Trempettes et tartinades<\/strong><br \/>\nDes chefs proposent des hummus originaux garnis d\u2019ingr\u00e9dients vari\u00e9s comme les l\u00e9gumes marin\u00e9s ou les viandes brais\u00e9es. Gerry Ludwig et son \u00e9quipe ont aussi constat\u00e9 la popularit\u00e9 du tarama, un mezz\u00e9 grec compos\u00e9 de caviar de morue m\u00e9lang\u00e9 \u00e0 de la mayonnaise ou un a\u00efoli et souvent \u00e9paissi \u00e0 l\u2019aide de pur\u00e9e de pommes de terre ou de chapelure.&nbsp;<\/p>\n<p><strong>2. L\u00e9gumes frits<\/strong><br \/>\nDans la cat\u00e9gorie des petits plats, les l\u00e9gumes s\u2019imposent. Ils sont cuits de fa\u00e7on \u00e0 en faire pleinement ressortir les saveurs et accompagn\u00e9s d\u2019ingr\u00e9dients riches en umami comme le porc croustillant ou la bagna cauda.&nbsp;<\/p>\n<p><strong>3. Bouch\u00e9es frites<\/strong><br \/>\nLes croquettes, beignets ou arancinis aux combinaisons de saveurs go\u00fbteuses (truite fum\u00e9e, fromages, etc.) qui sont accompagn\u00e9s de sauces parfum\u00e9es (carvi ou a\u00efoli) ont vraiment la cote.<\/p>\n<p><strong>4.
