Si vous envisagez d\u2019opter pour des services \u00e0 emporter, vous devrez respecter \u00e0 la lettre les normes de salubrit\u00e9 et rappeler \u00e0 vos clients de faire de m\u00eame. Vous trouverez ci-dessous tout ce que vous devez savoir.&nbsp;<\/p>\n<p>Veuillez noter que les recommandations pr\u00e9sent\u00e9es sont fond\u00e9es sur celles de l\u2019Agence canadienne d\u2019inspection des aliments (ACIA), mais que vous devriez \u00e9galement consulter les autorit\u00e9s sanitaires de votre province pour conna\u00eetre les exigences sp\u00e9cifiques \u00e0 votre r\u00e9gion.&nbsp;<\/p>\n<h3>En toute s\u00e9curit\u00e9<\/h3>\n<p>Chaque ann\u00e9e, environ un Canadien sur huit \u2013  soit quatre millions de personnes \u2013 est atteint d\u2019une maladie d\u2019origine alimentaire, et pr\u00e8s de 12 000 d\u2019entre eux sont hospitalis\u00e9s. Le respect et la communication des normes de salubrit\u00e9 montrent \u00e0 vos clients que vous vous souciez d\u2019eux.&nbsp;<\/p>\n<h3>La salubrit\u00e9 commence avec vous<\/h3>\n<p>Les pratiques suivantes devraient vous permettre de prot\u00e9ger votre entreprise et vos clients.<\/p>\n<p><strong>Temp\u00e9rature de conservation<\/strong><br \/>\nPour \u00e9viter la prolif\u00e9ration bact\u00e9rienne et la propagation des maladies, on doit conserver certains aliments \u00e0 des temp\u00e9ratures pr\u00e9cises : \u0153ufs, viande, volaille, poisson et fruits de mer, produits laitiers, tomate et melon coup\u00e9s, riz et haricots. La temp\u00e9rature de ces aliments, dits potentiellement dangereux, doit \u00eatre maintenue hors de la zone de danger, situ\u00e9e entre 4 et 60 \u00b0C. Il faut donc v\u00e9rifier la temp\u00e9rature de ces aliments avant de les servir pour s\u2019assurer qu\u2019ils sont sans danger. Les aliments stables \u00e0 temp\u00e9rature ambiante comme les barres de c\u00e9r\u00e9ales ou les muffins n\u2019ont pas besoin d\u2019\u00eatre conserv\u00e9s \u00e0 une temp\u00e9rature pr\u00e9cise.<\/p>\n<p><strong>Pr\u00e9vention de la contamination crois\u00e9e<\/strong><br \/>\nLa contamination crois\u00e9e survient quand des bact\u00e9ries ou d\u2019autres microorganismes sont involontairement transf\u00e9r\u00e9s d\u2019une substance ou d\u2019un objet \u00e0 un autre. Pour la pr\u00e9venir, on doit utiliser des planches \u00e0 d\u00e9couper et accessoires distincts pour \u00e9viter que des aliments pr\u00eats \u00e0 manger comme la laitue ne soient contamin\u00e9s par de la viande, de la volaille ou du poisson crus. Si vous souhaitez offrir certains aliments \u00e0 emporter, vous pouvez les pr\u00e9couper pour pouvoir les emballer rapidement ou les pr\u00e9emballer pour permettre aux clients de les prendre eux-m\u00eames sans qu\u2019il n\u2019y ait de risque de contamination.&nbsp;<\/p>\n<p><strong>Lavage de main ad\u00e9quat<\/strong><br \/>\nLe lavage des mains est tr\u00e8s efficace pour pr\u00e9venir la propagation des maladies d\u2019origine alimentaire. Il faut cependant savoir que le d\u00e9sinfectant pour les mains ne remplace pas le lavage des mains \u00e0 l\u2019eau et au savon. Ainsi, qu\u2019ils pr\u00e9parent un plat \u00e0 emporter ou qu\u2019ils remplissent le comptoir de pr\u00eat-\u00e0-manger, tous les employ\u00e9s doivent se laver les mains avant et apr\u00e8s leur t\u00e2che de la mani\u00e8re suivante :<\/p>\n<p><strong>Proper Hand-washing Steps<\/strong><\/p>\n<ol>\n<li>Se mouiller les mains \u00e0 l\u2019eau courante la plus chaude possible tol\u00e9rable (au moins 38 \u00b0C).<\/li>\n<li>Mettre du savon.<\/li>\n<li>Frotter vigoureusement les mains et les bras pendant au moins 20 secondes. Nettoyer sous les ongles et entre les doigts.<\/li>\n<li>Rincer soigneusement \u00e0 l\u2019eau courante.<\/li>\n<li>S\u00e9cher les mains et les bras \u00e0 l\u2019aide d\u2019une serviette en papier jetable \u00e0 usage unique ou d\u2019un s\u00e8che-mains \u00e0 air chaud.&nbsp;<\/li>\n<\/ol>\n<h3>\u2026 et se termine avec vos clients<\/h3>\n<p>Aidez vos clients \u00e0 d\u00e9guster leur repas de fa\u00e7on s\u00e9curitaire en ajoutant des directives de manipulation, conservation et r\u00e9chauffage sur tous les plats que vous offrez.&nbsp;<\/p>\n<p><strong>Manipulation et conservation<\/strong><br \/>\nLes aliments p\u00e9rissables ne doivent pas \u00eatre laiss\u00e9s \u00e0 temp\u00e9rature ambiante pendant plus de deux heures. Pour rester en dehors de la zone de danger, les aliments froids doivent \u00eatre conserv\u00e9s \u00e0 une temp\u00e9rature d\u2019au maximum 4 \u00b0C et les aliments chauds \u00e0 plus de 60 \u00b0C. Les aliments qui n\u2019ont pas \u00e9t\u00e9 conserv\u00e9s correctement doivent donc \u00eatre jet\u00e9s.<\/p>\n<p><strong>R\u00e9frig\u00e9ration<\/strong><br \/>\nLes aliments chauds doivent \u00eatre refroidis \u00e0 une temp\u00e9rature de 20 \u00b0C ou moins \u00e0 l\u2019int\u00e9rieur de deux heures et \u00e0 4 \u00b0C ou moins \u00e0 l\u2019int\u00e9rieur de quatre heures. Les aliments froids doivent \u00eatre conserv\u00e9s \u00e0 une temp\u00e9rature d\u2019au maximum 4 \u00b0C.<\/p>\n<p><strong>R\u00e9chauffage<\/strong><br \/>\nLes restes doivent \u00eatre r\u00e9chauff\u00e9s \u00e0 une temp\u00e9rature interne minimum de 74 \u00b0C.
