En effet, c\u2019est \u00e0 ce moment qu\u2019entrera en vigueur l\u2019interdiction <a href=\"https:\/\/www.canada.ca\/en\/health-canada\/news\/2017\/09\/minister_petitpastaylorannouncesgovernmentofcanadabanonindustria.html\">de Sant\u00e9 Canada<\/a> concernant l\u2019utilisation des huiles partiellement hydrog\u00e9n\u00e9es (HPH).<\/p>\n<p>Ces huiles, des gras trans industriels, sont couramment utilis\u00e9es dans certains aliments pr\u00e9par\u00e9s et vendus dans les restaurants, par exemple, les frites, les beignes, certaines margarines, les produits de boulangerie et de p\u00e2tisserie, et m\u00eame les craquelins et les croustilles. Elles servent \u00e0 rehausser les saveurs et \u00e0 am\u00e9liorer la dur\u00e9e de conservation. Une fois l\u2019interdiction entr\u00e9e en vigueur, il sera ill\u00e9gal de vendre des aliments qui en contiennent, et ce, autant dans les \u00e9piceries que les restaurants.<\/p>\n<p>\u00c0 l\u2019origine, les gras trans ont \u00e9t\u00e9 cr\u00e9\u00e9s comme solution de rechange aux gras satur\u00e9s. Si l\u2019on en trouve naturellement en petites quantit\u00e9s dans la viande, le lait et le beurre, la plupart des gras trans sont produits en ajoutant de l\u2019hydrog\u00e8ne aux huiles v\u00e9g\u00e9tales, ce qui fait passer la substance d\u2019un \u00e9tat liquide \u00e0 semi-solide.<\/p>\n<h3>Effets sur la sant\u00e9<\/h3>\n<p>Au fil des ans, <a href=\"https:\/\/www.canada.ca\/en\/health-canada\/services\/nutrients\/fats.html\">les gras trans sont devenus une source de pr\u00e9occupation croissante<\/a> dans l\u2019industrie alimentaire en raison de leurs effets n\u00e9fastes sur la sant\u00e9. Les \u00e9tudes ont montr\u00e9 que ces acides gras accroissent notamment le risque de maladies coronariennes, une des principales causes de d\u00e9c\u00e8s au Canada (Sant\u00e9 Canada, 2017), puisqu\u2019ils font augmenter le taux de mauvais cholest\u00e9rol et baisser celui de bon cholest\u00e9rol. On a \u00e9galement \u00e9tabli un lien entre la consommation de ces gras et la hausse des crises cardiaques et des AVC de m\u00eame que l\u2019apparition du diab\u00e8te.<\/p>\n<p>Dans les ann\u00e9es 1990, le Canada \u00e9tait consid\u00e9r\u00e9 comme l\u2019endroit o\u00f9 la consommation de gras trans \u00e9tait la plus \u00e9lev\u00e9e au monde (Sant\u00e9 Canada, 2018). Depuis, des efforts ont \u00e9t\u00e9 faits pour limiter la quantit\u00e9 de gras trans industriels pr\u00e9sents dans les aliments. Malgr\u00e9 tout, Sant\u00e9 Canada a reconnu qu\u2019il fallait aller plus loin pour r\u00e9duire davantage la consommation de gras trans. C\u2019est pourquoi elle a pris des mesures r\u00e9glementaires interdisant l\u2019usage des huiles partiellement hydrog\u00e9n\u00e9es au Canada. En juin, une interdiction semblable est aussi entr\u00e9e en vigueur aux \u00c9tats-Unis.<\/p>\n<p>Cette initiative s\u2019inscrit dans la <a href=\"https:\/\/www.canada.ca\/en\/health-canada\/services\/food-nutrition\/public-involvement-partnerships\/modification-prohibiting-use-partially-hydrogenated-oils-in-foods\/information-document.html\">Strat\u00e9gie en mati\u00e8re de saine alimentation du Canada<\/a>, qui vise \u00e0 faire en sorte qu\u2019il soit plus facile pour les Canadiens de faire des choix alimentaires sains. L\u2019interdiction vise tous les aliments vendus au Canada, y compris les aliments import\u00e9s et ceux utilis\u00e9s dans les \u00e9tablissements alimentaires. Les huiles partiellement hydrog\u00e9n\u00e9es seront \u00e9galement ajout\u00e9es \u00e0 la partie 1 de la Liste de contaminants et des autres substances adult\u00e9rantes dans les aliments.<\/p>\n<h3>Alimentation plus saine<\/h3>\n<p>On s\u2019attend \u00e0 ce que le retrait ou le remplacement des gras trans am\u00e9liore la qualit\u00e9 nutritive des aliments et augmente la consommation d\u2019aliments faibles en gras satur\u00e9s. Mieux encore, l\u2019interdiction devrait mener \u00e0 une hausse de l\u2019accessibilit\u00e9 \u00e0 des produits plus sains et \u00e0 la r\u00e9duction du risque de maladies cardiaques.<\/p>\n<p>Depuis que l\u2019interdiction a \u00e9t\u00e9 annonc\u00e9e en 2017, les restaurants et autres services alimentaires se sont attel\u00e9s \u00e0 modifier leurs recettes et menus. Les fabricants alimentaires ont aussi d\u00fb adapter la composition de leurs produits, am\u00e9liorant ainsi leur valeur nutritive et leur qualit\u00e9. Bref, tous ces acteurs joueront un r\u00f4le d\u2019avant plan dans l\u2019am\u00e9lioration de la sant\u00e9 des Canadiens.<\/p>\n<h3>Des solutions<\/h3>\n<p>\u00c0 l\u2019aube de l\u2019entr\u00e9e en vigueur de l\u2019interdiction, chacun cherche des fa\u00e7ons de s\u2019y conformer.<\/p>\n<p><strong>Ce que fait l\u2019industrie alimentaire :<\/strong><\/p>\n<ul>\n<li>Utilisation de gras satur\u00e9s comme le beurre, mais en beaucoup plus petite quantit\u00e9.<\/li>\n<li>Utilisation d\u2019huiles v\u00e9g\u00e9tales satur\u00e9es, dont l\u2019huile de palme et l\u2019huile de coco.<\/li>\n<li>Utilisation d\u2019un m\u00e9lange d\u2019huiles v\u00e9g\u00e9tales monoinsatur\u00e9es ou polyinsatur\u00e9es pour obtenir une dur\u00e9e de conservation, une texture et un go\u00fbt semblables \u00e0 ceux des gras trans.<\/li>\n<\/ul>\n<p><strong>Ce que vous pouvez faire :<\/strong><\/p>\n<ul>\n<li>Utilisation de l\u2019huile de canola pour la friture<\/li>\n<li>Remplacement de vinaigrettes et autres sauces pr\u00e9par\u00e9es par des produits \u00e9quivalents d\u2019autres marques ou pr\u00e9paration de vinaigrettes et sauces maison \u00e0 base d\u2019huile de canola ou d\u2019olive.<\/li>\n<li>Choix de desserts (p\u00e2tisseries et g\u00e2teaux) ne contenant pas de gras trans.<\/li>\n<\/ul>","protected":false},"excerpt":{"rendered":"<p>In hopes of reducing health risks, all foods sold in Canada will be made without the use of partially hydrogenated oils.
