Et ce ne sont pas les occasions de la mettre de l\u2019avant qui manquent.<\/h2>\n<p>Dans les services alimentaires, <a href=\"https:\/\/gfs.ca\/fr-ca\/ideas\/navigating-transparency-whats-best-you\/\">la transparence<\/a> se d\u00e9finit comme \u00ab\u00adle besoin du client de comprendre d\u2019o\u00f9 proviennent les aliments, ce qu\u2019ils contiennent et comment ils ont \u00e9t\u00e9 g\u00e9r\u00e9s sur toute la cha\u00eene d\u2019approvisionnement\u00bb.&nbsp;<\/p>\n<p>Le probl\u00e8me, c\u2019est que les gens ont tous leur propre d\u00e9finition du concept, qui ne se traduit d\u2019ailleurs pas toujours de la m\u00eame fa\u00e7on en restauration, en \u00e9ducation ou en sant\u00e9. Mais comme ces segments n\u2019\u00e9voluent pas en vase clos, il vaut tout de m\u00eame la peine d\u2019\u00e9tudier la question.&nbsp;<\/p>\n<h3>La transparence en \u00e9ducation<\/h3>\n<p>Les coll\u00e8ges et les universit\u00e9s sont \u00e0 l\u2019avant-plan de cette tendance. Ils modifient de plus en plus les plats qu\u2019ils offrent aux \u00e9tudiants, <a href=\"https:\/\/gfs.ca\/fr-ca\/ideas\/growing-demand-transparency-0\/\">qui s\u2019attendent \u00e0 obtenir<\/a> plus de renseignements sur les aliments que les g\u00e9n\u00e9rations pr\u00e9c\u00e9dentes. &nbsp;<\/p>\n<p>Ces derniers veulent savoir d\u2019o\u00f9 les aliments proviennent, s\u2019ils sont cultiv\u00e9s ou produits selon des pratiques sens\u00e9es, si les animaux ont \u00e9t\u00e9 \u00e9lev\u00e9s sans cruaut\u00e9 et si les d\u00e9chets sont g\u00e9r\u00e9s de fa\u00e7on responsable. Ils ont aussi des attentes au sujet des renseignements nutritionnels, des allerg\u00e8nes et des restrictions alimentaires.<\/p>\n<p>\u00abS\u2019ils n\u2019aiment pas ce qu\u2019ils entendent, ils vont aller ailleurs\u00bb, affirme Nicole Nicoloff, directrice du secteur de l\u2019\u00e9ducation chez Service alimentaire Gordon.&nbsp;<\/p>\n<h3>La transparence en sant\u00e9<\/h3>\n<p>La sant\u00e9 est \u00e9troitement li\u00e9e \u00e0 l\u2019alimentation. Et la transparence aide \u00e0 faire des choix \u00e9clair\u00e9s. Dans les \u00e9tablissements de sant\u00e9, on donne de plus en plus acc\u00e8s aux renseignements nutritionnels et sur les allerg\u00e8nes pour encourager une saine alimentation.&nbsp;<\/p>\n<p>Selon Dana Fillmore, nutritionniste et directrice du secteur sant\u00e9 chez Service alimentaire Gordon, les gens \u00ab\u00adveulent savoir exactement ce qu\u2019on leur sert\u00bb. Les \u00e9tablissements installent donc des kiosques d\u2019information, attirent l\u2019attention sur les produits locaux, etc.<\/p>\n<h3>La transparence en restauration<\/h3>\n<p>Dans ce secteur, la transparence est aussi \u00e0 surveiller. Malheureusement, il existe <a href=\"https:\/\/gfs.ca\/fr-ca\/ideas\/des-aliments-sains-naturels-et-entiers\/\">peu de donn\u00e9es<\/a> sur le lien entre celle-ci et les ventes en restauration, laisse savoir Doug Owens, directeur du secteur commercial chez Service alimentaire Gordon.&nbsp;<\/p>\n<p>De plus, m\u00eame si beaucoup de clients disent vouloir de la transparence, ils s\u2019attendent \u00e9galement \u00e0 une exp\u00e9rience de restauration incomparable.
