche qui compte, note-t-il. L\u2019assiette, la fourchette et les aliments sont importants; les accessoires de cuisine, beaucoup moins. \u00bb<\/p>\n<p>Malgr\u00e9 tout, selon certains chefs et sp\u00e9cialistes de l\u2019\u00e9quipement, six appareils peuvent faire la diff\u00e9rence en mati\u00e8re de constance et de qualit\u00e9 des aliments, mais \u00e9galement d\u2019\u00e9conomies.<\/p>\n<h3>1. Four mixte<\/h3>\n<p>M\u00eame s\u2019ils co\u00fbtent presque aussi cher qu\u2019une voiture de luxe, ces fours peuvent permettre \u00e0 certains types d\u2019\u00e9tablissements de r\u00e9aliser beaucoup d\u2019\u00e9conomies, indique M. Dimson. Ce four combine la cuisson par convection, \u00e0 la vapeur et aux micro-ondes, ce qui permet de cuire les aliments plus vite et de fa\u00e7on plus uniforme.&nbsp;<\/p>\n<p>Les h\u00f4tels, les traiteurs, les services de banquet, en fait les endroits qui doivent nourrir beaucoup de gens en peu de temps, sont de bons candidats pour ce type de four. \u00ab\u00ad On peut les remplir de steaks, de poitrines de poulet ou m\u00eame de sandwichs au fromage fondant, puis appuyer sur un bouton pr\u00e9programm\u00e9. La cuisson est la m\u00eame chaque fois. \u00bb<\/p>\n<p>Ce four est \u00e9conomique pour plusieurs raisons, ajoute-t-il. Une fois qu\u2019il est rempli et que les aliments cuisent, les employ\u00e9s peuvent s\u2019occuper \u00e0 autre chose. Dans les cha\u00eenes, il peut m\u00eame devenir possible d\u2019avoir un seul chef pour plusieurs \u00e9tablissements. Le chef cr\u00e9e les recettes et les entre sur une cl\u00e9 USB, qu\u2019il envoie \u00e0 chaque \u00e9tablissement. Puisque n\u2019importe quel employ\u00e9 peut ainsi appuyer sur le bouton du four et obtenir des r\u00e9sultats dignes d\u2019un chef, cela r\u00e9duit les co\u00fbts.<\/p>\n<h3>2. Four Turbochef ou Merrychef<\/h3>\n<p>Ce four est un peu comme une version beaucoup moins dispendieuse du four mixte. Il n\u2019est cependant pas con\u00e7u pour contenir de grandes quantit\u00e9s d\u2019aliments et est moins efficace avec la viande crue. Mais dans un bar, un pub, un casse-cro\u00fbte ou tout autre restaurant de taille moyenne, ce four, qui prend peu d\u2019espace, permet de servir les plats beaucoup plus rapidement. Comme le fait remarquer Jason Kalinowski, chef chez Service alimentaire Gordon, une grosse assiette de nachos prend jusqu\u2019\u00e0 dix minutes \u00e0 cuire dans un four \u00e0 convection, alors que dans un four Turbochef ou Merrychef, il ne faut qu\u2019une minute.<\/p>\n<p>\u00ab\u00ad Nous avons travaill\u00e9 avec un restaurateur qui a d\u00e9cid\u00e9 d\u2019utiliser cette technologie. Le four a permis de lib\u00e9rer de l\u2019espace en cuisine ainsi que d\u2019acc\u00e9l\u00e9rer le service et le roulement des tables \u00bb, mentionne-t-il.&nbsp;<\/p>\n<p>Ce four est semblable \u00e0 ceux employ\u00e9s dans les restaurants de sous-marins. Il utilise la chaleur radiante, l\u2019air puls\u00e9 et les micro-ondes pour griller les aliments. Selon M. Dimson, il permet de cuire la pizza en trois minutes et les frites en deux, mais aussi de programmer 250 recettes. On peut \u00e9galement y mettre des plaques en m\u00e9tal.<\/p>\n<h3>3. Four convoyeur<\/h3>\n<p>Comme on peut r\u00e9gler la vitesse du convoyeur pour obtenir diff\u00e9rents r\u00e9sultats, ce four est tr\u00e8s polyvalent, fait remarquer M. Kalinowski. Il peut servir \u00e0 la fois de four \u00e0 convection, de micro-ondes et de gril.<\/p>\n<h3>4. Friteuse<\/h3>\n<p>Les aliments frits sont toujours tr\u00e8s populaires. Il peut donc valoir la peine d\u2019opter pour un appareil qui permet de r\u00e9aliser des \u00e9conomies \u00e0 long terme, par exemple, une petite friteuse qui n\u00e9cessite moins d\u2019huile. Si elles sont plus dispendieuses \u00e0 l\u2019achat, elles permettent toutefois d\u2019\u00e9conomiser sur le volume d\u2019huile et la consommation d\u2019\u00e9lectricit\u00e9.<\/p>\n<p>M. Kalinowski conseille aussi d\u2019opter pour une friteuse autonettoyante, car elle prolonge la dur\u00e9e de vie de l\u2019huile et \u00e9vite aux restaurateurs de devoir payer quelqu\u2019un pour la nettoyer r\u00e9guli\u00e8rement.<\/p>\n<h3>5. Plaque de cuisson \u00e0 induction<\/h3>\n<p>D\u2019apr\u00e8s Tom Lang, qui travaille chez United, la cuisson \u00e0 induction permet de r\u00e9duire la consommation d\u2019\u00e9nergie, mais \u00e9galement la chaleur en cuisine. Les plaques de cuisson \u00e0 induction chauffent rapidement et permettent un contr\u00f4le pr\u00e9cis de la temp\u00e9rature, notamment pour le maintien des aliments.<\/p>\n<h3>6. Petits \u00e9quipements<\/h3>\n<p>Enfin, il ne faut pas sous estimer la valeur d\u2019une trancheuse, d\u2019un robot culinaire, d\u2019un pied m\u00e9langeur, d\u2019un m\u00e9langeur et, dans le cas des grosses pizzerias, d\u2019un laminoir. \u00ab\u00ad Tous ces accessoires r\u00e9duisent le travail manuel \u00bb, affirme Richard Kirkpatrick, repr\u00e9sentant chez United.<\/p>\n<p>D\u2019apr\u00e8s M. Kalinowski, voici trois outils simples que chaque \u00e9tablissement aurait avantage \u00e0 utiliser :<\/p>\n<p><strong>Cuill\u00e8res \u00e0 portion. <\/strong>Elles \u00e9liminent la mesure \u00e0 l\u2019\u0153il, tr\u00e8s courante en restauration, ce qui am\u00e9liore la constance.<\/p>\n<p><strong>Balance.<\/strong> Pour tout ce qui ne se mesure pas avec une cuill\u00e8re, la balance permet aussi d\u2019am\u00e9liorer la constance.<\/p>\n<p><strong>Mandoline.<\/strong> Elle permet d\u2019acc\u00e9l\u00e9rer le processus et de maximiser le rendement des fruits et l\u00e9gumes.<br \/>\n&nbsp;<\/p>","protected":false},"excerpt":{"rendered":"<p>Products designed for efficiency can speed up foodservice and have a big impact on labour savings.
