Ils souhaitent savoir d\u2019o\u00f9 ils viennent, comment ils ont \u00e9t\u00e9 cultiv\u00e9s, \u00e9lev\u00e9s ou transform\u00e9s de m\u00eame que ce qu\u2019on leur a ajout\u00e9. Et ce sont les restaurateurs qui sont les mieux plac\u00e9s pour d\u00e9terminer quelles caract\u00e9ristiques ont de l\u2019importance pour leur client\u00e8le et faire des choix en cons\u00e9quence.<\/p>\n<p>Pour choisir du poulet, ou plus g\u00e9n\u00e9ralement de la volaille, qui r\u00e9pond aux attentes des clients, il faut d\u2019abord examiner les mentions utilis\u00e9es par les entreprises pour vendre leurs produits. Comme les possibilit\u00e9s sont nombreuses, il est essentiel de bien comprendre ce que chaque all\u00e9gation ou certification signifie r\u00e9ellement.&nbsp;<\/p>\n<p>La compr\u00e9hension des mentions couramment employ\u00e9es pour les produits de volaille vous aidera non seulement \u00e0 choisir les produits qui vous conviennent le mieux, mais aussi \u00e0 faire la promotion de vos plats aupr\u00e8s des clients.&nbsp;<\/p>\n<h3>All\u00e9gations r\u00e9glement\u00e9es \u00e0 l\u2019\u00e9chelle f\u00e9d\u00e9rale<\/h3>\n<p>L\u2019Agence canadienne d\u2019inspection des aliments (ACIA) \u00e9tablit des politiques et des normes de salubrit\u00e9 et de qualit\u00e9 nutritionnelle pour les aliments vendus au Canada. Pour pouvoir utiliser les mentions qui suivent, les fournisseurs doivent veiller \u00e0 ce que la volaille soit \u00e9lev\u00e9e et transform\u00e9e conform\u00e9ment aux r\u00e8glements de l\u2019ACIA, sans quoi ils s\u2019exposent \u00e0 des cons\u00e9quences juridiques. Vous pouvez donc vous fier \u00e0 ces mentions.<\/p>\n<ul>\n<li><strong>Naturel.<\/strong> Un poulet \u00ab\u00adnaturel\u00bb ne doit pas contenir de min\u00e9ral nutritif, vitamine, agent aromatisant artificiel ni additif alimentaire ajout\u00e9. De plus, aucune composante ne doit avoir \u00e9t\u00e9 retir\u00e9e (\u00e0 l\u2019exception de l\u2019eau) ou sensiblement modifi\u00e9e dans l\u2019aliment.<\/li>\n<li><strong>\u00c9lev\u00e9 sans l\u2019usage d\u2019hormones ajout\u00e9es.<\/strong> Au Canada, l\u2019utilisation d\u2019hormones ou de st\u00e9ro\u00efdes est interdite pour les poulets. Les entreprises doivent donc en tenir compte si elles souhaitent le mentionner, en employant un \u00e9nonc\u00e9 du type : \u00abcomme les autres poulets, ces poulets ont \u00e9t\u00e9 \u00e9lev\u00e9s sans l\u2019usage d\u2019hormones ajout\u00e9es\u00bb.<\/li>\n<li><strong>Biologique.<\/strong> Le poulet vendu sous l\u2019appellation biologique est \u00e9lev\u00e9 selon des normes pr\u00e9cises d\u00e9crites par l\u2019Office des normes g\u00e9n\u00e9rales du Canada, en plus de celles \u00e9tablies par un organisme de certification reconnu. En g\u00e9n\u00e9ral, la volaille biologique est nourrie exclusivement d\u2019aliments biologiques certifi\u00e9s ne contenant aucun sous-produit animal, antibiotique ou suppl\u00e9ment comme les vitamines.<\/li>\n<li><strong>\u00c9lev\u00e9 sans l\u2019usage d\u2019antibiotiques. <\/strong>Cette all\u00e9gation ne peut figurer sur une \u00e9tiquette que si l\u2019animal n\u2019a pas \u00e9t\u00e9 trait\u00e9 \u00e0 l\u2019aide d\u2019antibiotiques, toutes m\u00e9thodes d\u2019administration comprises, de sa naissance \u00e0 l\u2019abattage. De plus, pour que l\u2019all\u00e9gation puisse \u00eatre utilis\u00e9e, les vitamines et les min\u00e9raux donn\u00e9s aux animaux peuvent seulement avoir \u00e9t\u00e9 administr\u00e9s dans des quantit\u00e9s produisant un effet physiologique visant \u00e0 compl\u00e9ter l\u2019alimentation, et non dans des quantit\u00e9s entra\u00eenant un effet antimicrobien.<\/li>\n<\/ul>\n<p>Comme les produits portant les all\u00e9gations \u00e9lev\u00e9 sans l\u2019usage d\u2019antibiotiques et biologique sont g\u00e9n\u00e9ralement plus chers, il faut alors se demander si la client\u00e8le est pr\u00eate \u00e0 payer davantage pour des produits ayant ces caract\u00e9ristiques.<\/p>\n<h3>All\u00e9gations portant possiblement \u00e0 confusion<\/h3>\n<p>Dans l\u2019optique de se d\u00e9marquer de leurs concurrents, certains fournisseurs de volaille pourraient utiliser des all\u00e9gations qui rel\u00e8vent plus du marketing que d\u2019une r\u00e9elle diff\u00e9rence. Il faut savoir que ces mentions ne sont pas fausses pour autant; elles doivent simplement \u00eatre remises en contexte.&nbsp;<\/p>\n<ul>\n<li><strong>Sans antibiotiques. <\/strong>Ce terme utilis\u00e9 aux \u00c9tats-Unis ne correspond pas \u00e0 l\u2019all\u00e9gation officiellement permise au Canada. Il est \u00e9galement impropre, puisque le poulet ne contient jamais d\u2019antibiotiques. En effet, en vertu de la loi canadienne, tous les poulets qui re\u00e7oivent des antibiotiques doivent subir une p\u00e9riode de retrait entre la fin du traitement et l\u2019abattage pour garantir que le produit obtenu ne contient aucun r\u00e9sidu d\u2019antibiotiques.<\/li>\n<li><strong>\u00c9lev\u00e9 en plein air.<\/strong> Cette mention signifie g\u00e9n\u00e9ralement que les animaux ont r\u00e9guli\u00e8rement eu acc\u00e8s \u00e0 l\u2019ext\u00e9rieur et aux p\u00e2turages.
